Spanish Tortilla with Burrata and Herbs

extra virgin olive oil

Yukon gold potatoes,

onion thinly, sliced or chopped

1. Preheat the broiler.2. In a large, oven safe skillet, heat the olive oil over medium heat. Add the potatoes, onion, and salt. Bring the oil to a gentle bubble, then reduce the heat to medium-low and cook, stirring often, until the potatoes are fork tender, about 20-25 minutes.&nbsp;3. Using a slotted spoon, transfer the potatoes and onion to a bowl. Add the the eggs, basil, dill, chives, and a large pinch of pepper, gently stir to combine, being carful not to break the potatoes.&nbsp;4. Strain the oil out the skillet and wipe the skillet clean. Heat 2 tablespoon of the reserve oil over medium high heat. Add the potato and egg mix and cook, stirring gently until the eggs just begin to set, about 2-3 minutes. Spread the mix into an even layer and reduce the heat to medium-low. Cook, shaken the pan occasionally to prevent sticking until the eggs are set and just cooked through, about 15-20 minutes. Transfer to the oven and broil 2-3 minutes.&nbsp;5. Remove from the oven, run a spatula around the edge of the skillet to help release the tortilla, then carefully invert onto a serving plate. Let sit 10 minutes. Top with prosciutto, burrata, arugula, and fresh herbs. Slice and serve warm or at room temperature. Enjoy!&nbsp;

Preheat

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven is heating up, gather all the ingredients, and prepare the toppings.

Grease

Take a round baking dish or a pie dish that&#39;s approximately the same size as the tortilla. Grease the bottom and sides of the dish lightly with cooking spray or a small amount of oil.

Arrange

Place the tortilla at the bottom of the baking dish to create the crust.

Whisk

In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season the mixture with a pinch of salt and pepper to taste.

Pour

Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring it spreads evenly.

Layer

Now, add the toppings. Be creative with this step! Sprinkle diced tomatoes, diced green peppers, and chopped spinach or arugula evenly over the egg mixture. Or, use flavor option two with tomatoes, olives, red onions, and spianch. Feel free to add other ingredients like diced onions, mushrooms, or cooked bacon if desired.

Sprinkle

Finally, sprinkle the mozzarella cheese, feta and mozzarella, or choice of cheese over the top of the toppings. This will give the tortilla bake a nice cheesy finish.

Bake

Place the baking dish in the preheated oven, and bake for 20-25 minutes or until the eggs are set and the top is golden brown. The exact cooking time may vary depending on the oven, so keep an eye on it to avoid overcooking.

Cool

Once done, remove the tortilla egg bake from the oven, and let it cool for a few minutes before slicing it into wedges or squares.

Preheat oven to 425 F and place tortilla in a pie dish or any small baking dish where the edges curl up and form a cup.

Crack the eggs, add cottage cheese and sprinkle with salt and pepper. Whisk with a fork.

Top evenly with bell pepper, spinach and sprinkle with cheese.

Bake for 18 minutes or until the middle is set and edges are golden brown.

Remove from the oven, cut with serrated knife or pizza cutter and enjoy.

Easy, healthy, and delicious. I used a low card tortilla, 2 eggs, and a 1/4 cup of cottage cheese and cheese because my tortilla was smaller.

I had smaller Extreme Wellness tortilla and used 2 eggs and 1/4 cup of cheese. Delicious!
