Freezer Ready Mini Pizzas are an easy and inexpensive snack to keep stocked in your freezer. A homemade and healthy option compared to frozen pizza.

Freezer Ready Mini Pizzas

English Muffins (1.99)

pizza sauce (0.65)

mozzarella (1.50)

Line two small baking sheets with foil or parchment paper (or do one sheet at a time, preparing the second batch the second day). Open the English muffins and line them up on the baking sheets with cut sides facing up.

Spread about 1 Tbsp pizza sauce over the surface of each muffin, then top with about 2 Tbsp shredded mozzarella.

Chop the salad bar vegetables into very small pieces, then divide them evenly among the pizzas. Press down lightly on top of each pizza to help compact the toppings and keep them in place as they freeze. Cover the baking sheets with plastic wrap and freeze for about 8 hours, or until the pizzas are solid.

Once the pizzas are frozen solid, carefully transfer them to a gallon sized freezer bag for long term storage (you may need two bags). For the best results, the pizzas should be cooked and eaten within 3 months.

To bake the pizzas, take out the number you wish to bake, place them on a baking sheet, and let them partially thaw as you preheat the oven to 400ºF (about 7 minutes). Once the oven is fully preheated, bake the pizzas for about 15 minutes, or until the edges are golden brown and the cheese is melted. Baking time will vary depending on your oven and the amount of toppings on the pizzas.

This family favourite is making a comeback, so keep a few portions in your freezer for a quick midweek meal

Chicken Kievs

chicken fillets

breadcrumbs

parmesan,grated

plain flour

paprika

tbsp sunflower or vegetable oil,for frying

garlic cloves,crushed

tbsp finely chopped parsley

butter,softened

Place all the garlic butter ingredients in a bowl and season well. Mash with a fork until well combined, shape into two sausages using cling film to help you shape it, then tightly wrap and chill or freeze until really firm. Can be made up to 3 days in advance. When firm, slice each into 8 even pieces.

Lay a chicken breast on a chopping board and use a sharp knife to make a deep pocket inside the breast. The easiest way is to push the point of a knife into the fat end, keep going halfway into the fillet. Be careful not to cut all the way through or the butter will leak out when cooking. Repeat with the remaining breasts. Push 2 discs of butter inside each chicken breast, press to flatten and re-seal with your hands. Set aside.

Mix the breadcrumbs and Parmesan on one plate, and tip the eggs onto another. On a third plate, mix the flour with paprika and some salt. Dip each breast in the flour, then the egg and finally the breadcrumbs, repeating so each Kiev has a double coating (this will make them extra crisp and help to keep the butter inside). Chill for at least 1 hr before cooking, or freeze now – see tips, below.

To cook, heat oven to 180C/160C fan/ gas 4. Heat the oil in a large frying pan over a medium-high heat. Fry the Kievs for 2-3 mins each side until golden – you may need to do this in batches. Transfer to a baking tray and cook for 20-25 mins until cooked through.

These 5-ingredient vegetarian freezer burritos are perfect for making a big batch of and then having for lunches throughout the week.

5-Ingredient Vegetarian Freezer Burritos

dry brown rice (cooked (yields about 2 cups))

tortilla shells

black beans (drained)

salsa (to heat level of your liking)

Mexican blend shredded cheese

Cook rice according to package instructions (I cook this ahead of time).

Lay a tortilla shell on a board, add a few spoonfuls of brown rice, then topp with a few spoonfuls of black beans, salsa and a pinch of shredded cheese.

Roll the burrito tightly.

Wrap the burrito in plastic wrap and then put in a ziplock freezer bag. Repeat until all the burritos are made.

To warm the burritos: I like the toaster oven method best- I remove the burrito from the freezer and remove plastic wrap. Put on a plate and cover with a paper towel and microwave for 30 seconds, then put in the toaster oven on high heat for 10 minutes, flipping half way through, until both sides start to brown slightly.

If you don't have a toaster oven, simply microwave burrito on a plate on high, covered in a paper towel for 1 minute, then flip the burrito and microwave for an additional minute. Let sit in the microwave for one minute, then remove and enjoy. Sometimes I've had to microwave for an additional 30 seconds if the burrito is really stuffed!

Children love anything breadcrumbed and simple schnitzels won't disappoint

Pork schnitzel

eggs

sage leaves, finely chopped

pork chops

tbsp butter

Tip the sage leaves and breadcrumbs onto a plate, then mix together with a little seasoning. Pour the eggs onto another plate. Pat the pork dry, then coat each chop in the egg mixture, letting any excess drip away. Then dip in the breadcrumbs until well covered. Cook or wrap in cling film or freezer bags and freeze.

To cook, defrost completely if frozen. Place the chops on a lightly greased baking sheet and brush with a little of the butter. Cook under a medium grill for 7-10 mins until browned. Then turn over, brush with more butter and cook for a further 7 mins until crisp, browned all over and cooked through. Serve with green beans, fresh peas and some mashed potato mixed with grated cheddar.
