Fermented Jalapeno Peppers are an easy way to add a spicy and sour flavour to your meal.&nbsp;Lacto-fermented peppers are also more nutritious than raw Jalapenos as they feature healthful benefits such as probiotics.&nbsp;

Fermented Jalapeno Peppers

Jalapeno Peppers (sliced)

water

salt

Once your Jalapeno peppers are sliced, add the raw peppers to a mason jar so they are 1 inch from the top.&nbsp; 

Prepare a salt brine by dissolving salt in water.&nbsp; 

Pour brine into the mason jar until the peppers are covered.&nbsp; 

Optional: add any additional flavourings such as pickling spices or raw garlic.

Put the lid on the jar and store at room temperature in a dark place like your closet or cupboard.

Open the jar once a day to release carbon dioxide. Fermentation fans call this "burping." 

Continue this process for 3-4 weeks until fermentation bubbles no longer form.&nbsp; 

Move the fermented Jalapeno peppers to your fridge once fermentation has completed and enjoy for the next 3-6 months.

These naturally fermented jalapeño peppers are raw and full of enzymes and beneficial, gut-loving bacteria! If you love spicy food but you've never fermented before, this is a perfect place to start.&nbsp;Makes 1 quart.

Naturally Fermented Jalapeño Peppers

peppers (sliced, enough to fill a quart-size Mason jar to the neck)

sea salt

garlic (sliced)

pure water (to fill the jar to the neck)

Slice the peppers about 1/8" to 1/4" thick.

Thinly slice the garlic.

Add the peppers and garlic to a quart-size Mason jar and pack them in. Fill to the neck of the jar.

Add salt and starter culture to the jar.

Fill with filtered water.

Cap jar and leave out to ferment for at least 3 days.

You can ferment up to 6 months for a very strong batch.

Check the jar twice a day and "burp" to let out built up gases.

When you're ready, transfer the peppers to cold storage where they will keep for several months.
