Eggnog French Toast Bake

Butter,

eggs, whisked

c. eggnog

pure vanilla extract

cinnamon

nutmeg

maple syrup, for drizzling

c. chopped pecans, for topping

Seeing the review from CyanFries,  GreenRaindrop and OrangeLamp, I decided to modify the recipe and my expectations. 

I used the ingredients as noted above but with stale (like really hard and dry) homemade bread in broken up into smaller peices about 1 -2 inch cubes.   I baked it at 350 as noted above then increased heat to 375 degrees F (190 degrees C) and baked for another 20 minutes.  Then I removed the aluminum foil, and continued baking until the the top was a little brown (about 7 to 10 minutes more.)

I served with blueberries,  blackberries and maple syrup.  The result was moist,  but firm. It was a delicious bread pudding/egg nog casserole that I will use a again!

It's good, but I wouldn't call it French toast. It's more of a bead pudding.

"Best". If you like soggy bread and eggnog quiche eggs this recipe is for you!

Preheat an electric griddle to 350 degrees. In a mixing bowl whisk together eggnog, eggs, nutmeg and rum extract until very well blended. Pour mixture into a 11 by 7-inch baking dish (or other similar sized shallow baking dish) and dip bread 2 slices as a time into mixture, then rotate and coat opposite side (I also like to gently squeeze to soak to the center, then lift and gently squeeze again to remove excess). Transfer to buttered griddle and cook until bottom is golden brown then flip and cook opposite side until golden.
