Chocolate Date Energy Balls Recipe! These healthy energy balls are made in 5 minutes with 8 ingredients and they taste brownie bites! They are vegan, Paleo gluten-free and have no refined sugar, but you&#x27;d never know it! They&#x27;re also freezer-friendly!

Chocolate Date Energy Balls (Vegan & Paleo)

dates

pecans

cashews

cocoa powder

½ tsp salt*

almond butter

almond milk

vanilla

Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).

Put dates, pecans and cashews in your food processor fitted with an “S” blade or in your Vitamix. Process until mixture is fine and homogeneous.

Add the rest of the ingredients in the order listed (cocoa powder, salt, almond butter, almond milk, &amp; vanilla) to your food processor and process until mixture just starts to clump together.

Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.

Put them in the fridge or freezer until they harden.

Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!

Apple Energy Bites

natural creamy almond butter (slightly heated)

maple syrup

apple sauce

cinnamon

quick oats (gluten free as needed)

rolled oats (gluten free as needed)

flaxseed or chia seeds

In a large bowl, mix together heated nut butter and honey until smooth.

Stir in the remaining ingredients until well combined. Add optional add-ins, if desired.

Wet hands slightly and form dough tightly into 1" - 1.5" balls. If the&nbsp;dough doesn't stick together add 1/2 tablespoon water (or melted coconut oil) at a time until dough comes together or place dough in the fridge for 30 minutes prior to forming dough balls so it's easier to handle.

Store in airtight container in refrigerator or freezer until ready to enjoy.

Heat the pumpkin seed butter, coconut oil and maple syrup in a large saucepan over medium heat and whisk until smooth.

Stir in the pumpkin puree, pumpkin pie spice, cinnamon, salt,&nbsp;and vanilla until combined. Fold in the oats, cranberries and pumpkin seeds.

Wet hands slightly and form dough tightly into 1" - 1.5" balls. Or, if the&nbsp;dough doesn't stick together place dough in the fridge for 30 minutes prior to forming dough balls so it's easier to handle. Press additional cranberries evenly around the&nbsp;dough, if desired.

Mix all ingredients together in a bowl, starting with 2 1/4 cups rolled oats. If the dough feels fairly stiff move to the next step; otherwise add the additional 1/4 cup if the dough feels fairly sticky. (The texture depends of the dough depends on the type of peanut butter and type of rolled oats. With our very creamy peanut butter it works with 2 1/2 cups oats total.) Freeze the bowl for 5 minutes to allow the dough to firm up even more: it should feel stiff and rollable at this point. If not, you can mix in a handful more oats &#8212; or if it&#8217;s too crumbly, add a hint more peanut butter and honey.

Roll the dough into 20 small balls, pressing the dough together with your hands. A 1 1/2-inch cookie scoop (#40) is helpful to make uniform balls. Store refrigerated to firm up the texture even more, but you can eat immediately. Refrigerate for up to 2 weeks. (See the Storage Info section above for more on storage and transportation.)

Easy, no-bake energy ball recipe perfect for snacks, lunch boxes &amp; post-workout recovery. Tasty bites made with peanut butter, chocolate chips &amp; oatmeal!

Peanut Butter Chocolate Chip Oatmeal Energy Balls

Add everything to a medium bowl and mix to combine well. Stick the bowl in the fridge and let it chill for about half an hour. This resting time helps to ensure that the balls will stick together when rolled.

After the chilling time, take a tablespoon of the mixture in your hand and roll into a ball. Repeat with remaining oat mixture. If your balls aren't sticking together after the resting period, you can add a little more honey or peanut butter, stir well, and try rolling again. Sometimes it just needs a little more of the wet ingredients to hold together well. And the moisture in the peanut butter will depend on the brand/type that you use.

Store in an airtight container in the fridge for up to 2 weeks or in the freezer much longer.

I love this recipe! I add 1/2 cup of rice krispie cereal and leave out the coconut.  It is very crunchy and yummy!

This recipe is amazing. I use maple syrup in place of honey and steel cut oats in place of regular oatmeal.  Turns out fantastic every time.

My husband and I love these! I make 3x batches routinely to ensure protein snack available, and it satisfies sweet cravings. I use Ghirardelli mini semisweet chips; sometimes sub maple syrup for honey, or almond butter for PB. I’ve added chia seed. Most recently I included 1/4 cup sweetened coconut for addl texture. Instead of balls, I lazily (or efficiently) press into 13x9 dish, chill, then cut into small squares. Today I shared the recipe/link w three friends who are eager to try it.

I love this recipe. I rolled the finished balls in sprinkles and my toddler niece ate them all. Flax seed has too much cyanide so you can replace the flax seed with almond meal.
