Recipe VIDEO above. A grand Fish Pie, fit for a king yet economical to make! Chunks of fish flakes smothered in a creamy white sauce, topped with mashed potato then baked until golden. Use a combination of both smoked and raw unsmoked fish for optimum flavour and texture. Fresh tarragon is also optional - it gives an extra edge to the flavour that people can't quite put their finger on!&nbsp;

Fish Pie

/ 750 ml milk (, low fat

brown onion (, quartered (Note 3))

(, optional (Note 4))

unsalted butter

garlic (, minced)

onion (, finely chopped)

carrot (, finely chopped)

celery stick (, finely chopped)

tbsp fresh tarragon (, finely chopped (optional))

tbsp parsley (, finely chopped)

Salt and pepper

potatoes

g / 2 tbsp+ unsalted butter

/ 125 ml milk, any fat %

peas

eggs (, quartered (optional) (Note 6))

g / 2 tbsp butter (, melted)

parsley (, for garnish (optional))

Push a clove into the skin of each onion. Place in a pot or large skillet, add milk, turn stove onto medium high heat.

When milk is barely simmering, add fish - don't worry if it's not entirely covered, it can be turned / moved around.

Poach fish for 7 minutes, then use a slotted spoon to transfer fish straight into a medium baking dish (Note 8).

Flake into chunks using forks. Remove bones if you see any.

Use slotted spoon to remove onion and cloves from milk, discard. RESERVE milk.

Preheat oven to 180C/350F. Boil water for potatoes.

Fish:

Melt butter in a large, deep skillet or pot over medium high heat. Add onion and garlic, cook for 1 minute. Then add celery and carrot, cook for 5 minutes until carrot is soft.

Turn heat down to medium low. Add flour, mix in - it will look gluey.

Add half the milk and quickly start mixing. Once incorporated, the mixture will thicken quickly. Add remaining milk and stir. (Video helpful here)

Turn heat up to medium and keep stirring until the mixture thickens to the consistency of honey - about 3 minutes. (Note 7)

Take it off the heat, stir through tarragon and parsley. Adjust salt and pepper to taste.

Sauce:

Scatter top of flaked fish with peas, then pour over the Sauce. GENTLY stir through (don't want fish to turn into mush!).*

Smooth top, then nestle egg in all over the pie.

Pie:

Bring a large pot of water to the boil.&nbsp;Add potatoes and cook for 15 minutes or until soft. (Do this while making the Sauce).

Drain potato, add butter, milk, salt and pepper. Mash until creamy - add more milk if required.

Immediately dollop then spread onto pie (cold mash = hard to spread).

Use fork to draw squiggles on surface (rough surface = better golden bits).

Mashed Potato:

Drizzle surface with melted butter, sprinkle with parmesan.

Bake for 35 minutes or until top is deep golden.

Stand for 5 minutes before serving, garnished with parsley if desired. See notes for reheating and make ahead.

Doubling this recipe is no work at all, and it may save family dinner, too. With a second casserole in the freezer, a nourishing supper is just minutes away when weeknights get crazy. If you’re freezing this recipe, consider puréeing rather than ricing the potatoes for smoother texture upon reheating.

Salmon Shepherd’s Pie

(1 kg) potatoes,

onion, chopped

2 bell peppers,

tbsp ml) olive oil

cup ml) water

tbsp ml) tomato paste

tsp ml) harissa

lb g) skinless salmon fillet, cubed

cup g) frozen corn, thawed

(19 oz/540 ml) cream corn

tbsp butter, thinly sliced

With the rack in the middle position, preheat the oven to 425°F (220°C).

In a large pot, cover the potatoes with cold water. Season with salt. Bring to a boil and simmer for 20 minutes or until the potatoes are tender. Set aside in the cooking water. 

Meanwhile, in a large skillet over medium-high heat, brown the onion and bell peppers in the oil. Add the water, tomato paste and harissa. Cook for 1 minute. Add the salmon and cook for 4 minutes or until medium-rare. Break the fish into large flakes and season with salt and pepper. Transfer the mixture to a 10-cup (2.5 litre), 8 x 11-inch (20 x 28 cm) baking dish. Layer with the thawed corn and cream corn.

Drain the potatoes and squeeze through a potato ricer directly over the corn in an even layer (see note). Dot the surface with the butter slices. 


Bake for 25 minutes or until the potatoes begin to brown. If desired, finish browning under the broiler. Let rest for 10 minutes before serving. 

Very good recipe.  We enjoyed this yesterday evening with broccoli,  and a light salad and glass of red wine.I might use a little more harissa paste next time.

Here&#39;s my take on a classic Fish Pie with the most delightful combination of fish with lots of veggies in a creamy white sauce and topped with delicious mashed potatoes and cheese. This Fish Pie is a comforting, tasty and satisfying family favorite.

Boil potatoes:

Boil potatoes: Bring a large pot of water to a boil and add the cubed potatoes. Cook for for 15 to 20 minutes or until the potatoes are fork tender. Drain.

Mash the potatoes:

Mash the potatoes: Place the drained potatoes back in the pot or a bowl, add the 3 tbsp of butter, the ⅔ cup of milk and ½ tsp of salt. Using a potato masher, mash the potatoes until creamy. Set aside.

Make the mashed potatoes

Prep the oven:

Prep the oven: Preheat the oven to 350°F.

Cook the veggies:

Cook the veggies: In a large skillet melt the butter over medium heat. Add the green onions, carrots and garlic and cook for 2 minutes. Sprinkle the flour over the veggies and stir. Cook for 2 more minutes to remove the raw flour taste.

Add the rest of the ingredients:

Add the rest of the ingredients: Slowly pour the 2 cups of milk to the skillet and whisk until smooth and thickened, about 3 minutes. Add 1 cup of the cheddar cheese, dijon mustard and dill to the sauce and stir until the cheese melts. Add in the fish, gently stir and cook for 1 to 2 minutes. Stir in the frozen peas and season with the salt and pepper.

Make the fish filling

Assemble the pie:

Assemble the pie: Pour the filling in a 9x13-inch ovenproof dish and top with the mashed potatoes. Smooth with a spoon then take a fork and rough up the top a bit. Sprinkle with remaining cup of cheddar cheese.

Bake the pie:

Bake the pie: Place the casserole dish on a baking pan and transfer to the oven. Bake for 30 to 35 minutes or until the top starts to get golden.

Ready to serve:

Ready to serve: Garnish with more dill or parsley and serve.

Leftover Shrimp Boil Fisherman's Pie

Melt 1/2 stick butter in a large skillet. Once bubbling, add chopped onion and celery. Saute for 3-5 minutes, until translucent. Add garlic and cook for another 30 seconds.

Stir flour into the veggie mixture; allow the flour to cook for a minute or two. Whisk in heavy cream until a thick sauce forms. Stir in tomato paste, chicken stock, worcestershire sauce, and seasonings. Fold in shrimp and 1/2 cup parmesan cheese.

Pour shrimp mixture into a greased 9x13&quot; baking dish. Set aside.

In a separate bowl, mash together potoatoes, butter, sour cream, parmesan cheese, milk, cajun seasoning, and salt. Spread this mixture on top of shrimp base.

Bake at 350 degrees for 30-35 minutes, until shrimp mixture starts to boil. Turn on the broiler and bake for an additional 5 minutes to brown tops of potatoes.

Serve topped with green onions.
