My favorite fruit salad! Perfectly right and refreshing with a beautiful combination of colors. This is the perfect summer side dish for cookouts or holiday parties. You can switch of the fruits listed here for others you may have on hand.

Honey Lime Rainbow Fruit Salad

lb fresh strawberries, (chopped)

lb chopped fresh pineapple,

oz blueberries

oz red grapes,

kiwis, (peeled and chopped)

mandarin oranges*

bananas, (sliced (optional))

honey

tsp lime zest ((zest of 2 medium limes))

lime juice

Add all fruit to a large mixing bowl.&nbsp;

In a small mixing bowl, whisk together they honey, lime zest and lime juice.&nbsp;

Pour over fruit and toss to evenly coat, serve immediately**.

Chili lime seasoning and tropical fruit flavors combine for a tasty treat!

Mexican Fruit Salad with Tajin

mangos

pineapple (fresh,

cucumbers (peeled (if desired) and chopped)

jimica (peeled and chopped)

Tajin (for sprinkling)

limes (depending how juicy,

Peel and chop all fruit into large chunks.

Peel the jicama and dice, cut the cucumbers into chunks.

Add the fruit and vegetables to a large bowl.

Squeeze 2-3 limes over top and sprinkle liberally with Tajin

Melon Pineapple Fruit Salad with Berries

cantaloupe, (cut into bite-sized cubes)

pineapple, (cut into bite-sized cubes)

strawberries

raspberries

blueberries

blackberries

lemon juice

basil

Cut up the fruit and drain any excess liquid.

Place fruit in a large salad bowl; set aside.

In a small mixing bowl combine honey and lemon juice; whisk to combine. Stir in the basil.

Pour dressing over the salad and gently toss to coat.

Cover and refrigerate for 30 minutes.

Serve.

In a large bowl, stir together fruit and lime zest.

In a small bowl, whisk together the pudding mix and lime juice until smooth and thick (the dressing will have a soft pudding-like consistency, but will thin as it sits in the bowl and mixes with the juices from the fruit). Pour over the fruit and toss to coat.

Serve immediately, or cover and refrigerate for up to 2 hours.

Easy Winter Fruit Salad (1 Bowl!)

oranges,

apple,

firm, just-ripe kiwis, peeled and cut into 1/2-inch pieces

Tbsp lime juice

pomegranate arils

mint leaves

ORANGE: To segment an orange, place it on a cutting board and use a sharp knife to cut off the top and bottom, removing the peel and pith so the fruit is exposed. Then set one of the flat sides on the cutting board and cut off the remaining peel and pith, rotating the orange as you go. Cradle the peeled orange in your non-dominant hand and carefully cut in a rocking motion just inside the membranes, creating slices. The seeds and membranes will no longer be attached to the slices. Once you have segmented slices, cut the slices into ~1/2-1-inch pieces for the salad.

Alternatively, if using a seedless orange, instead of cutting into segments, you can place the peeled orange on the cutting board, cut it in half, then thinly slice and cut into bite-sized triangles.

APPLE: We like to leave the peel on for ease and fiber! Cut the apple into ~1-inch slices, remove the core, and then cut into 1/2-1-inch pieces.

KIWI: Slice off the ends from the kiwi, then place one of the cut ends on the cutting board and carefully slice off the peel. Cut the kiwi into 1/2-1-inch pieces.

To a mixing bowl or serving platter, add the chopped orange segments, apple, and kiwi. Add lime juice and honey and toss gently until evenly coated and no clumps of honey remain.

Garnish with pomegranate arils and/or chopped mint (both optional, but SO pretty!).

Best when fresh. Leftover salad (without the mint) will keep in the refrigerator for 2-3 days as the citrus helps prevent the apple from browning. The mint turns brown within 24 hours and is best added just before serving.

This recipe was a HUGE hit!  I followed it exactly as written and was amazed at how easy it was to make, even for a novice cook like myself.  The winter fruit salad was incredibly delicious. My family devoured it, and there were even requests for seconds!  I will definitely be making this again – it's officially a new family favorite.  Thank you for sharing such a fantastic recipe!
