In a small nonstick pan, cook your egg whites and set them aside.

Heat sesame oil on a large non stick skillet and add in the onions, garlic and ginger. Cook for a couple of minutes or until the onions are beginning to look translucent.

Add in frozen veggies, cauliflower rice, and soy sauce. Pop in a lid and cook for about 5 minutes or until the veggies are warm and tender.

Adjust seasonings. Serve and enjoy with optional toppings.

This (very easy to make) Cauliflower Fried Rice has become a fast favorite for me.  I LOVE that it comes together so quickly and that at the end of the day, we are essentially eating a HUGE bowl of veggies.  It’s meals like this that make it super easy to get your veggies in (even my kids like this one).

Cauliflower ‘Fried Rice’

This easy fried rice dish makes a wonderful alternative to the classic Asian dish. Ready in just 15 minutes, this recipe is the perfect solution to busy weeknights.

Healthy Vegan Cauliflower Fried Rice

tsp sesame oil

garlic,

carrots, peeled and diced (225 g)

1/2-1 tsp red pepper flakes,

green onions, diced

green peas (170 g)

corn (170 g)

salt and pepper,

Remove the stem and leaves from a head of cauliflower. Cut or break into chunks and wash well. Add the chunks to a food processor and pulse a few times until the consistency resembles rice. Set aside until you&#8217;re read to add it to the pan.

Heat a large skillet or wok over medium-high heat then add the sesame oil and briefly heat.

Add the carrots, season with salt and pepper, and continue cooking for 3-4 minutes until they start to soften, stirring occasionally.

Add the red pepper flakes, riced cauliflower, peas, green onion, peas, corn and soy sauce.

Cook for about 6-8 minutes until the cauliflower is tender, stirring often.

Serve immediately topped with more green onions, toasted sesame seeds or cashews, and/or a drizzle of sesame oil or sriracha.

This is a keeper - so tasty and satisfying while amping up my dose of cruciferous vegetables to keep plant rich! I’m adding it to a weekly spot on my menu! 5 * I added mushrooms to mine to make it even more nutritious! Love it!

I was surprised how tasty it was . The recipe makes quite a lot so I will have it for several meals.
