Fiesta Chicken Casserole is an easy chicken casserole recipe filled with chunks of chicken, tender pasta, corn, black beans, taco seasonings all in a one dish cheesy chicken casserole.

(15 oz) corn (drained)

(15 oz) black beans (drained & rinsed)

Heat oven to 350°. Prepare a 9x13 baking dish and spray with cooking spray. Set aside. 

Cook pasta, to al dente, according to package directions.Don&#039;t forget to salt the pasta water. I use about 1 teaspoon salt. 

While pasta is cooking, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder in a large mixing bowl.

Drain the pasta (do not rinse) when it&#039;s done cooking and add into the sour cream mixture. Stir to combine. Add in the corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine. 

Pour into the baking dish and sprinkle the remaining cheese on top. Cover with tin foil and cook for 20 minutes.&nbsp;

Take the tin foil off and let cook an additional 5 minutes. Garnish with sour cream, tomato, chopped cilantro, and avocado slices if wanted. Leftovers keep well, covered, in the fridge for 3-4 days.

FIESTA CHICKEN CASSEROLE

This Fiesta Chicken Casserole is an excellent casserole dish brimming with Southwestern flavors, corn, beans, cheese, pasta, and leftover chicken. With just less than 10-minutes of prep time, you can make this cheesy hearty dish for busy weeknights!

(200 grams) uncooked pasta (spiral

sweet corn, (drained and rinsed)

black beans, (drained and rinsed)

green chiles, (optional)

(270 grams) leftover chicken

green onions

(113 grams) Colby Jack cheese

½ medium yellow onion, (finely chopped)

unsalted butter

(10 grams) minced garlic

(115 grams) sour cream

(2.71 grams) chili powder

½ teaspoon (1 grams) smoked paprika

(3 grams) ground cumin

Preheat the oven to 350 degrees F. Then grease a baking dish or casserole. You can equally use a cooking spray. Set aside.

Start by boiling pasta in a large pot according to package instructions. Drain and place in a large bowl together with sweet corn, black beans, green chiles, shredded chicken, salsa, green onions, and ½ of the cheese.

In a small bowl, add onions, butter, and garlic, and microwave for about a minute. Then transfer into a medium bowl together with sour cream, chili powder, smoked paprika, and cumin. Thoroughly mix.

Transfer the spice mixture to the bowl of pasta and fully combine.

Spread the chicken pasta mixture into the prepared pan and top with the remaining cheese. Bake for 30 minutes, or until casserole is bubbly and heated through. Serve with tortilla chips, if desired.

This is my favorite casserole dish of all time!  I made it last night with cheddar cheese because I didn't have Colby Jack.  I also subbed jalapenos for the chiles and omitted the green onions only because I didn't have any of those ingredients.  It was delicious and very easy!  Oh and I also used 2 cans of Costco canned chicken because that is what I had on hand.  My family and I thank you for this amazing recipe!

I love this recipe! I add corn tortillas on the bottom and add other veggies (diced peppers, fine cut green beans, even broccoli!) and leftovers but the basic recipe is a dream.
