This Fresh Peach Cake is packed with ripe peaches and a delicious streusel filling!

Fresh Peach Cake with Streusel Filling

all purpose flour,

baking powder

baking soda

cinnamon

salt

unsalted butter, softened

sugar

brown sugar

eggs

vanilla extract

plain non-fat Greek yogurt

peaches (2 medium sized peaches)

Pre-heat oven to 350 degrees Fahrenheit. Lightly grease a medium sized baking dish or spring form pan and set aside. Add all the streusel ingredients to a medium sized bowl, mix and set aside.

Add the flour, baking powder, baking soda, salt and cinnamon to a medium sized bowl and mix together. Add the butter and sugars to a large bowl and beat with an electric mixer. Add the eggs, one at a time, and then the vanilla extract, beating the mixture between each addition. Next, beat in the flour mixture in two additions, alternating with the Greek yogurt. Gently fold the peaches into the batter with a large spoon.

Pour half the batter into the bottom of the pan and then evenly sprinkle the streusel mixture over the top. Spread the remaining batter over the stresuel and bake cake until a toothpick inserted in the middle comes out clean, about 50-60 minutes. Top with whipped cream and fresh peaches, if desired.

Please disregard previous question. My homemade gluten free flour mix did not contain Xanthan gum yet I used it none the less. The flour you used does. However, amazingly enough this cake turned out wonderfully. It rose well and is delicious. I normally follow a recipe to the letter but with this one I also only had coconut flavored greek yogurt. The cake STILL tastes delicious. I believe I just got lucky with this recipe as I would never make a cake without Xanthan gum again.  Thought you or your readers would find this valuable. A simple peach blueberry cake with a crunchy sugar topping. This cake is moist thanks to the butter and sour cream, plus all of the fresh peaches and blueberries.

Peach Blueberry Cake

salted butter (softened to room temperature)

all-purpose flour

sour cream

blueberries

peaches (1-2 peaches)

Preheat oven to 350ºF. Spray a 9-inch round cake pan (or springform pan) with cooking spray and set aside. If you&#39;d like to completely remove the whole cake from the pan to serve, line the cake pan with parchment paper before adding the cake batter.)

In the bowl of a stand mixer (or with a large bowl and hand mixer), whip together the butter and 1 cup of the sugar (the other ¼ will go on top) until pale and fluffy, about five minutes. 1/2 cup salted butter , 1 ¼ cup granulated sugar

Add the eggs, one at a time, and beat well after each addition. Beat in the vanilla. 2 large  eggs, 1 teaspoon vanilla extract

In a small bowl, whisk together the flour, baking powder and salt. Gradually add the flour mixture to butter mixture alternately with sour cream, beginning and ending with flour mixture, mixing just until combined after each addition. 1 1/3 cup all-purpose flour , 1 ¼ teaspoons baking powder, ¼ teaspoons salt, ½ cup full-fat sour cream

Gently fold in the fresh blueberries and peaches to the cake batter using a rubber spatula. Spread the batter in the prepared baking pan. Sprinkle the remaining ¼ cup of sugar evenly over the top of the cake batter. 1 cup blueberries, 1 cup diced fresh peaches

Bake 35-40 minutes, until the top is crackly and lightly browned and the center still jiggles just a bit. A toothpick inserted in the center will have moist crumbs.

Let the cake cool completely in the pan and then serve.

Made this yesterday and again today for a friend and subbed freshly picked huckleberries for the blueberries and WOW. So simple, so tasty, and it looks beautiful!

This was a magnificent cake! I didn’t have blueberries so I used extra peaches. I also had no sour cream but I did have peach yogurt, so I used that along with a touch of almond extract. It was so delicious. My husband wants it again this week as a birthday cake.

Is it possible to use this batter for muffins/cupcakes instead of one big cake? Would it still work well? How long would I need to bake for if so? Looks delicious can´t wait to try!!

Not sure what went wrong, but I baked my cake for longer than suggested and it’s still raw in the middle :( I followed all of the directions exactly.

Loved this recipe! Easy to make, delicious! I had both fresh picked blueberries and peaches and it was the best. Instead of just sugar I added cinnamon to the sugar and sprinkled on top! Perfection
