Weeknight Enchiladas Verdes Recipe

chicken breasts (or thighs)

olive oil

cumin

oregano

onion powder

coarse kosher salt

juice of 1/2 lime ((about 1 tablespoon))

Easy Salsa Verde recipe ((or store bought salsa verde))

corn tortillas ((soft flour tortillas can also be used))

Mexican cheese blend

toppings: diced tomatoes, chopped cilantro, chopped green onions, sour cream

Preheat oven to 350°F. Cover a large baking sheet with parchment paper and set aside.

Slice chicken breast or thighs into thin strips. In a medium bowl, combine sliced chicken, olive oil, cumin, oregano, onion powder, salt and lime juice.

Place seasoned chicken onto prepared baking sheet and bake in oven for 10 to 12 minutes, or until chicken is no longer pink and fully cooked through.

Place corn tortillas on a plate and cover them with a damp paper towel. Warm tortillas in the microwave for 30 seconds to soften them up and make them pliable.

In a 2 or 3 quart baking dish, begin to assemble the enchiladas. Spoon some of the baked chicken into a warm tortilla. Roll it up and place in the baking dish, seam side down. Continue until all tortillas have been filled.

Pour the salsa verde evenly on top of the enchiladas. Top with shredded cheese.

Bake for 20 minutes or until cheese starts to bubble.

Serve with diced tomatoes, cilantro and green onions.

Enchiladas Verdes

These amazing jackfruit enchiladas are totally vegan and topped with a homemade enchilada verde sauce. They're so easy, so flavorful and absolutely scrumptious!

Vegan Jackfruit Enchiladas Verde

white onion (, chopped)

garlic (, chopped)

jalapeno ((option))

tomatillos (, husks removed (about 10))

Salt & pepper

vegetable broth

oz jack fruit

(15 oz) can black beans

salsa

chili powder

smoked paprika

green enchilada sauce

corn tortillas

Jackfruit & black bean filling

vegan shredded cheese ((optional))

Preheat the oven to 375ºF.

Heat the oil in a small saucepan. Add the onion and garlic and saute until onion is tender, about 3 minutes. Add the jalapeno, tomatillos, cumin, salt, and pepper and saute for another 2 - 3 minutes.

Pour in the broth, bring the mixture to a boil, then reduce to simmer. Cook for 10 minutes until the tomatillos are soft. Transfer the mixture to a blender and blend on high until creamy.

While the sauce is cooking, prepare the filling. Add the jackfruit, beans, salsa, and spices into a large bowl. Stir together until combined and set aside.

When ready to assemble the enchiladas, add 1/4 cup of sauce into the bottom of a baking dish. Spoon about 2 - 3 tablespoons of filling into the center of a tortilla and roll it up. Place the tortilla seam side down in the baking dish. Repeat until you've filled the dish.

Once filled, pour on the rest of the sauce and spread evenly across the tortillas. Sprinkle on the cheese.

Bake on the center rack for 25 - 30 minutes until the cheese is melted and the filling sounds bubbly. Remove from the oven and allow to sit for 5 minutes. Serve immediately and garnish with your fave toppings (I like avocado &amp; cilantro!).

Vegan Jackfruit Enchiladas Verdes

Traditional Mexican green chicken enchiladas, made lighter!

Enchiladas Verdes (Green Enchiladas)

lb 2 boneless, skinless chicken breasts

onion

salt

white corn tortillas

salsa verde (jarred

queso fresco

sour cream (optional

cilantro (optional garnish)

Preheat oven to 400F.

Place the chicken breasts in a stock pot along with 1⁄2 an onion and salt and cover with water. Bring to a boil and simmer until cooked through, about 20 minutes.

Remove chicken from the water and let cool slightly. Shred chicken with two forks and set aside.

Mince the remaining onion and add to the shredded chicken.

In batches place 6 tortillas on a microwave safe dish and microwave 40 to 50 seconds to make them pliable so they don't crack. Keep them covered with a dish cloth to stay warm, then working one by one dip each warm tortilla in green salsa. Scoop two rounded tablespoons into each tortilla and roll tightly and place in a large casserole dish, seam side down, in a single layer. Repeat with the remaining tortillas and chicken.

Drench entire pan with 1 cup sauce and sprinkle with crumbled queso fresco.

Bake, covered in oven for 25 to 30 minutes. Remove from oven and serve with sour cream or additional queso fresco, if desired.

Simple Enchiladas Verdes

tomatillos,

jalapeno

garlic,

cilantro

chicken broth

sour cream

or so 8-inch tortillas – corn or flour will work

shredded cheese – Pepper Jack

lb. cooked chicken, shredded

Make the Sauce

Preheat the oven to 425 degrees. Line a baking sheet with foil. Place tomatillos and jalapeños on the baking sheet. Wrap peeled garlic in foil and add to baking sheet. Drizzle everything with a little olive oil and sprinkle with salt. Roast for 30 minutes, stirring halfway to prevent excessive scorching. Pulse everything in a blender (including juices). Add other sauce ingredients, blend until smooth. Season with salt to taste.

Make the Filling: 

In a large bowl, combine about one third of the sauce (2 or so cups) with the chicken. Stir in about half of the cheese and any other mix-ins you want.

Make the Enchiladas Verdes

Reduce the oven temperature to 400 degrees. Grease a 9&#215;13 baking dish. Place filling on tortillas, roll up, and arrange in pan, seam side down. Cover with another cup or two of sauce and remaining cheese (just eyeball it). Bake for about 15 minutes, until bubbly and delish. Top with cilantro or cotija or red onion &#8211; all your favorite standbys are welcome.

I love this - and the note to skip the rolling and make it the lazy lasagna way! 

The combo of cheese and tomatillos has a very comforting vibe. Definitely putting this recipe to good use.

I also crave creamy baked food for comfort. I have a recipe for poppy seed chicken from previous generations that I would love to get pinch of yum ideas on how to modify it to be healthier. It's the standard poached chicken, cream of chicken soup, sour cream, cracker crusted recipe which comes up when you google poppy seed chicken.

Instead of using sour cream I like to use yogurt with a little baking soda to make it bubbly and I like to spread that in with the enchiladas! Oh boy does that look good. My head is spinning, thinking of how I can make a vegetarian version. Usually I put black beans in my enchiladas, but white beans might be just the thing for this recipe. I can't wait to taste that sauce!

Bathed in homemade roasted salsa verde, stuffed with smoky shredded chicken and black beans, and smothered in melt monterrey jack cheese, these Enchiladas Verdes really hit the tex-mex spot. By roasting everything on one pan, these made-from-scratch enchildas come together with less effort than your average enchilada recipe.

lbs boneless, skinless chicken thighs

lb tomatillos, skin remove and halved

garlic cloves, peel

onion, peel on

tsp kosher salt, divided

tsp black pepper

lime juice

low-sodium chicken stock, divided

tsp ground cumin, divided

garlic powder

monterey jack cheese

sour cream + 2 tsp milk or cream

cotija cheese

Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. Grease a 9x12 baking dish with non-stick cooking spray.

Add the chicken thighs to one side of the pan. Add the tomatillos, jalapeno, onion, and garlic to the other side. Drizzle everything evenly with olive oil. Use hands to evenly coat chicken and vegetables with olive oil. Sprinkle with 3/4 teaspoon salt and 1/8 teaspoon pepper evenly over the chicken and vegetables. Flip and sprinkle with another 3/4 teaspoon salt and 1/8 teaspoon pepper.

Place the sheet pan in the oven and roast until the tomatillos, onion and jalapenos are roasted and caramelized and the chicken is cooked through, about 20-25 minutes. At the 20-minute mark, check to see if the chicken is done. If an instant read thermometer reads 165, the chicken is done. Pull the chicken off the sheet pan and set aside. Continue to roast until tomatillos are caramelized. Turn the oven down to 375 degrees.

Halve the jalapeno and remove the seeds and stems. Remove the peel/skin from the onion and garlic. Transfer the tomatillos, onion, garlic, 1/2 the jalapeno, 1/2 teaspoon salt, lime juice, 1/4 cup of the chicken stock, 1/2 teaspoon cumin, garlic powder, and cilantro to a blender. Blend until smooth. Taste and see if you want to add any more jalapeno. Remember, you can always add more, but you can&#039;t take it away. If needed, add a little more chicken stock to get to desired sauce consistency. Season to taste with salt and pepper.

Shred the chicken on the same sheet pan you cooked it on. Add remaining teaspoon cumin, black beans, and salt. Season to taste with salt and pepper.

Spread enough sauce on the bottom of the prepared baking dish to lightly coat the bottom. Place filling on a tortilla. Sprinkle with a heaping tablespoon of cheese. Place seam-side down in the prepared baking dish. Repeat with remaining tortillas and filling.

Once all the enchiladas are in the baking dish, cover with remaining sauce. Sprinkle with remaining cheese. Place in the oven and bake until bubbly and hot, about 25 minutes.

While the enchiladas bake, mix sour cream and milk or cream together. For a pretty presentation, transfer the cream mixture to a small ziplock bag. Cut off the tip and drizzle over enchiladas. Sprinkle with cheese.

These easy green vegetarian enchiladas verdes are packed with mushrooms, spinach, and zucchini, topped with cheese and store-bought roasted tomatillo salsa!

Vegetarian Enchiladas Verdes

olive oil (or butter)

garlic (minced)

jalapeño pepper (ribs and seeds removed and finely diced)

mushrooms (sliced (I used baby portobello))

zucchini

spinach

canned pinto beans (drained and rinsed (1.5 cups))

salsa verde (store bought or homemade)

kosher salt and black pepper (to taste)

10-12 flour tortillas

shredded Monterey jack cheese

cilantro and red onion and diced avocado (for serving, optional)

Preheat oven to 375 degrees F.

Heat the olive oil (1 tablespoon)  in a large (12&quot;) skillet over medium-high heat. Add the diced onion and sauté until softened and starting to brown (about 3 minutes). Add the minced garlic (2 cloves) and sauté until fragrant (about 30 seconds).

Add the mushrooms and diced jalapeño and some salt and pepper to the skillet. Sauté until softened and starting to brown, stirring only occasionally (about 5 minutes). Add the zucchini and sauté until softened (about 5 more minutes), again stirring only occasionally.

Add the frozen spinach (no need to defrost) to the skillet and sauté until most of the liquid has evaporated from the skillet- push the veggies to the side and if you see liquid pooling at the bottom, sauté for a little longer (this can take about 10 minutes).

Add the pinto beans and 1/2 cup of the salsa verde to the skillet and stir together. Taste and adjust seasoning if necessary.

Warm up the flour tortillas by wrapping in a damp paper towel and placing in the microwave for about 30 seconds. Spread 1/2 cup of the salsa verde in the bottom of a 9x13 baking dish. Then, fill each tortilla with a generous amount of the veggie filling and place seam-side down in the prepared baking dish. If you have extra filling, just stuff it in-between the filled tortillas (or use for another purpose).

Pour the rest of the salsa verde on top of the enchiladas and top with shredded cheese.

Bake covered with foil for 20 minutes at 375 degrees, and for another 10 minutes uncovered, until cheese is melted and bubbly.

Top with chopped cilantro and red onion and serve with diced avocado, if desired.

Grate the zucchini (I used a box grater) onto a clean kitchen towel or cloth napkin (see notes). Spread it out in a thin layer across the towel and sprinkle with a pinch of the salt. Let it sit for 5-10 minutes (the salt will draw the water out).

Preheat your oven to 375 degrees F. Stack the corn tortillas and cut into four quadrants, making them similar to a tortilla chip.

Roll the grated zucchini up in the towel and wring out as much water as possible over your sink.

In a large bowl, mix together the shredded chicken with ¾ cup of the salsa verde, half of the cheese, and the grated zucchini. If you chose to toast the tortillas, remove them from the oven.

Spread about ½ cup of the salsa verde on the bottom of a 9x13 casserole dish. Layer ⅓ of the tortillas (20 cut pieces) evenly across it. Add half the chicken and zucchini mixture and spread out. Add another ⅓ (20 pieces) of the tortillas and the rest of the chicken mixture. Add the remaining ⅓ of the corn tortillas, spread the remaining ¾ cup of salsa verde on top, and sprinkle with the remaining shredded cheese.

Bake at 375 degrees F for about 25 minutes, or until cheese is melted and bubbly and casserole is fully heated through. Top with cilantro and red onion (optional) and cut into 8 portions to serve.

Hierve los tomates, chile serrano, ajo y cebolla en el caldo de pollo durante 10 minutos y licua con el cilantro. Salpimenta y conserva caliente.

Fríe ligeramente las tortillas en el aceite caliente y escurre. Sumerge las tortillas en la salsa, rellena con el pollo y baña con más salsa. Decora con el queso, crema, cebolla cambray y cilantro picado.

Enchiladas Suizas Receta Mexicana

tortillas de maíz

½ tazas pechuga de pollo (desmenuzada)

taza crema Mexicana

½ taza queso Oaxaca o cualquier queso que se derrita (desmenuzado)

salsa de tomatillo (de lata o casera)

taza caldo de pollo

½ cebolla blanca (en trozos)

¼ taza chiles jalapeños o serranos (sin semillas y venas, picados)

diente de ajo (sin piel)

cilantro (un mazo pequeño)

cda mantequilla

aceite para freír

sal y pimienta

En la licuadora poner la salsa de tomatillo, la cebolla, los chiles, el cilantro, el ajo, la crema y 1 taza de caldo de pollo. Licuar hasta obtener una salsa tersa y sin grumos.

En una cacerola pequeña poner a calentar la mantequilla. Agregar la salsa y sofreír por un minuto. Salpimentar y llevar a ebullición.

Dejar hervir a flama media-baja hasta que la salsa adquiera una consistencia espesa. Aproximadamente 10 minutos.

En una sartén poner aceite a calentar y sofreír las tortillas por pocos segundos cada lado, el tiempo suficiente para ablandarlas pero cuidando que no se doren. Reservar.

En un molde para horno de 28x22 cm poner la mitad de la salsa y distribuirla por todo el fondo.

Poner una tortilla en una superficie, agregar pollo casi al centro y enrollar sobre si misma. Acomodarla en el molde. Repetir con todas las tortillas.

Bañar con el resto de la salsa y terminar poniendo el queso encima.

Hornear por 18-20 minutos o hasta que el queso esté completamente derretido.
