These truffles are chocolatly on the outside and rich and creamy on the inside.  The cashew butter and oats give this truffle the perfect chewy and creamy texture.  Low on sugar and raw vegan.  This desert is as healthy as they come!

Vegan Chocolate Truffles with Cashew Butter Filling

C Cocoa Butter

C Cocoa Powder

T Powdered Sugar

C Rolled Oats (raw)

C Cashew Butter

C Ground Flaxseed

T Maple Syrup

Over a double boiler melt cocoa butter.  Once melted turn off the heat.  While Whisking add in the cocoa powder and powdered sugar.  Whisk mixture until its velvety smooth.  Set in the fridge while you make the balls.

Make the Chocolate Filling

In a food processor combine oats, flaxseed, maple syrup, and cashew butter.  Grind on the highest setting until one large ball of dough forms.

Using a Tablespoon measure out 18 segments of dough.  Roll each tablespoon of dough into a ball with your palms.  Place on a parchment lined baking sheet.

Make The Cashew Center

Remove the chocolate from the fridge.  Roll the balls in the chocolate coating and place them back on the baking sheet.  Allow to set in the fridge for 10 minutes.  Enjoy!

Coat The Truffles

Lemon Poppyseed Energy Bites

½ cup Quick-Cooking Oats

Raw Cashews

tbsp Cashew Butter

Real Maple Syrup (see notes)

Lemon

tsp Vanilla Extract

tsp Poppy Seeds

Salt

First, add the Oats to your Blender or Food Processor and process until a fine flour forms. Toss in the Cashews and pulse until finely ground as well.

Add all remaining ingredients except for the Poppy Seeds to the Blender and pulse/process until a thick, uniform dough forms. Pulse in the Poppyseeds until well combined, or transfer the mixture to a bowl and fold them in by hand.

Use a 2 tbsp scoop to measure out each ball, and roll each ball in between your hands until it forms an even circle. Store these bites in the fridge for up to 10 days, or in the freezer for up to a month. If you opt for the freezer, let each ball thaw for 5-10 minutes before enjoying.

I have tried this recipe with cashew butter and peanut butter. I think I prefer the peanut butter better!

Love the flavor and super easy to make. Mine are really wet though. Maybe I had a really juicy lemon?  Will make again and try adding the juice little by little.

Just made these! Was always super hesitant to make any sort of 'energy bite balls' since we don't have a food processor, but this worked great! Was careful not to overwork the blender, and easily halved the recipe to make sure they wouldn't go to waste - definitely should have been the whole size!

No issues with making the recipe. I used peanut butter since that's what we had on hand, and added some coconut flakes on the outside but honestly the sweetness level is perfect and the poppyseeds add a great crunch. Will definitely be making these again!

I just made these for the second time and they are kind of the perfect snack/post meal sweet bite for me. I was pretty generous w the poppyseeds. I did add about 2 tablespoons of almond flour because it seemed like the mixture was too wet at first. My only potential complaint about this recipe is that juice of one lemon can be such a variable amount that it leaves some uncertainty! Sort of wish it was written in tbsps or something. No-Bake Energy Bites

¼ cup old fashioned oats ((125 grams))

coconut ((30 grams))

peanut butter ((120 grams))

honey ((60 milliliters))

Tablespoons mini chocolate chips (optional)

Tablespoon ground flax seed (optional)

vanilla extract

salt

oz dark chocolate bar (optional, may substitute melted chocolate chips instead)

Combine old fashioned oats, shredded coconut, peanut butter, honey, chocolate chips, flax seed (if using), vanilla extract, and salt in large bowl.

Stir well until all ingredients are well-combined.

Scoop cookie dough by about 2-teaspoon-sized scoops (I like to use a small cookie dough scoop). Roll the mixture between your palms to form a smooth ball.

Repeat until all mixture has been rolled into balls. Transfer to a wax paper lined baking sheet (or other moveable flat surface).

Place in freezer for 10 minutes.

While energy bites are chilling, melt your dark chocolate by breaking into small pieces, placing in a small microwave-safe bowl, and heating for 15-second increments and stirring well in-between until chocolate is completely melted.

Remove chilled energy bites from the freezer and use a spoon to drizzle melted dark chocolate over all bites. Alternatively you can dip the bottoms of the bites in the chocolate (like you&#039;re making Buckeyes).

Place in the refrigerator and chill one hour before serving and enjoying.

Store in the refrigerator in an airtight container.

Energy Bites

Filled with shredded carrots, rolled oats, dates, chia seeds, walnuts, and pecans, these carrot cake energy bites are a quick nutritious snack. Plus, 29 more grab-and-go meal prep snack ideas.

medjool dates

pecans

walnuts

oats

tbsp chia seeds

tsp cinnamon

tsp ground ginger

sea salt

plain greek yogurt, creamy peanut butter (to serve)

Wash and peel 1-2 carrots (depending on size). Roughly chop and add to a food processor to shred them. Set shredded carrots aside in a large mixing bowl.

Halve dates and remove pit. Place dates in food processor, along with pecans, walnuts, cinnamon, ginger, and sea salt. Process until nuts are in tiny pieces. Add all processed ingredients into the mixing bowl with shredded carrots.

Add rolled oats and chia seeds to mixing bowl, and combine all ingredients together with a large spoon. You may need to add a few tablespoons of water to get things to stick together.

With a spoon, grab about a tbsp of mixture and roll into balls (about the size of a ping-pong ball). If you&#x27;d like, you can now roll these balls into shredded coconut.

Place energy bites onto a baking sheet, making sure to leave room between them so they don&#x27;t stick together. Place in freezer for at least 30 minutes (you can store them in here too!)

Serve with a dollop of plain greek yogurt and creamy peanut butter, if desired. Enjoy!

An alternative to ultra-processed energy bars, these homemade, no-bake energy bites are a great late afternoon snack. The best part is they're simple to make, and you're in control of the ingredients.

lightly toasted old-fashioned rolled oats

chia seeds, ground in mortar & pestle

chocolate (or chips)

maple syrup

unsweetened, toasted coconut flakes

peanut butter

sea salt,

Combine the oats, chia seeds, chocolate, maple syrup, vanilla, and coconut in a medium bowl. Toss until well combined. Add the peanut butter, and use your hands to really work the ingredients together. Adjust a bit if necessary, adding a bit more peanut butter if the mixture won't stay in a ball shape. Alternately, add more oats if the mixture is too sticky.&nbsp;

You can shape into balls by hand, but I find it is easier (and less messy) to press the mixture into a rounded tablespoon, then press it out (see photo). Arrange on a parchment lined baking sheet or plate, and refrigerate or freeze. Carry around in a small jar, or any small structured bento or container.

Hi Heidi: This must be an older post- but I found a similar recipe on a package of Trader Joe's ground  flaxseed, so I tried it, using chunky almond butter. The addition of chia seeds would be great also!

These are delicious, and I did not even grind up the chia seeds!

Great recipe, my husband barely leaves me any!  I recommend folks watch the video and take note of the consistency of the dough.  I've done this 3x and twice it was a bit off in texture due to overly dry peanut butter, then overly oily and lose.  Both were good though.
