Egg Tortilla Bake (2 Ways)

Cooking spray oil

tortilla (8-10 inches in diameter)

eggs

cottage cheese

Salt

Black pepper

Tomatoes (diced)

Green peppers (diced)

Spinach or arugula (chopped)

Mozzarella cheese ((or choice of cheese))

Tomatoes

Kalamata olives

Red onions

Spinach

Feta cheese

Mozarella cheese

Preheat

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven is heating up, gather all the ingredients, and prepare the toppings.

Grease

Take a round baking dish or a pie dish that's approximately the same size as the tortilla. Grease the bottom and sides of the dish lightly with cooking spray or a small amount of oil.

Arrange

Place the tortilla at the bottom of the baking dish to create the crust.

Whisk

In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season the mixture with a pinch of salt and pepper to taste.

Pour

Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring it spreads evenly.

Layer

Now, add the toppings. Be creative with this step! Sprinkle diced tomatoes, diced green peppers, and chopped spinach or arugula evenly over the egg mixture. Or, use flavor option two with tomatoes, olives, red onions, and spianch. Feel free to add other ingredients like diced onions, mushrooms, or cooked bacon if desired.

Sprinkle

Finally, sprinkle the mozzarella cheese, feta and mozzarella, or choice of cheese over the top of the toppings. This will give the tortilla bake a nice cheesy finish.

Bake

Place the baking dish in the preheated oven, and bake for 20-25 minutes or until the eggs are set and the top is golden brown. The exact cooking time may vary depending on the oven, so keep an eye on it to avoid overcooking.

Cool

Once done, remove the tortilla egg bake from the oven, and let it cool for a few minutes before slicing it into wedges or squares.

This has become part of our regular rotation for summer weeknight dinners. SO easy to make, especially in the air fryer. Used a high protein tortilla, swapped 2 eggs for egg whites to lower the calories whilst maintaining protein, used cottage cheese instead of cheddar, and whatever quick cooking veg we had in the fridge. Will continue to make & try different veg in it!

Love this. Made it twice the tortilla approximates pastry and egg mixture is thicker than normal quiches so works well.

Great for a light lunch. I have been looking for different tings to make gor lunch, this was tasty and simple to do. Will definitely cook again.

This was so good and quick! And you're right, mix and matching veggies makes it even better without getting boring. Thanks so much for sharing!

Great easy recipe! I did see one that added cottage cheese to the eggs so I added that, and I sprayed my dish with oil before placing the tortilla on it (I was afraid it would stick or burn), but it turned out amazing! I will definitely make this again! If I could include a picture here, I would!

This Baked Egg Tortilla is a great protein packed breakfast option, and so easy to adapt with different vegetables, meat and cheese. It is basically a tortilla quiche, as instead of pastry it uses a wholewheat flour tortilla as the crust. This is great for a light lunch too, and it also packs up well to take on picnics.
