Make your own homemade lacto fermented cucumber pickles! This recipe is super easy to make, with that traditional and delicious deli-style taste. 

Fermented Cucumber Dill Pickles

Tbsp kosher, pickling,

non-chlorinated water

dill flowers (or 1 tsp dill seeds

garlic

¼ tsp spices

6-12 pickling cucumbers

Make the brine by combining the salt and water in a pitcher or jar and stir well to dissolve the salt.

Divide the dill flowers, garlic, and spices into two 1-quart jars.

Trim the ends of the cucumbers and cut them into spears (or halves if they are on the small side). Place the cucumbers into the two 1-quart jars with the herbs and spices, filling them as much as you can.

Fill the jars with the saltwater brine, leaving an inch of headspace.

Place a fermentation weight over the vegetables to keep them under the brine. Cap the jars with fermentation lids.

Place the jars in a cool place out of direct sunlight. Check them every few days to see how they’re progressing.

The pickles will be finished when they&#39;re paler green in color and a bit softer, but not mushy - this usually takes about 3-6 days. Give them a taste to be sure they&#39;re to your preference. If not, ferment a bit longer.

Once the fermented cucumber pickles are done fermenting, take off the airlock cap, close with a regular lid, and store in the refrigerator. They will last many months or even up to a year in the refrigerator.

The recipe below is for one 1-quart jar of about 8 pickles. Scale the recipe to make as many jars as you need.

Fermented Dill Pickles

pickling cucumbers (a mix of large and small)

water (about 532 ml; room temperature)

Tbsp pickling salt (about 18 g)

horseradish root

bay leaves

mustard seeds

Wash cucumbers but don&#39;t brush them off. There are lactic acid bacteria on the surface that are needed to start fermentation.

Cut off about 1/16 inch (1.5 mm) off the blossom ends of cucumbers. Molds and tissue softening enzymes are known to reside in the cucumber blossom area.

Prepare 2 1/4 cups of 3.5% salt brine by whisking 1 Tbsp (18 grams) with water until the salt is dissolved.

Place half of the seasonings at the bottom of a clean 1-quart jar. Add the cucumbers. Arrange the top cucumber across the jar to prevent them from floating. Add the rest of the seasonings on top.

Pour in the brine leaving about 1/2&quot; of headspace while making sure the cucumbers are covered with the liquid.

Attach the fermentation lid with an airlock filled with the leftover brine. Make sure that the bottom tip of the airlock stays slightly above the liquid. (see note 1)

Ferment at  64F - 72F (18C - 22C). You should see bubbles going up after about 16-24 hours when fermenting at around 68F. Longer if fermenting at lower temperatures and a bit sooner if fermenting at higher temperatures.

Ferment for 3-4 days for half-sour pickles and 8-10 days for full-sour pickles.

Taste the pickles. If you are happy with the results, place them in the fridge which will stop further fermentation. (see notes 2 and 3)

Looking for a great homemade fermented pickle recipe? Look no more! This recipe makes lacto-fermented dill and garlic pickles that last ages and are so full of flavor and gut friendly bacteria.

Easy Fermented Pickles

sea salt

chlorine-free water*

black peppercorns

red pepper flakes, optional

Round stone to use

Make a brine by adding the sea salt to the water and stirring to combine. Stir until the salt dissolves into the water.

Add 2 of the leaves to the bottom of the clean glass jar. 

Add half of the garlic, half of the dill, half of the peppercorns, half of the mustard seeds, and half the red pepper flakes (if using), to the bottom of the jar. 

Add half of the cucumbers to the jar. I like to pack them in nicely but not so tightly that they are going to bruise each other. 

Add the second half of the garlic, dill, peppercorns, mustard seeds, and red pepper flakes (if using) to the 1/2 gallon jar.

Add the remaining half of the cucumbers to the 1/2 gallon jar. 

Fill the jar with brine so that it covers the cucumbers and comes about an inch from the top of the jar. 

Add the last leaf to the top of the jar and press it down and around the cucumbers so that it helps to cover them in the brine. 

Wash your stone well and place it on top of the leaf. The purpose is to help weigh down the cucumbers and leaf so that all of the cucumbers, leaf, and rock are kept under the brine. You can also use a brining cap for your jar. I have a Kraut Source lid and love it. If you use a rock make sure that it is fully submersed or it will grow mold.

If you are using a stone, cover the top of the jar with a cloth and screw or tie something around the cloth (like a canning ring or a rubber band) to keep the cloth in place. This will help to prevent flies and dust from getting in your pickles. 

Place the prepared cucumbers in an out-of-the-way place, out of direct light. 

After a few days the brine will get a little cloudy and you’ll see a few bubbles starting to form on or around things in the jar. This is a great sign that the cucumbers are turning into pickles. 

Taste your pickles after 5-10 days. If you’d like them more sour continue letting them sit for up to 4 weeks, tasting as you go along, until desired sourness is achieved. Once the pickles taste to your liking place them covered in your fridge or in cold storage for long term storage. They can stay in your fridge for up to a year.

Can I slice the cucumbers before starting the fermentation process?  This will allow me to get more cucumbers in the fermenting jar and have sliced pickles when finished.

Fermented Pickles Recipe: Easy Crunchy Brined Cucumber Dill Pickles

fresh cucumbers, small cucumbers

filtered water, non-chlorinated water (per quart jar)

4-6 sprigs of fresh dill, 1-2 dill heads, or 1 Tbsp dried dill

garlic,

tsp black peppercorns

tsp red chili flakes

Tbsp pre-mixed pickling spices

Create the salt water brine: dissolve 1 Tbsp of salt in 2 cups of water and set aside. Either use warm water or lightly heat the brine on the stovetop until the salt dissolves (no need to boil)

Wash the cucumbers, trim off the ends, and cut as desired (halves, spears, slices, etc). The cucumbers should be at least 1 to 2 inches shorter than the jar, allowing enough headroom for your chosen fermentation weight.

Optional: for maximum crunch, soak the cut cucumber slices in an ice bath for 30 minutes to a few hours before proceeding.

In the bottom of a clean jar or ferment vessel, add all other in-jar seasonings.

Next, pack the cucumbers into the container until completely full. Stuff as many as you can close together, minimizing empty air space as you go.

Pour the cooled brine (room temp to lukewarm is ideal) into the ferment vessel or jar until the cucumbers are fully submerged and covered by at least 1 inch.

Next, add a fermentation weight to keep the cucumbers submerged below the brine. If your fermentation lid includes a weight or spring, you don’t need an additional weight. Finally, add the airlock fermentation lid to the jar.

Set the jar of cucumbers in a cool place (60-70F is ideal) for 3 to 5 days, up to two weeks or longer. Taste-test after 3 or 4 days to gauge if they&#39;re fermented to your liking, or continue to ferment longer. Keep the container on a plate to catch overflowing brine.

When the time is up, remove air lock lid and weights, cover the container with a standard lid, and store the finished fermented pickles in the refrigerator.

Enjoy the fermented dill pickles for several months, or possibly up to a year. As long as they aren&#39;t moldy or obviously putrid, they&#39;re still good!
