eggs

black pepper

basil,

dill,

chives,

prosciutto ((optional))

burrata cheese, broken

arugula,

1. Preheat the broiler.2. In a large, oven safe skillet, heat the olive oil over medium heat. Add the potatoes, onion, and salt. Bring the oil to a gentle bubble, then reduce the heat to medium-low and cook, stirring often, until the potatoes are fork tender, about 20-25 minutes. 3. Using a slotted spoon, transfer the potatoes and onion to a bowl. Add the the eggs, basil, dill, chives, and a large pinch of pepper, gently stir to combine, being carful not to break the potatoes. 4. Strain the oil out the skillet and wipe the skillet clean. Heat 2 tablespoon of the reserve oil over medium high heat. Add the potato and egg mix and cook, stirring gently until the eggs just begin to set, about 2-3 minutes. Spread the mix into an even layer and reduce the heat to medium-low. Cook, shaken the pan occasionally to prevent sticking until the eggs are set and just cooked through, about 15-20 minutes. Transfer to the oven and broil 2-3 minutes. 5. Remove from the oven, run a spatula around the edge of the skillet to help release the tortilla, then carefully invert onto a serving plate. Let sit 10 minutes. Top with prosciutto, burrata, arugula, and fresh herbs. Slice and serve warm or at room temperature. Enjoy!

Egg Tortilla Bake (2 Ways)

Cooking spray oil

tortilla (8-10 inches in diameter)

cottage cheese

Salt

Black pepper

Tomatoes (diced)

Green peppers (diced)

Spinach or arugula (chopped)

Mozzarella cheese ((or choice of cheese))

Tomatoes

Kalamata olives

Red onions

Spinach

Feta cheese

Mozarella cheese

Preheat

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven is heating up, gather all the ingredients, and prepare the toppings.

Grease

Take a round baking dish or a pie dish that's approximately the same size as the tortilla. Grease the bottom and sides of the dish lightly with cooking spray or a small amount of oil.

Arrange

Place the tortilla at the bottom of the baking dish to create the crust.

Whisk

In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season the mixture with a pinch of salt and pepper to taste.

Pour

Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring it spreads evenly.

Layer

Now, add the toppings. Be creative with this step! Sprinkle diced tomatoes, diced green peppers, and chopped spinach or arugula evenly over the egg mixture. Or, use flavor option two with tomatoes, olives, red onions, and spianch. Feel free to add other ingredients like diced onions, mushrooms, or cooked bacon if desired.

Sprinkle

Finally, sprinkle the mozzarella cheese, feta and mozzarella, or choice of cheese over the top of the toppings. This will give the tortilla bake a nice cheesy finish.

Bake

Place the baking dish in the preheated oven, and bake for 20-25 minutes or until the eggs are set and the top is golden brown. The exact cooking time may vary depending on the oven, so keep an eye on it to avoid overcooking.

Cool

Once done, remove the tortilla egg bake from the oven, and let it cool for a few minutes before slicing it into wedges or squares.

Easy, healthy, and delicious. I used a low card tortilla, 2 eggs, and a 1/4 cup of cottage cheese and cheese because my tortilla was smaller.

I had smaller Extreme Wellness tortilla and used 2 eggs and 1/4 cup of cheese. Delicious!

Thank you so much for sharing this recipe. It was very good. I made it for a quick breakfast and loved it!

These egg white wraps let you wrap up your favorite taco or burrito fillings without all the carbs from regular tortillas. These keto friendly homemade wraps are so simple to make and they're a great source of protein!

Egg (White) Wraps

egg egg

Black and cayenne pepper

Prepare eggs:

Liquid egg whites – just shake box before pouring.

Whole eggs – crack into a small cup, scramble.

Egg whites: crack egg carefully, sift yolk back and forth between shell halves, letting white pour into a cup while keeping the yolk separate.

Repeat with each egg to fill cup with egg whites only, discard yolks.

Put a small frying pan on the stove over medium heat, drizzle with avocado oil.

Pour just enough egg to cover the bottom of the frying pan, and then stop.

Cook until egg solidifies enough to flip (usually you will see bubbles come through the top), then flip – carefully – (it can be a little difficult due to how thin it is).

Cook until egg is firm and golden brown on edges, remove from heat, and fill with desired wrap ingredients!

This has become part of our regular rotation for summer weeknight dinners. SO easy to make, especially in the air fryer. Used a high protein tortilla, swapped 2 eggs for egg whites to lower the calories whilst maintaining protein, used cottage cheese instead of cheddar, and whatever quick cooking veg we had in the fridge. Will continue to make & try different veg in it!

Love this. Made it twice the tortilla approximates pastry and egg mixture is thicker than normal quiches so works well.

Great for a light lunch. I have been looking for different tings to make gor lunch, this was tasty and simple to do. Will definitely cook again.

Great easy recipe! I did see one that added cottage cheese to the eggs so I added that, and I sprayed my dish with oil before placing the tortilla on it (I was afraid it would stick or burn), but it turned out amazing! I will definitely make this again! If I could include a picture here, I would!

This Baked Egg Tortilla is a great protein packed breakfast option, and so easy to adapt with different vegetables, meat and cheese. It is basically a tortilla quiche, as instead of pastry it uses a wholewheat flour tortilla as the crust. This is great for a light lunch too, and it also packs up well to take on picnics.
