This Balsamic Fig Glazed Chicken is a breeze to make and undeniably delicious! Balsamic Fig Glaze Chicken

Boneless Skinless Chicken Thighs

Salt & Pepper (-

TBS Unsalted Butter

Shallot

Garlic (– minced)

(12 oz) Jar Fig Preserves

Honey

TBS Balsamic Vinegar

Thyme (-DIVIDED, plus more for garnish)

½ Cup Walnuts (– chopped; OPTIONAL for garnish)

½ Cup Gorgonzola (– crumbled; OPTIONAL

Preheat Oven

Preheat oven to 425 degrees F. Spray an 8x8’’ baking dish with non-stick cooking spray and set aside.

Make Balsamic Fig Glaze

Prepare Glaze:  Melt butter in a small saucepan over medium heat.  Add shallots and season with 1/4 teaspoon salt.  Sauté until soft and translucent, about 3-4 minutes.  Add in garlic and sauté until fragrant, 30 seconds- 1 minute.  Add in fig preserves, honey, balsamic vinegar and sprig of thyme.  Increase heat to bring mixture to a boil and immediately reduce heat to maintain a simmer. Simmer, stirring occasionally, until thickened and reduced by half, about 10-12 minutes. Use tongs to remove thyme sprig and discard.Optional for smoother glaze:  Use an immersion blender (or transfer glaze to a stand blender) and puree until smooth.

Season Chicken

Meanwhile, season chicken:  Place chicken on a clean work surface and pat the chicken dry.  Season both sides of the chicken generously with salt and pepper.  Transfer chicken to the prepared baking dish (they should fit snugly).  Spoon the reduced glaze over the chicken, using the back of a spoon to evenly coat and distribute the glaze.  Add 4 remaining sprigs of thyme to the pan.

Bake Chicken with Fig Glaze

Roast:  Transfer the baking dish to the oven.  Bake (basting the chicken with the glaze once during cooking), for 35-40 minutes or until the juices run clear and chicken is cooked through (internal temperature of 165 degrees F.  Remove from oven and let chicken rest 5 minutes.  Optional:  Switch oven to broil during last 3-4 minutes of baking for a more golden brown chicken.  Watch the chicken carefully as it can burn easily!!

Serve Fig Chicken

Serve:  Garnish chicken with fresh thyme, walnuts and cheese if using.  Enjoy!

Fig Glazed Skillet Chicken

unsalted butter (softened)

garlic (minced)

rosemary

salt

black pepper

chicken

balsamic vinegar

fig preserves

Preheat oven to 425 °F (218 °C)

In a small bowl, mix together butter with half the garlic, half the rosemary, half the salt, and half the pepper.&nbsp;

Place chicken into a 9-inch cast iron skillet then rub the butter on the outside of the chicken pieces.

Put in the oven to begin roasting. In the meantime, whisk together balsamic vinegar, fig preserves, the remainder of the garlic, rosemary, salt, and pepper. See notes on this below.

Pull the chicken out of the oven and brush majority of the sauce on the chicken. Place back in the oven to cook and baste the chicken with the sauce in the pan every 10 minutes or so.&nbsp;

Cook until chicken has reached an internal temperature of 165 °F (74 °C), about 25 minutes. Pour remainder sauce on top then place skillet aside to cool before serving.

This is simply buttery deliciousness!  I used chicken breasts cut into 2" cubes, reduced the amount of butter so it wouldn't catch fire, and grilled the chicken on skewers.  I used the fig mixture as a glaze. Worked beautifully.  Definitely a keeper.

I love this recipe.  I generally make it with chicken thighs and reduce the amount of butter.  But recently I've been making it with lamb chops which is also an awesome flavor combo.
