Green goddess salad has taken over social media, and for good reason. This version of the classic American salad dressing is so unbelievably moreish. It is also good as a dip for crudités. See the recipe tips on how to make this vegan.



Green goddess salad

baby

100 grams/3½oz fine green beans,

150 grams/5½oz sugar-snap peas

avocado, peeled,

radishes,

spring onions,

tarragon

parsley

chives

anchovy

mayonnaise

grams/2¼oz crème fraîche

lemon, juice only

sea salt and black pepper

Serve this antipasti orzo salad as a main course or on a party table – it’s a great crowd pleaser and fridge clearer. The dressing is made from the oil from the jarred vegetables, and you can use any you like – it doesn’t matter if you only have a few artichokes, or more sun-dried tomatoes.

120 grams/4¼oz sun-dried tomatoes

grams/3½oz artichokes

80 grams/2¾oz jarred roasted peppers

grams/3½oz olives, pitted, olives

tbsp capers, drained

tin chickpeas,

grams/3½oz Parmesan (or similar vegetarian hard cheese), coarsely grated

extra virgin olive oil (optional)

salt

parsley,
