Crisp, tender fajita veggies that taste just like your Chipotle favorite! All you need are three main ingredients and a skillet for insanely delicious fajitas veggies.

Fajita Veggies (Just Like Chipotle)

olive oil

green bell peppers

red onion

oregano

salt and pepper (to taste)

Slice

Slice the tops and bottoms off of the bell peppers, cut in half, remove the seeds, and then slice into thin strips.

Saute

Heat the oil in a large pan on medium-high heat. Add the sliced bell peppers and onion, and saute for 7-10 minutes, or until the veggies have softened and are starting to caramelize.

Add and Stir

When the fajita veggies are almost done, add the oregano, salt, and pepper, then stir for another minute.

Shredded Tofu Burrito Bowls

block super firm tofu (see notes)

avocado oil (separated)

taco seasoning (separated)

bell pepper (sliced)

onion

rice

black beans (drained & rinsed)

head romaine (chopped)

avocados (sliced)

onions (optional, for serving)

cilantro (for serving)

salsa verde sauce (optional, see notes)

lime wedges (for serving)

tortilla chips (optional, for serving)

Preheat the oven to 425 degrees and line 2 baking sheets with parchment paper.

Use a cheese grater to grate the tofu. Transfer to one of the baking sheets and drizzle with 1 tablespoon of oil and 1.5 tablespoons taco seasoning. Toss to coat and place in the oven for 10 minutes.

Meanwhile, add the bell pepper, onion and remaining oil &amp; taco seasoning to the other baking sheet. Toss to coat. Pull the tofu out after 10 minutes and toss. Place the tofu and the peppers/onions into the oven and bake for another 15 minutes - or until the veggies are charred and the tofu is crispy.

Meanwhile, add the salsa verde sauce ingredients (see notes) to a bowl and mix to combine. Taste and adjust the seasonings as needed. Set aside.

To assemble, layer each bowl with rice and top with beans, tofu, peppers/onions, romaine, avocado &amp; pickled onions. Sprinkle with cilantro and drizzle with salsa verde sauce. Have plenty of lime wedges &amp; tortilla chips on the side!

Shredded Tofu Burrito Bowls | This Savory Vegan

What is the easiest way to make vegetables ready for fajitas? Bake them in the oven. It is a one-pot (I mean one sheet pan), no-mess, easy and quick method to make fajita veggies. More flavorful than the ones in Chipotle. BONUS - we included easy homemade fajita seasoning. So grab the recipe now!

Sheet Pan Fajita Veggies (Flavorful & EASY!)

Red onion (medium)

Bell pepper (red, yellow, green)

Tbsp Olive oil

Salt and Pepper to taste

½ tsp Hot chili powder

Tbsp Sweet smoked paprika powder

+ ½ tsp Ground cumin seeds

+ ½ tsp Garlic powder

+ ½ tsp Oregano

Mix all spices in a small bowl: hot chili powder, sweet smoked paprika, cumin, garlic powder, and oregano.

Make homemade fajitas seasoning

Peel the onion. Cut a bit from both ends (stem and root). Then, cut it in half. Now, place the half onion on its flat side and make horizontal cuts. I usually cut it as thin as the width of an onion layer. 

Wash the pepper. Lay it on its side and cut off the stem. Now, cut it in half and take the seeds out. Now, place the half pepper on its open flat side and make horizontal cuts of 1/4-inch (4-5 mm) wide.

Place parchment paper in a sheet pan and place the prepared veggie strips on it.

Sprinkle them with olive oil and season them with half of the spice mix, salt, and black pepper. Mix them with tongs.

Roast them in a preheated oven of 430 Fahrenheit (ca. 221 °C).

After 10 minutes, take the sheet pan out, turn the veggies with tongs, and sprinkle them with the other half of the spice mix. Roast them for 10 more minutes.

Serve these rainbow fajita veggies as a side dish with any Tex Mex dinner, or make them a meal on their own! I love to stuff them into tortillas with guac, salsa, and pickled jalapeños.

Heat a grill to medium heat with a 12-inch cast-iron skillet (or grill pan) inside.

Arrange the peppers on a tray and the mushrooms and onion wedges on a separate rimmed plate. In a small bowl, whisk together the avocado oil, garlic, chili powder, cumin, salt, and several grinds of pepper. Drizzle 1 scant tablespoon of the mixture over the peppers and toss to coat. Drizzle the remaining marinade over the mushrooms and onions. Drizzle the mushrooms with a splash of balsamic vinegar and use your hands to coat the mushrooms on both sides.

Grill the peppers in the cast-iron pan for 8 to 10 minutes, tossing occasionally, until charred and soft. Be careful not to overfill the pan or the veggies won’t char on the edges - cook them in 2 batches, if necessary. Grill the mushrooms and onion wedges directly on the grill for about 4 minutes about per side. Remove everything from the grill, using a potholder to remove the cast-iron pan. Squeeze the juice of ½ lime over the peppers and season with salt, pepper, and more chili powder, to taste. Slice the mushrooms into strips and place on a serving dish. Transfer the onions and the peppers to a serving skillet or large platter.

Serve with the tortillas, guacamole, jalapeños, tomatoes, cilantro, salsa, and remaining lime wedges for serving.
