English Muffin Bread

all purpose or bread flour ((see Recipe Notes below))

water

salt

+ 1½ teaspoons granulated white sugar

+ 1¼ teaspoons active dry or instant yeast

nonstick cooking spray

cornmeal

butter, (melted (divided))

In a large mixing bowl, stir together the flour, water, salt, sugar and yeast with a sturdy spoon or dough whisk until it is evenly moist with no dry pockets. The dough will be shaggy and very sticky. Spray a piece of plastic wrap with nonstick cooking spray and lay it loosely over the mixing bowl. Place the bowl in a warm, draft-free place until the dough looks puffy and bubbly, and has risen to about double its original size, about an hour.

While the dough rises, spray two loaf pans with nonstick cooking spray and sprinkle in a fistful of cornmeal. Tilt the pans, tapping gently, until the cornmeal coats the sides and bottoms of the pans, tapping out any excess cornmeal.

Use nonstick cooking spray to generously grease your hands, and divide the dough between the two prepared pans. The pans should be no more than halfway full. If needed, prepare one more loaf pan to hold any excess dough.

Cover the pans loosely with oiled plastic wrap and let rise in a warm, draft-free place until the dough is once again bubbly and puffy looking and just peeking above the edges of the pans, about 30 minutes. While the dough is rising, preheat the oven to 350 degrees F.

Place the pans on the center rack in the oven and bake for 30 minutes. After 30 minutes, brush the surface of the bread generously with about half of the melted butter, then return the pans to the oven and bake 10 more minutes.

Immediately turn the loaves onto a cooling rack and brush all of the surfaces generously with the remaining melted butter. Cool completely before slicing or the texture will be compromised.

Easy English Muffin Bread is possibly the easiest, fastest bread you can make. But the best part is its chewy texture and it tastes just like an English muffin.

Easy English Muffin Bread

all-purpose flour (350 grams)

baking soda

Spray the loaf pan with a non-stick baking release and dust well with cornmeal.  Set aside.

Combine the milk and water in a microwave container and heat to about 110°F.  Pour it into the bowl of mixer.

Sprinkle the yeast over the liquid and whisk it in.  Set it aside while you gather the rest of the ingredients.

Whisk together the flour, sugar, salt and baking soda.

Add it to the liquid in the mixing bowl.  Beat for 2 minutes, scraping as needed.

Pour it into the prepared pan and smooth out.  The batter will be very sticky so the best way to smooth it out is to wet your hands, shake off most of the water and then smooth out the batter.

Spray a piece of plastic wrap with baking spray and cover the pan lightly. Let it rise for 30 to 40 minutes until it comes slightly over the top of the pan.  While I don&#39;t usually recommend plastic wrap for covering rising dough, I do here because a towel would stick to the dough.

Towards the end of the dough rising, heat the oven to 400°F.  Bake for 20 to 30 minutes until the top is browned and it sounds hollow when tapped.

After removing from the oven wait for 5 minutes and turn the bread out onto a cooling rack.  Slice it when it is completely cooled.

The bread should be lightly toasted before serving with jams or honey or just buttered.
