These English Style Scones bake up light, tall and fluffy, and are a wonderful treat for breakfast or afternoon tea. Spread them with jam, clotted cream, butter, or simply eat them plain.

English Style Scones

all-purpose flour ((10 ounces by weight))

tsp baking powder

tsp salt

sugar

unsalted butter (at room temperature)

milk

Preheat the oven to 425 degrees F.

In a food processor, pulse the flour, baking powder, salt, and sugar a couple times to combine.

Add the butter and pulse 7-10 times until the butter is completely distributed. You shouldn’t see any chunks of butter, and the mixture should have a sandy texture to it. Transfer to a large mixing bowl.

In a small bowl, whisk to combine the milk and egg. Save 2 tbsp of it for the egg wash later, and pour the rest into the mixing bowl with the dry ingredients.

Stir to combine with a spatula, until a rough dough forms.

Transfer to a lightly floured countertop and knead about 10 times until the dough comes together into a relatively smooth ball. Take care not to knead too much, or the dough will be tougher and not rise as high.

Roll the dough about an inch thick and use a 2.5″ cutter to cut about 7 circles. Re-roll the scraps and cut out another 2.

Place the scones onto a parchment or silicone mat lined baking sheet and brush the tops with the reserved egg wash.

Bake the scones for 13-15 minutes, until about tripled in height, and golden brown on the tops and bottoms. Enjoy!

Authentic English Scones

Self-rising flour

Butter, unsalted and softened to room temperature

Baking powder

Salt

Raisins, currants, or other small dried fruit

Milk, preferably full-fat

Sugar

Vanilla extract

Preheat your oven to 350°F.

In a large bowl, mix flour, baking powder, and salt together.  Add in butter and work the butter into the flour mixture until it resembles sand. (See video.)

In a measuring cup or bowl, mix the milk, sugar, egg, and vanilla together and whisk well until fully incorporated.

Make a well in the center of the dry ingredients and add the milk mixture to the dry ingredients, reserving a few tablespoons of the milk mixture that you will later use to brush the scones.

Mix the wet and dry ingredients together until the dry ingredients are completely coated with the wet ingredients, and the wet ingredients have been completely absorbed by the dry ingredients. The mixture will resemble coarse crumbs.

Dump the mixture out onto a flat surface and knead the dough together into a ball, but do not overwork the dough.  Once the dough comes together, stop kneading.  This process generally takes about 20 turns.

Flour your work surface and a rolling pin, and roll the dough out to about a 1-inch thickness.

Use a fluted biscuit cutter that is approximately 2 1/4 inches to 2 1/2 inches in diameter to cut out your scones. (If you do not have a fluted biscuit cutter, you can use a plain sided biscuit cutter or the rim of a glass turned upside down.)  Place cut-out scones on a parchment-lined baking sheet or a baking sheet that has been greased with butter.  Reroll scraps of dough and continue to cut-out scones until all the dough has been cut into scones.

After you&#039;ve transferred the cut-out scones to the baking sheet, brush each scone with the remaining milk, sugar, and egg mixture.

Place the baking sheet into the preheated oven and bake scones for approximately 8 minutes.

After 8 minutes, rotate the baking sheet and continue to bake scones for another 8 minutes until the scones are golden brown on top.

When the scones are done, remove the baking sheet from the oven and transfer the scones to a wire cooling rack and allow them to cool completely. Once cooled, the scones can be sliced in half and topped with clotted cream and strawberry jam for a delightful afternoon teatime treat. Enjoy!

The most perfect treat for afternoon tea are classic English scones! These scones are soft, light and best enjoyed warm with cream and jam.

Pat down (again, gently) on the dough until the surface is even and it is about 1.5 inch thick. Sprinkle the top with flour if your dough is sticky.

Incredibly light and tender, these English scones have fluffy cake-like crumb and are quick and easy to make. All you need is a handful of ingredients and 30 minutes of your day!

heavy whipping cream

raw honey

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper, or silicone mat.

In a medium cup, beat the eggs, buttermilk and milk. Reserve about 2 tablespoons of mixture in a separate bowl.

In a mixing bowl with paddle attachment, mix together flour, sugar, baking powder and salt.

Then add butter and mix until nice and smooth. The mixture should resemble wet-sand texture. (TIP: Thoroughly coating the flour with butter minimizes the formation of gluten, creating tender and light scones.)

Add egg mixture and mix until just combined. The dough will be quite sticky, but its totally normal. Transfer the dough onto well-floured surface.

Generously dust the work surface with flour and transfer the dough on the floured surface, using a silicone spatula.

With floured hands, knead the dough to smooth out the surface and roll it into 1-inch thick disk. Using 2-inch round cookie cutter, cut out as many scones as you can.

Then gather the dough scraps and repeat the step #5, until all the dough is used.

Arrange the scones on the prepared baking sheet, brush on the reserved egg mixture on each scone and bake for 13-15 minutes, or until golden brown.

Cool the scones on wire rack. Serve warm or at room temperature with sweet whipped butter and jam.
