Fluffy peanut butter pancakes made with flaxseed and oat flour and sweetened with agave nectar. Wholesome, satisfying, and 100% vegan.

Peanut Butter Flaxseed Pancakes

Tbsp flaxseed meal ((to make flax egg)*)

½ Tbsp water ((to make flax egg)*)

Tbsp Earth Balance ((melted //

vanilla almond milk

Tbsp agave nectar

tsp baking powder

tsp baking soda

Tbsp natural salted peanut butter ((crunchy

salt

tsp pure vanilla extract

oat flour

whole-wheat pastry flour

Preheat electric griddle to medium heat (or about 350 degrees F / 176 C), or a large skillet on the stovetop. You want the surface to be hot but not screaming hot – oil shouldn’t smoke when it makes contact with the surface.

To a large mixing bowl add flaxseed meal and water and let set for a minute or two. Then add melted Earth Balance, agave nectar, peanut butter, baking soda, baking powder, salt, vanilla extract and whisk to combine. Add almond milk and whisk again until well combined.

Next add oat and whole wheat pastry flour and stir until just combined. Let batter rest for 5 minutes.

Lightly grease your griddle and pour scant 1/4 cup measurements of the batter onto the griddle. There should be 6 pancakes (as original recipe is written). Flip when bubbles appear in the middle and the edges turn slightly dry, being careful not to burn.

Cook for 1-2 minutes more on the other side and then top with Earth Balance or more peanut butter and a light drizzle of maple syrup, or whatever else you please.

Will reheat well the next day in the microwave.

Flaxseed Pancakes (Vegan + Gluten-Free)

flaxseeds

flour

baking powder ((ensure gluten-free if necessary))

bicarbonate of soda (baking soda)

240 ml unsweetened almond milk

apple cider vinegar (** (ensure gluten-free if necessary))

maple syrup (*** (or sub any other liquid sweetener))

Place the flaxseeds in a food processor and whizz until you get a fine powder – this can take quite a lot of time and it’s much easier if you have a powerful/high-speed food processor.

Transfer the flaxseed powder into a large bowl, along with the gluten-free flour, baking powder and bicarbonate of soda.

Mix very well, ensuring you’ve got rid of any clumps of flaxseed powder.

Add the almond milk, vinegar and maple syrup and mix again.

Leave the batter to sit for 5 minutes to allow the flaxseed to absorb the excess liquid before frying the pancakes.

Heat up a tiny bit of oil in a frying pan (non-stick is best) and spoon or ladle in a small amount of the pancake batter.

Cook on a low heat for a few minutes until the bottom of the pancake comes away easily from the pan.

Use a spatula to flip it over and cook for another few minutes, until golden brown and crispy on both sides.

Repeat for the rest of the batter – makes around 7 pancakes.

Best enjoyed immediately, but do keep covered in the fridge for up to a few days.

First time I made them... very fluffy and stayed together.... I used a ceramic frying pan with avocado oil... So good everyone loved them. My daughter said they taste like Tim Horton blueberry muffins. I followed the recipe but I added half a cup of blueberries at the end and substituted honey for maple syrup.

I added vegan pea protein from PE science select and these are by far the best protien pancakes I have ever made

These are SO tasty!! I found this recipe as my doctor just put on the most restricted diet I've ever done but thankfully I can eat these. Diet or no, these are good!

My daughter is allergic to egg wheat and peanut so I used regular milk but this recipe is so good both my 4 and 5 year old love them and their picky!!!! Thank you so much!!!!

Melt coconut oil in frying pan over high heat.

When pan is hot, turn heat down to medium heat.

Place 2 silver dollar pancakes in the pan over medium heat (each pancake is 2 &#8211; 3 inches wide).

After about five minutes, or when the edges appear more firm and dry, flip!

Cook for another couple minutes and transfer to a plate.

Top with syrup, peanut butter, fresh berries, whatever you like!!
