Fresh Peach Cobbler

Gold Medal™ all-purpose flour

Mix 1/2 cup sugar, the cornstarch and cinnamon in 2-quart saucepan. Stir in peaches and lemon juice. Cook over medium heat stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole; keep peach mixture hot in oven.

Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt in medium bowl, using pastry blender or crisscrossing 2 knives, until mixture look like fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot peach mixture.

Bake 25 to 30 minutes or until topping is golden brown. Serve warm with cream if desired.

Preheat Oven/Melt Butter

Preheat oven to 375 degrees farenheit. Place butter in a 13x9 inch baking dish and melt in the microwave.

Mix crust ingredients

In a medium sized bowl, mix together the flour, 1/2 cup sugar, baking powder, and salt. Pour in the milk and whisk until most of the lumps are gone. Pour over the top of the melted butter but do not stir.

Make the peach filling

Combine the peaches, 1/2 cup sugar, lemon juice, and vanilla extract in a medium sized sauce pan. Bring to a boil over high heat, stirring occasionally. Pour over the top of the butter and crust batter but do not stir.

Bake

Bake uncovered in the preheated oven for 40-50 minutes until top is nicely golden brown. Allow to cool just slightly before serving. Serve warm on its own, or with vanilla ice cream.
