Şakşuka is a traditional Turkish dish that can be served as part of a meze or as a side dish. It is full of sauteed vegetables, including eggplant, zucchini, and bell peppers in a thick garlicky tomato sauce. This rich vegetable ragout recipe is so easy to make at home! With whatever vegetables you have on hand. A great one for meal prep as it tastes amazing at room temperature!

Şakşuka - A Turkish Recipe

eggplant

salt (- will be washed off)

red onion

zucchini

red bell pepper

green bell pepper

garlic

olive oil

tomatoes

salt

tsp sugar

¼ tsp black pepper

Cut the eggplant into bite-sized chunks.1 eggplant

Sprinkle the eggplant chunks with salt and place in a colander or strainer. 1 tbsp salt

Leave the eggplant to sit for 15-30 minutes.

Wash the eggplant thoroughly in cold water, then drain it well and pat it dry with paper towel. Set the eggplant on a fresh piece of paper towel, while you chop the remaining veg.

Peel and roughly chop the red onion. Then cut the peppers and zucchini into large chunks. 1 red onion2 zucchini1 red bell pepper1 green bell pepper

Peel and thinly slice the garlic.5 cloves garlic

In a large high sided skillet, use half of the olive oil to fry the eggplant and zucchini chunks until they are golden. Use a slotted spoon to remove them from the pan and drain them off on paper towels. 3 tbsp olive oilchopped, salted and rinsed eggplant2 chopped zucchinis

Use the remaining olive oil to fry the peppers and onions for 2-3 minutes until slightly softened.3 tbsp olive oilchopped red onionchopped bell peppers

Add the garlic to the pan and stir until aromatic (20-30 seconds)thinly sliced garlic

Then add in the canned tomatoes, sugar, salt, and pepper. 1 can diced tomatoes1 tsp sugar mustard1 tsp salt¼ tsp black pepper

Simmer rapidly for 5 minutes until thickened.

Add the eggplant, and zucchini back into the tomato sauce and stir together well.cooked eggplantcooked zucchini

Serve warm or allow to cool.

Baingan Bharta is a delicious, tangy and spicy Indian dish made from minced roasted eggplant, onions, tomatoes and a variety of spices. Learn how to make restaurant style baingan bharta by roasting the eggplants in an air fryer, oven or on the stove top.

Baingan Bharta Recipe - Air Fryer or Oven

onion

Tablespoon minced ginger

green chilies

lemon juice

Oil oil

cumin seeds

cayenne

garam masala

cumin powder

coriander powder

turmeric powder

cilantro leaves

Wash and dry the eggplant.  Using a knife , make a few slits through the skin and insert a garlic clove in each slit. Brush the eggplant with some oil.

Prepare the eggplant for roasting

On the medium heat,  roast the eggplant on fire till they are charred on the outside. Keep rotating every minute or so, to make sure it roasts evenly on all sides. The skin should look dark and burned.  ( roughly 7-10 minutes per eggplant )

How to Roast Eggplant on stove top

Arrange the eggplant on an airfryer basket. Set the temperature to 375º Fahrenheit . Air fry for about 20-22 minutes rotating half way till the eggplant looks wrinkled and charred.

How to Roast Eggplant In Air Fryer

Preheat the oven at 400 °Fahrenheit.  Put the prepared eggplant on a baking sheet. Bake in the middle rack for 30-40 minutes until eggplant is tender and cooked inside.

How to Oven Bake Eggplant

Let the eggplant cool down completely. Peel off the burnt skin.  Finely chop or mash the pulp.  and keep aside.

Warm up oil on medium heat in a sauté pan. Add in cumin seeds and allow them to sputter and brown.

Add onions and green chilies ( if using ) . Sprinkle some salt. Sauté for a few minutes till onions are translucent and look golden.

Add the tomatoes and minced ginger. Cook for 3-5 minutes stirring frequently till tomatoes release water and start to thicken.

Add the rest of the spices. Continue to stir for a couple more minutes.

Add in the mashed roasted eggplant and garlic pulp and salt. Mix well. Cook for about 5 minutes so everything is mixed well. Adjust seasoning and salt if needed.

Turn off the heat. Add lemon juice and mix well. Garnish with cilantro leaves.  Serve warm. Enjoy !
