Preheat the oven to 170°C/fan150°C/gas 3½.

Melt a knob of butter in a frying pan, then add 2 sliced leeks and cook over a medium heat until softened and golden. Season, then arrange the leeks in a 23cm blind-baked tart case (see our video below) and scatter over 100g crumbled feta.

In a jug, mix together 200ml double cream, 100ml whole milk, 2 large free-range eggs and 2 large free-range egg yolks. Season, then pour into the case.

Bake in the oven for 25-30 minutes until set with a slight wobble. Allow to cool for 15 minutes, then serve.

This cheesy pork recipe is an ideal supper dish: it&#8217;s quick, comforting and low-fat.

Roast pork, potato and feta

onion,

new potatoes, thinly sliced

tbsp olive oil, plus extra for drizzling

pork loin medallions

Preheat the oven to 220°C/fan200°C/gas 7. Place the onion and sliced potato in a shallow roasting tin, pour over half the oil and lots of seasoning, then toss to coat. Roast in the oven for 10 minutes.

Meanwhile, heat the remaining oil in a frying pan over a medium heat. Season the pork and brown for a couple of minutes on each side.

Scatter the cherry tomatoes and thyme leaves over the potato and return to the oven for 5 minutes more. Lay the pork on top and pour over the white wine and stock. Roast for a further 12 minutes until the pork is cooked and the vegetables are tender. Serve scattered with the feta, lemon zest and thyme sprigs, and drizzled with a little olive oil.

Feta & clementine lunch bowl

clementines, 1 zested, flesh sliced

tbsp balsamic vinegar

½ tbsp rapeseed oil

Mix the onion with the lemon juice, lemon and clementine zest and garlic.

Tip the lentils into two bowls or lunchboxes and drizzle over the balsamic and 1 tbsp oil. Heat the remaining oil in a large non-stick wok, add the pepper and stir-fry for 3 mins. Tip in half the onion and cook until tender. Pile on top of the lentils, then mix the clementines, remaining onions, feta, mint and walnut pieces.

Creamy Whipped Feta Dip

feta,

Greek yogurt

lemon zest

tbsp extra virgin olive oil, more as needed

Aleppo pepper, (or red pepper flakes (to your taste))

parsley

pine nuts, (optional)

pistachios, (optional)

In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt and lemon zest. Blend, and while the processor is running, drizzle olive oil through the top opening, until the feta is whipped to a smooth mixture.

Transfer the whipped feta to a serving plate. With the back of your spoon, smooth the top of the feta, making an indentation in the middle (or a “well”). Pour a bit of olive oil all over the feta, then top with the Aleppo pepper, fresh herbs, and nuts.

Serve with pita chips or pita wedges.
