Low Carb Eggplant Pizza

large eggplant

olive oil

1/2 yellow onion, sliced

Slice the eggplant lengthwise, about 1/4-1/3 inches thick. Brush or rub a little olive oil on each side of the eggplant slices and place on a baking sheet lined with parchment paper or a baking stone. Sprinkle with salt and pepper. Place in oven for 7-10 minutes, or until eggplant is hot and starting to cook down.

Meanwhile grab a skillet, add 1/2 Tablespoon olive oil and sauté the garlic and onion until soft (about 3-4 minutes). Season with salt and pepper. Add pizza sauce and spinach to the skillet and cook for 1-2 additional minutes until mixture is warm and spinach has wilted.

Remove the eggplant slices from the oven, top each with the onion and spinach mixture. Sprinkle with cheese and chopped oregano. Place in the oven for approximately 5 minutes, or until the cheese has melted. Serve immediately with more fresh oregano and crushed red pepper.

Preheat your oven to 400ºF

Bake until the eggplant has wilted slightly and the parmesan is very lightly browned about 10-15 minutes.

Assemble your pizza. Prepare your pizza dough per package directions. You want roughly a 10-12 inch circle and I like to use a greased 12-inch pizza pan. Scoop your pizza sauce onto the center of the pizza dough. Spread the sauce to the edges of the dough, leaving a bit around the edges for a crust. Sprinkle on about 2/3 of the mozzarella, then top with the tomatoes, eggplant, and breadcrumbs, evenly distributed. Finish with the rest of the mozzarella and a sprinkle of any leftover parmesan.

Eggplant Pizza with Caramelized Onion

fast acting yeast

water

all-purpose flour

whole wheat flour

salt

eggplant, (sliced ¼" thick)

½ red onion, (thinly sliced)

garlic, (minced)

vegan mozzarella cheese, (I recommend Miyoko's brand)

olive oil, (divided)

rosemary, (minced)

Start by making the crust.  Combine yeast and warm water and set aside. Mix together flours and salt in a large bowl. Add olive oil and mix. While mixing, slowly add water/yeast mixture. Turn onto a floured surface and knead for 5 minutes. Place in a large oiled bowl, cover with a damp towel, and place in a warm area for 1 - 1½ hours, until doubled in size. Once the dough is ready you can begin preparing everything else.

Turn the oven to broil and move an oven rack to the top shelf. Slice the eggplant ¼ inch thick and place them on a parchment-lined baking sheet. Lightly brush each side with olive oil and sprinkle with salt. Broil for 4-6 minutes on each side, until lightly golden. Remove from oven and let cool. Turn down the oven to 425F.

Heat 1 tbsp of olive oil in a small skillet over low heat. Sauté sliced onions until caramelized, stirring frequently. This takes about 10 minutes. They will be dark in color (not burnt) and fragrant. Add garlic and sauté for another minute before removing from heat.

Shape the dough to fit on a floured pizza stone or baking sheet. Lightly brush the remaining olive oil over the crust and top with the vegan cheese. Place the broiled eggplant over the cheese, covering the entire surface. Top with caramelized onions and fresh rosemary.
