Italian fried meatballs are soft and crispy, made with a selection of fine meats ranging from beef, veal to chicken, turkey and pork. Meatballs recipes have their roots in peasant, poor cuisine as it was a smart way to repurpose leftovers: for example the meat leftover from the day before, of a roast chicken, rather than a turkey, mixed with stale bread, milk, eggs.Therefore, authentic Fried Italian meatballs recipe is made partly with meat leftovers, partly with ground beef (if you have no meat leftovers, you can use ground beef only or mix it with minced chicken, turkey or pork for the same weight), stale bread soaked in milk, Grana Padano cheese or parmigiano, lemon zest, parsley and eggs. In Italian language meatballs are called polpette; in northern Italy they are called Mondeghili. You can eat them hot, right off the pan, or warm, or even cold as an appetizer 

Italian fried Meatballs Recipe

pork

300 g (about 10 oz) of ground beef

g (3,50 oz) of stale bread

whole milk

g ham

black pepper

fine salt

lemon zest

parsley

garlic clove

parmigiano cheese

vegetable oil

bread crumbs

In a mixer mince meat leftovers, mortadella ham, Grana padano (or Parmigiano cheese), 1 small garlic clove and parsley. Then, in a bowl mix a whole egg with ground beef, a pinch of salt and ground black pepper. Meantime, in a bowl, soak the stale bread in the milk.

Once the bread is soaked, squeeze it with your hands to let the excess milk out. Add it to the ground beef and the meat leftovers, then add the grated lemon zest and mix all together with a wooden spoon. Now, take a little bit of the mixture and make balls with your hands with a diameter of about 3/4 cm (1 inch and a half). Meatballs can be round or slightly oval, as you prefer.

Roll and cover the meatballs in bread crumbs and fry them in a pan for about ten minutes, turning them frequently, with butter or a oil for frying. Serve fried Italian meatballs with a side dish of fresh green salad or baked potatoes.

butter

all-purpose flour

beef broth

sirloin

salt

nutmeg

pepper

dry bread crumbs

eggs

milk

canola oil

Spicy mustard

In a large saucepan, melt butter over medium heat.

Stir in flour until smooth. Gradually add broth; bring to a boil.

Cook and stir for 1 minute or until thickened.

Carefully add meat and parsley; cook and stir for 2-5 minutes or until meat is no longer pink.

Stir in the salt, nutmeg and pepper.

Transfer to a bowl; refrigerate for 2-12 hours or until chilled.

Place bread crumbs in a small shallow bowl. In another bowl, whisk the eggs, milk and oil.

Drop meat mixture by tablespoonfuls into bread crumbs; shape into balls.

Dip meatballs in egg mixture, then coat again with crumbs. In a skillet or deep fryer, heat oil to 375°.

Fry meatballs, a few at a time, for 2-4 minutes or until golden brown on all sides.

Drain on paper towels.

Serve hot with spicy mustard
