I’m glad I made this recipe before I read the reviews. My family thought it was great. If you ever had Eggs Benedict this tastes similar to it. I believe serving Hollandaise sauce on the side so you could use as much or as little as you like and refrigerating it over night really made a difference.  The Hollandaise sauce had a nice light taste of lemon to it. It did take a lot of whisking!

I was really excited to try this but it was quite disappointing. I found the eggy taste of the casserole and the hollandaise to be very off-putting. I did use sauteed veg rather than ham but otherwise followed the recipe exactly. I'll stick with the regular version with a runny poached egg and a packaged hollandaise mix.

Try this eggs benedict casserole recipe for a delicious breakfast or brunch. All the flavor of benedict, but made with a secret healthy ingredient!

Eggs Benedict Casserole Recipe

tbsp Olive oil

Cauliflower

tsp Sea salt

tsp Black pepper

Eggs ((whisked))

oz Canadian bacon ((chopped))

Cheddar cheese ((shredded, divided))

Hollandaise sauce

tbsp Chives ((chopped))

Preheat the oven to 400 degrees F (204 degrees C).

In a large bowl, toss together the cauliflower, olive oil, salt, and pepper.

Arrange the cauliflower in a single layer on a large baking sheet. Roast for 25-30 minutes, until golden brown. When the cauliflower is done, leave the oven on at 400 degrees F (204 degrees C).

Meanwhile, in a large bowl, whisk the eggs.

Arrange the cauliflower at the bottom of a 9x13 baking dish.

Pour the eggs over the cauliflower. Sprinkle 1 cup cheddar over the eggs. Top with Canadian bacon, then remaining cheddar.

Bake the casserole for 18-20 minutes, until cheese is melted and eggs are cooked through.

Let the casserole cool for 10 minutes. Drizzle with hollandaise and sprinkle with chopped chives.

Grease a 9x13 baking dish. Pull the English muffins apart. Toast them in the toaster and spread a little butter on each one. Then, slice into bite size pieces and add to the baking dish.

Slice the Canadian bacon into small pieces and sprinkle over the muffins.

In a large bowl, mix the eggs, milk, salt, pepper, and onion powder.

Pour egg mixture over the casserole. Top with green onions. Cover with foil and place in the fridge for 4-8 hours.

Remove the casserole from the fridge and preheat the oven to 375℉. Bake covered with foil for 35 minutes. Then, remove the foil and bake for 10-15 more minutes. The egg mixture should be set and not too jiggly.

Right before the casserole is done, make the Hollandaise sauce. Blend egg yolks, lemon, and Dijon mustard in a blender until frothy - about 30 seconds. Then slowly pour the melted butter into the egg yolk mixture while blending on low. Add salt and pepper to taste.

Drizzle some Hollandaise sauce over the casserole, but save some aside for drizzling over individual pieces. Sprinkle paprika over the casserole and serve.
