fish tikka masala

Fish Tikka Masala is a rich, delicious, zingy dish that is full of flavour. In this recipe the fish is marinaded then flash fried/pan seared. It is then added to a creamy Masala sauce.

Fish Tikka Masala

400 g Tilapia Fish

Lemon

Garlic (Crushed)

Ginger (Crushed)

tbsp Plain Yoghurt

tsp Cumin Powder

tsp Coriander Powder

½ tsp Cinnamon Powder

½ tsp Cardamom Powder

½ tsp Turmeric Powder

tsp Kashmiri Chilli Powder (or 1/2 tsp Red Chilli Powder)

tsp Garam Masala Powder

Salt

tsp Ground Black Pepper

tbsp Fish Fry Powder (Optional, I used Lazeez)

tbsp Ghee

tbsp Cumin Seeds

Onion (Diced)

tbsp Green Chilli Paste (Reduce if you prefer)

150 ml Plum Tomatoes (Pureed)

½ tsp Red ChillI Powder

½ tsp Red Chilli Flakes

¼ tsp Black Pepper

tbsp Dry Fenugreek

tbsp Garam Masala

tbsp Sour Cream (Or Plain Yoghurt)

Milk

Lemon Juice

Coriander Leaves

Cut fish into 1 inch pieces and pat dry.

Marinade in Lemon Juice, Garlic, Ginger, Yoghurt, Cumin Powder, Coriander Powder, Cinnamon Powder, Cardamom Powder, Turmeric Powder, Chilli Powder, Garam Masala, Salt, Black Pepper and Fish Fry powder (if using). Leave aside for 30 minutes. 

Heat oil and Ghee in a frying pan. Once hot, turn the heat down, add the fish and cook for a minute. Turn the heat up and flip after 2 minutes. Cook for a further 2 minutes. Remove from the pan.

In the same pan, add Cumin and once it sizzles add chopped Onion and fry till a deep golden brown. Around 15 minutes on medium low.

Add Ginger, Garlic and Green Chilli and cook for 2 minutes.

Stir in tomatoes plus  leftover marinade and simmer on low for 10 minutes. Turn the heat up and let the masala bubble away for 10 more minutes on medium high.

Add Turmeric, Cumin Powder, Coriander Powder, Red Chilli Powder, Chilli Flakes, Salt and Pepper. Cook for 5 minutes. 

Add Fenugreek and Garam Masala. Cook for 1 minute on high. 

Stir Sour Cream and Milk in a bowl and then add to a pan. Simmer for 1 minute.

Add Fish. Cook covered on low for 2 - 3 minutes. 

Serve with Fresh Coriander and Lemon Juice over the top.

greek yogurt ((thick curd))

green cardamoms ((optional))

tomatoes (, chopped (2 medium))

red chili powder

coriander powder ((optional))

salt

½ teaspoon dried fenugreek leaves

cream (or (cashew milk

Heat oil in a deep pan, then add the cumin and cardamoms.

When the spices sizzle, add the onions and very little salt.

Saute until they turn translucent. Then saute ginger garlic for a minute.

Add ginger garlic paste and fry for a min.

Then add in the tomatoes &amp; turmeric. Saute till the tomatoes turn fully mushy.

Add red chili powder and saute for 2 minutes till the raw smell goes away.

Blend this with ¾ cup water to a smooth mixture. If using a blender, then cool this completely &amp; then blend.

Pour this back to the same pan. Then pour ½ to ¾ cup water and add garam masala.

Cook this until the gravy thickens and you see some traces of oil over it.

Stir in the cream and kasuri methi. Taste it and adjust salt if needed.

Making gravy

Meanwhile, mix together all the ingredients mentioned for fish. Smear this over the fish and rest for 5 to 6 mins.

Heat a nonstick pan with 1 tablespoon oil and place the fish over the pan.  Fry the fish on both sides until golden and the marinade is cooked well. Alternately you can also thread the fish on to skewers and grill them in a preheated oven at 370 F or 190 C for 12 mins. Move to the top rack and grill or broil for another 3 to 4 mins.

Ensure the fish is cooked through and slightly charred to get the right flavors.

Transfer the fish along with any juices or oil left in the pan to the tikka masala gravy.

Let the fish rest in the gravy for at least 30 mins before you serve. Sprinkle coriander leaves. Serve gently as the fish turns delicate after resting.
