Perfectly cooked French Green beans (Haricots Verts) with shallot and a hint of lemon. They make the best side dish to any meal!

Haricots Verts (French Green Beans)

French green beans (, firm and small)

butter

shallot (, peeled and chopped)

lemon juice

Place beans in a large skillet. Add 2 cups water to the skillet.

Bring to a boil over medium-high heat and cook until barely tender, but still crisp. About 5 minutes, tossing occasionally. Drain beans and water and set aside.

Add butter to the skillet over medium heat. Once melted add the shallots and saute for 1 minute.

Add the beans and toss to combine. Season with salt and pepper and a squeeze of fresh lemon juice.

Store cooked green beans in the refrigerator for 3-5 days. Reheat for a few seconds in the microwave or enjoy cold.  I love to eat them cold on a salad.

These sauteed green beans are easy to prepare but elevate beans to a restaurant-worthy side. And perfect with so many mains.

Sautéed French green beans

oz French green beans ((haricots verts))

shallot (or red onion

garlic

salt

If your beans aren&#39;t already trimmed, trip the stem end off them. You don&#39;t need to bother trimming the narrow end.

Mince the shallot/onion as fine as you can - basically very finely dice then chop a little further to be very fine. Finely grate or mash the garlic.

Bring a pot of water to a boil and add a pinch of salt. Add the beans and cook for 1 - 2 minutes until just tender then remove and either run under cold water or put in a bowl of iced water. Drain the beans and set aside.

Warm a small-medium skillet/frying pan over medium heat and add the butter and oil. Once the butter has melted and is starting to sizzle, add the shallot and cook for around 2 minutes until the shallot has softened and gone translucent.

Add the garlic and mix through to distribute it evenly (I sometimes find kind of mashing it in works best) and cook for another 30 seconds. Then add the blanched beans and toss in the shallot-garlic mixture so they become coated. If you have been using a spatula up to this point, I find changing to tongs can help get them evenly coated. Cook, moving around relatively regularly, for around 1 - 2 minutes then serve.

French green beans ((haricots verts), trimmed (452 grams))

unsalted butter ((56 grams))

shallot (peeled and minced (36 grams))

black pepper

Bring the water and ½ teaspoon salt to a boil in a large skillet over medium-high heat. Add the green beans and blanch until crisp-tender, about 5 minutes. Drain the beans and wipe the skillet dry.

In the same skillet over medium heat, melt the butter. Add the shallot and cook for 1 minute. Remove from the heat. Add the blanched beans, remaining ¼ teaspoon salt, lemon juice, and pepper. Toss well to coat the beans. Serve hot or warm.
