Recipe for Koshary: an Egyptian National Dish

chickpeas

oz ditalini (cooked according to package instructions)

onions

tsp kosher salt

cornstarch

Vegetable oil

tbsp onions

vegetable oil

garlic

tomato paste

tomato sauce

water

salt and pepper

tbsp white vinegar

cayenne pepper (optional)

lentils

rice

vermicelli (see notes)

HOT water

cumin (optional)

tsp cumin

salt (more

tsp black pepper

Slice onions thin. Sprinkle salt and cornstarch. Toss together. 

Add vegetable oil to a large deep pan to cover the bottom by 1-inch. Fry at 350 degree F. stirring every now and then, onions should be nice and golden brown,  Approximately 10-12 minutes. Reserve oil!

Line a plate with a paper towel. Add onions in a single layer and let drain on the paper towel. Set aside to harden.

Fried Onions

In a saucepan on medium heat add oil, and garlic. Sautè until fragrant. approximately 1-2 minutes. Be careful not to burn the garlic!

Add onions, tomato sauce, tomato paste, water, salt and pepper. Bring to a boil, reduce heat to medium-low and cover, let simmer for 15 minutes.

Tomato Sauce

In an enameled dutch oven or heavy pot on medium high heat, add oil with the fried onions, lentils, and 1 tbsp salt. Stir for 1-2 minutes. Add 4 cups water and bring to a boil. Keep heat on medium high, (it should be a gentle boil) for approximately 12-15 minutes or until the lentils are al-dente. *DO NOT DRAIN WATER.

Stir in rice, vermicelli, hot water, and additional tablespoon salt.(Option to add Cumin*) Bring to a boil, cover and reduce heat low for 12-15 minutes or until pasta is tender. Fluff with a fork.

All the ingredients in a measuring cup. Whisk to combine.

Cumin Sauce

Koshary is all about the layering! Add the rice with lentil mixture as the base, top with cooked pasta, chickpeas, and fried onions. Drizzle with tomato sauce and cumin sauce.

A great option for serving: Arrange all the ingredients on the table and everyone can assemble with all there favorite toppings!

Koshary Recipe

An ultra buttery and creamy Egyptian rice, there are so many variations but this one is how we grew up eating it!

Egyptian Baked Rice Recipe (Roz Maamar)

short grain rice

Tablespoon sea salt

black pepper (more

Tablespoons room temperature butter

sour cream

heavy cream or whole milk

*clotted cream (aka ishta)

beef broth

Preheat

Wash

Wash the rice until water runs clear. Do not skip this step!

In a bowl, add rice, salt and pepper. Mix until rice is combined with the salt and pepper.

Combine

In a 4 qt dutch oven add butter and spread until the inside is completely coated. Add sour cream and do the same. Make sure to spread an even layer across the inside of the dutch oven.

Cook

Add rice, heavy cream (or milk), clotted cream (see note below), and broth. Do not stir. You can give it a gentle swirl without touching the bottom and sides. Cover and cook for 2 hours.

 Wrap the pot in a big blanket or large towel for at least 30 minutes before serving or for up to 4 hours. Wrapping the Dutch oven in a blanket or towel helps to tenderize the rice and maintain its warmth for hours! Taita’s (grandma) Pro Tip: Prepare this dish a few hours ahead, tightly wrap it in a blanket or towel, and it&#39;ll be ready to serve whenever desired!

This is an amazing recipe.   I was in a hurry once and did it in my rice maker.   It was really good too.   It didn’t have the wonderful crust but nice for a rushed weeknight dinner.    Thanks for the recipe!  I’ve shared it so many times.

Delicious!! I've made this multiple times and its never disappointed. Recipe size definitely feeds a crowd so I've been calling it "feast rice" and I make it for special get togethers.

I’m super excited to make this and try it because it sounds AMAZING. I really want to reduce the recipe since it’s just me. I know this may sound like a silly question but if I half the recipe do you think I should reduce the cooking time any? Maybe 30 min off???
