This French yogurt cake - gâteau au yaourt - is fluffy, moist, and full of flavors. Loved by kids and adults, it is an easy no-measure cake perfect for any occasion.

Gâteau au Yaourt (French Yogurt Cake)

plain yogurt (keep the container)

eggs

granulated sugar

sachet (15 g) vanilla sugar

olive oil

containers all-purpose flour

baking powder

lemon, zest

butter

Preheat the oven to 355 degrees F/180 degrees C. Using a pastry brush and softened butter, butter, and flour, an 8-inch/20 cm round cake pan.

To make the batter,

mix flour and baking powder in a medium bowl. Pour the yogurt into a separate large bowl. Clean the jar to use it as a measurer. Add eggs, granulated sugar, and vanilla sugar to the yogurt and beat with a hand whisk for a few seconds. Add the oil and quickly mix. Fold the dry ingredients and vanilla sugar into the yogurt mixture and gently mix, just to combine. Please, don't overwork the batter! At this stage, add citrus zest or fruits, apples, pears, lemon zest, etc.

Pour the batter into the prepared pan and bake on the middle rack of the oven for 30 to 40 minutes. A cake tester or the tip of a knife inserted in the center of the cake should come clean or with a few moist crumbs.

Let the cake cool for 5 to 10 minutes before unmolding, then transfer to a wire rack to cool completely. Dust with icing (powdered) sugar if desired.

This French Yogurt Cake will become your go-to family favourite cake. An easy, one-bowl loaf cake filled delicately sweetened with vanilla and lemon zest, the yogurt makes this moist and fluffy.

French Yogurt Cake Recipe

240 g Greek yogurt (or plain natural)

120 ml vegetable oil (or canola)

flour

tsp baking powder

salt

Heat oven &amp; prep pan: Preheat the oven to 180°C (350°F) Grease with butter a 2 lb loaf pan 23 x 14cm (9 x 5.5-inch)  and line the base and sides with parchment paper.

Rub lemon and sugar together. Add the lemon zest to the bowl of sugar and rub the two together with your fingertips until the sugar is moist, lightly lemon coloured and filled with the lemon fragrance.

Whisk eggs &amp; sugar: In a large bowl, add the eggs, sugar and vanilla extract and whisk until pale and light - this takes approximately one minute.

Mix in yogurt &amp; oil: Add the yogurt and oil and whisk until fully combined.

Sift in dry ingredients: Sift into the bowl the flour, baking powder,  and salt. Fold together gently: Using a spatula, fold gently until a few streaks of flour remain. Small lumps in the batter is totally fine.

Bake: Pour batter into the prepared pan and bake on the centre shelf for 50-55 minutes until golden brown and the sponge springs back or a toothpick inserted into the centre comes out clean. If the cake is browning too quickly then cover in aluminium foil and continue to bake. Cool on a wire rack for ten minutes, then using the paper sling, remove from the pan to cool completely.Serve with a light dusting of powdered icing sugar (optional).

I only had coconut yoghurt so used that and  it was delicious . Thank you so much for such a lovely and easy to make cake , I can see it becoming a firm favourite  !

Dear Emma, thank you so much for sharing this classic! We did a mix of orange and lemon peel and a thin glaze made of both juices and powdered sugar on the still warm cake. Gave it a beautiful shine and my daughter was able to throw some sprinkles on it. She is really picky about cake and was very sceptical about the mixed citrus, but ended up loving the batter as well as the finished cake. ***** from us!

Made this today with my 4 year old daughter, it was so simple and is also incredibly delicious. We used natural yoghurt and it was great.
