A delicious and easy recipe for Raspberry Friands with step-by-step photos, including notes for making Mini Raspberry Friands.

Raspberry Friands

160 g (1 ½ stick) unsalted butter

g (⅔ cup) plain flour (all-purpose flour) or gluten-free flour

250 g (1 ⅔ cup) icing sugar (powdered sugar)

g (1 cup) ground almonds

eggwhites

vanilla extract

Preheat the oven to 180°C (355°F) (without fan).

Melt the butter in a small saucepan until it turns a pale golden colour, but be careful not to let it burn.

Use some of the butter to lightly grease the friand moulds.

Let the butter cool slightly to use later in the recipe.

Sift the flour and icing sugar into a large bowl and stir through the ground almonds.

Place the eggwhites into another large bowl and whisk until they are white and frothy.

Gently mix the frothy eggwhites into the flour mixture.

Add the melted butter and vanilla extract, and stir everything together.

Fill the friand tin until each mould is ⅔ full. Using an ice-cream scoop will help you to divide the batter evenly and to make even-sized friands.

Place 2 to 3 raspberries into each mould.

Bake the friands in the oven for about 20-25 minutes, or until they are lightly golden and a skewer inserted in the middle comes out clean.

Let the friands cool in the pan for about 5 minutes before removing them to a wire rack to cool completely.

Serve the friands warm or cold with a dusting of icing sugar.

(100 grams) plain flour, plus extra to dust

Grab this blackberry friand recipe to make the cutest tea cakes packed with juicy blackberries and star anise flavor. Baked as hearts, they are delightful on Valentine's day. You'll be sure to enjoy these newly shaped and tasting friands.

Blackberry Friands Recipe

6.4 oz (180 g) butter

+ 7 tsp (60 g) flour

+ 5 tsp sugar

almond flour

tsp star anise

orange

salt

blackberries

Preheat oven to 430 degrees F/ 220 C. Prepare a friand mold or a heart-shaped silicone mold: butter and flour cavities and refrigerate the mold while making the friand batter.

To make the brown butter,

melt butter in a saucepan over medium heat till the golden color. Once it is ready (look for the golden brown color, solid brown sediments on the sides and bottom of the pan, and hazelnut smell), pour butter in another bowl to stop cooking. Let it cool for 5 to 10 minutes. Drain through a mini-sieve and discard the solids. Set the brown butter aside.

To make the friand batter,

in a bowl, sift flour, powdered (icing) icing sugar, almond flour, ground star anise, and salt. In a separate bowl, slightly beat egg whites with a fork or a hand whisk for a few seconds (they do not need to be mounted). Pour beaten egg whites into the dry mixture and combine. Add the orange zest and brown butter, and mix till the batter becomes homogeneous.

Take the prepared mold out of the fridge and fill the cavities up to two-thirds. Arrange two whole blackberries on top. Bake friands for 9 minutes. Then lower the oven temperature to 410 F/210 C and continue to bake for another 8 to 10 minutes: the edges of friands have to become golden brown, and the centers get a slight "bump." Check the readiness of friands with a toothpick: the inserted toothpick comes out clean. Take the cakes out of the oven and let them cool in the mold. Remove friands and place them on a wire rack. Sprinkle cakes with powdered (icing) sugar.
