Easy fish biryani made in dum style. Aromatic, flavorful and delicious restaurant style hyderabadi fish biryani. Serve alone or with a raita or salan.

Fish biryani recipe

fish (or half kg)

tsp ginger garlic paste

½ tsp red chili powder

½ tsp biryani masala (or garam masala)

turmeric

lemon juice

salt

bay leaf

star anise (or biryani flower)

cinnamon (or dalchini)

cloves

green cardamoms (or ealichi)

½ tsp shahi jeera

tbsp oil

onions (thinly sliced and layers separated)

tomato (deseeded, chopped finely(optional))

strand mace (or javitri)

¼ tsp ginger garlic paste

coriander powder

yogurt (or curd(semi thick) or coconut milk)

tsp kewra water

tbsp mint (or pudina chopped finely)

coriander leaves (or daniya patta chopped finely)

saffron (or kesar (optional))

tbsp milk

basmathi rice

tsp oil

Mix together all the marination ingredients except fish. Taste the marinade to check the spice and salt. Marinate the fish and set aside till the rice gets cooked.

This step is optional. Soak saffron in warm milk. set aside.

Wash basmati rice under running water until the water runs clear. Then soak for at least 20 to 45 mins. Follow the instructions on the pack for the timing.&nbsp;Drain the rice to a colander.

Bring 6 to 8 cups water to a boil in a large pot of water. Pour 1 tsp oil and then add salt.&nbsp;

Add the drained rice and cook till aldente. Do not make the rice mushy. It must be cooked fully but must be firm and grainy.

Drain the cooked rice to a colander.&nbsp;

Preparation for fish biryani

Fry the fish in little oil on both the sides till the fish gets cooked and the masala turns golden. Set this aside along with any stock or oil left in the pan.

Add more oil to the pan and fry onions till lightly golden. Stir often while you fry. Set aside a few for garnish.

Frying fish

To the same pan, add spices and fry them for a minute.

Add ginger garlic paste and fry until the raw smell goes off. If using tomato, add it now and cook until it turns soft. Add biryani or garam masala and coriander powder, red chili powder and fry quickly.

Pour yogurt or coconut milk and stir. Cook till the mixture thickens. Set this aside.

Add half of the rice to the biryani pot or handi, layer the gravy, add some chopped mint and coriander leaves. layer the fried fish along with oily stock if any.

Layer the rice again and then sprinkle coriander leaves, mint leaves and fried onions. pour the saffron milk. Sprinkle kewra water.

Seal it with a foil and put it on a hot tawa. Cook on high flame for 2 minutes and very low flame for 10 minutes.

Allow fish biryani to rest for about 15 minutes before serving.

Making fish biryani

Slice thinly 1 large onion, chop chilies and coriander leaves. You can deseed the chilies. Whisk one cup curd/ yogurt/dahi with salt, add the chopped ingredients and mix. You can add more or less curd as desired. Cumin powder can also be used. It aids in digestion.

Instant Pot Fish Biryani

ginger (grated)

garlic (pressed)

kashmiri red chili powder

Make Marinade by mixing ginger, garlic, red chili powder, ground coriander, garam masala, turmeric, fenugreek leaves, salt, mint leaves, cilantro, lemon juice and yogurt. Add fish and coat evenly with the marinade. Keep in the refrigerator while preparing rest of the ingredients.

Rinse and soak basmati rice  for 20 mins. Drain and reserve.

Set the Instant Pot to Saute mode and heat 2 tablespoons of ghee. Add thinly sliced onions and cook stirring frequently for 8 to 10 mins or until the onions are caramelized. Take out half of the onion and keep it aside for garnishing the biryani.

Add 2 tablespoons of ghee to the Instant Pot with half of the caramelized onions already in the pot. Add dill and mix well deglazing the pot. Add marinated fish and jalapeño (if using). Add rice, 1.5 teaspoon salt and water. Gently push all the rice under the liquids with a spatula.

Close the Instant Pot and turn pressure valve to sealing. Set Instant Pot to Manual/Pressure Cook mode and adjust the time to 5 mins. Follow with Quick release.

Garnish with the remaining caramelized onions and cilantro. Serve with Raita (Onions and tomatoes mixed in yogurt), and lime wedges.

To make the raita, whisk the yogurt in a medium bowl. Add onions, tomatoes, salt and mix well. Garnish with cilantro.

full-fat plain yogurt

green chilies (, slit lengthwise)

coriander leaves

mint leaves

ginger-garlic paste

4-5 Saffron strands (, soaked in 3 tablespoons warm water)

oil for cooking (, take more if needed)

lemon

cumin seeds

coriander seeds

green cardamom pods

fennel seeds

black cardamom pod

black peppercorns

cinnamon stick

kashmiri red chili powder (, adjust to your spice preference)

turmeric powder

Salt,

Dry roast cumin seeds, coriander seeds, cinnamon stick, cloves, green cardamom pods, black cardamom pod, fennel seeds, black peppercorns, in a pan until fragrant. Allow it to cool.

Grind the cooled roasted spices into a fine powder using a spice grinder. Mix in Kashmiri chili powder, turmeric powder, and salt. Adjust seasoning to taste. This spice blend is now ready to be used for marinating the fish for biryani.

Fish Biryani Masala

Mix the fish pieces with yogurt, Biryani spice blend, half of the chopped mint and cilantro leaves. Let it marinate for 30 minutes.

Marinate the fish

In a large pot, bring 6 cups water to a boil along with some salt. Add the soaked rice and cook until it&#39;s 70% done. It takes about 6-8 minutes on medium-high heat. Drain the water and set the rice aside.

Parboil the rice

In a separate pan, heat oil and fry the sliced onions until golden brown. Remove half for later use and leave the rest in the pan.

Fry the onions

In the same pan with the fried onions, add ginger garlic paste. Sautee for about a minute on medium heat. Add chopped tomatoes and green chilies. Cook until tomatoes soften.

Add marinated fish and let it cook for a few minutes on each side until it&#39;s cooked. Transfer the fish gently to a plate from the curry and set it aside. If the curry is too runny, cook on medium heat until slightly thicker consistency.

Cook the fish curry

In a heavy-bottomed pot, start layering. Begin with a thin layer of rice, then add some cooked curry, half fish pieces, fried onions, remaining chopped coriander and mint leaves, and a few saffron-infused water drops. Repeat the layer.

Top the layer with slices of tomatoes and lemon. Drizzle one to two tablespoons of ghee if your heart desires. Seal the pot with a tight lid or aluminum foil.

Layering

Heat a large Cast Iron Skillet or Tava on medium heat. Place the pot on Tava or Skillet to diffuse the heat. Turn the heat down to low. Steam(Dum) on low heat for 20 minutes. Remove the pot from the heat and let it rest for 5 minutes.

To Bake in the oven (Dum), layer curry, fish, and rice in an oven-safe pot like a Dutch oven or disposable aluminum tray. Cover the pot and Bake the Biryani at 365 F for 25 minutes.

To serve, gently slide the spatula on one side of the pot and gently bring the rice and fish to the top. Remove the biryani gently on a platter. Serve hot with Raita (yogurt sauce) or salad.
