Trader Joe’s sun-dried tomato focaccia

turkey

tomato,

a few pieces of thinly sliced red onion

mayo

pesto (I like the Costco brand pesto)

Preheat the oven to 400 degrees. Toast the focaccia in the oven for 5-8 minutes.

Mix the pesto and the mayo together in a small bowl to make a pesto mayo.

Keeping the bread flat on a cutting board, turn your serrated knife sideways and slice horizontally through the center of the loaf. (You don’t want to flip the top and lose those yummy crumbles.) Keeping the top piece flat, set it aside.

Layer the sandwich with pesto mayo, turkey, tomato, greens, red onion, and finish with dollops of pesto mayo. I dollop the top layer of pesto mayo directly on top of the greens and onions so that I don’t have to flip my top piece upside down to spread it on the bread.

Gently press your top piece back on top of the sandwich. When it’s nice and secure, use a large knife to cut through the sandwich. I usually cut it down the middle and across 3 times for a total of 6 pieces. Serve and enjoy! This is sandwich goals.

I'm not sure where you live, but you can probably find a similar delicious one at another grocery store. I've seen all sorts of great breads at Aldi, Walmart, SuperTarget, Whole Foods, Fresh Market, etc., even any of our regional grocers like Publix and Winn-Dixie. (You obvs may have different stores). :) Keep an eye out! (You can even jazz up plain focaccia yourself first with some sundried tomatoes and parm, etc. and bake it.)

This sandwich is outstanding! I've made twice in the last two weeks.

I made this this week- I made fresh pesto sauce for the pesto mayo AND I added Burrata. I also Just toasted the bead in the toaster instead of heating up the oven. Oh my lanta it was good! Make it.

Made this for a birthday party. So easy and delicious. Great party sandwich.

Woah this is even tastier than it looks! Make these for several days in a row for the whole family. Used sriracha mayo and couldn’t get enough! Going to have to make a Trader Joe’s run now…

I made this tonight and it was so good! I couldn’t find the bread so I bought a plain focaccia and some sun dried tomato pesto and spread that on top with extra parm before I baked it. It was perfect!

Forgot to rate the recipe in my original review. 5 stars!

It is just a 10/10 food experience. Ate it for 2 weeks straight for lunch!

Amazing sandwich! I’m going to serve this and wild rice soup to my out of town guests the night before Thanksgiving. Thanks so much for sharing .

I must make this turkey sandwich at least once a week. My son likes a slice of yellow cheddar on his.

YUM, I finally put this together for the fastest dinner. I used a bag of Trader Joe’s Mediterranean salad as the greens and it was just perfect!

Made this for the Chiefs game tonight (Go Patrick! Go Travis!) and it was perfect. I added provolone and broiled that with the turkey so it was warm when I served it. Really easy & really good—I’ll definitely make this again!

The past few times I have added a little of whatever homemade vinaigrette I have on hand to the top and it’s just so so good.
My husband just said I don’t know if anything that could make this sandwich any better! And my 3 and 4 year old boys eat it too! Great fast summer dinner

Made this for lunch today as written except for the greens because I didn’t have any and it was still delicious. This recipe is a keeper! I would give it 10 stars if I could.

Superb sammie! Used TJ Sun-Dried Tomato Focaccia along with lots of leftover turkey I roasted (highly recommend!) Toppings were: the pesto-mayo, dill havarti cheese (TJ) red onion, sliced avocado, spinach, & fresh basil. Fantastic!

Lindsay, I am making this sandwich for my ladies Book club. What would be good sides or appetizers to serve with the sandwich

I’ve made this sandwich before and love it, but I’ve never had a lot of sides to go with it. Thank you so much. I love your recipes.
