A Refreshing Endive Citrus Salad 

Belgian endive, sliced

orange segments,

grapefruit segments,

mandarin segments,

walnuts, toasted and chopped

feta cheese, crumbled (optional)

mint

extra virgin olive oil

lemon juice

honey

Salt and pepper,

Wash and Dry

Rinse the Belgian endive leaves thoroughly under cold water and pat them dry with a clean kitchen towel. Remove any discolored outer leaves.
