Crispy fried pickles with an optional dipping sauce!Recipe includes a how-to VIDEO!

Fried Pickles

Vegetable oil (for frying)

all purpose flour (125 grams)

Salt

black pepper

paprika

cayenne pepper

garlic powder

buttermilk

dill

Tablespoons Ranch dressing

Tablespoon BBQ sauce

ketchup

mayonnaise

tabasco sauce

Fill a Dutch oven or large saucepan 2-3" deep with oil for frying. Fix a candy thermometer to the edge (make sure it is in the oil but not touching the bottom of the pan) and set your heat to medium. Oil will need to reach 375F (190C) before you can begin frying, but this will take 10 minutes or so.

Meanwhile, prepare your breading mixture by whisking together flour, salt, pepper, paprika, cayenne pepper, and garlic powder. Set aside.

In a separate bowl, whisk together buttermilk and egg.

Once oil has reached 375F (190C), prepare pickles for frying in batches of 3-4 slices

Coat slices in flour mixture, gengly shake off excess, dredge in buttermilk/egg mixture, then coat with flour mixture again.

Transfer (carefully!) to oil and fry 3-4 pickle slices at a time for 90 seconds on each side or until golden brown.

Use a slotted spoon or strainer to remove from oil and transfer to a paper towel lined plate. Make sure oil returns to 375F (190C) before frying your next batch of pickles.

Fried pickles are best enjoyed warm. If desired, serve with dipping sauce, which can be made by stirring together dipping sauce ingredients until combined.

Ingredients

How to Make Fried Pickles

This classic southern fried catfish recipe is dredged in a perfectly seasoned and spiced cornmeal breading and fried until golden brown and tender.

Fried Catfish Recipe

cornmeal

all-purpose flour

tsp kosher salt

tsp smoked paprika

onion powder

tsp black pepper

lemon pepper

1/4-1/2 tsp cayenne pepper (go up or down depending on your heat preference)

eggs

hot sauce

catfish (patted

lemon wedges, tartar sauce and hot sauce

In a brown bag or ziploc bag, add cornmeal, flour, salt, pepper, smoked paprika, garlic powder, onion powder, lemon pepper and cayenne and shake together.

In a deep pie plate or large shallow bowl, whisk together eggs and hot sauce.

Add each filet into beaten eggs on both sides then add to the cornmeal breading and shake liberally to coat well.  Shake off excess coating and add to a parchment covered baking sheet.  Repeat with each fillet.

Let fish set for about 10-15 minutes before frying.

In a large dutch oven, pot or deep fryer, pour in about 4 inches of oil and heat over medium high heat until the temperature reaches approximately 350-360 degrees.

Working in batches, lower a few fillets into oil making sure not to overcrowd the dutch oven.  Fry fillets until golden brown or about 2-5 minutes on each side depending on size of fish before turning over.  Then remove and drain on a wire rack with a baking sheet with paper towls beneath.

Cool for 5-10 minutes then serve with lemon wedges, hot sauce in a bottle on the side and hush puppies and a couple sprigs of parsley.

Delicious, flavorful, coating that stayed on the fish! Definitely will use this recipe often!

This recipe is PERFECT!!!!  I wouldn't change a thing!!!!

With a couple small changes, this works great in the air fryer..
I skipped the flour and the egg.. mixed the hot sauce into  a couple tablespoons of oil and brushed that on the fish, then tossed in cornbread/seasoning mixture.
For whole fillets, I Air fried at 390 for 7-20 mins on each side then increased temperature to 400 for about 3 mins just to get it extra crispy. It's my go to cat fish recipe  now!

Simply delious! same food all of the time. I normally oven bake my fish, but even after deep frying and putting the fish on a rack in the oven it was not weighted now with grease. I wonder if shrimp can be cooked using this recipe.

I don't know about anyone else...but I've been using the bagged ,premade fish fry mix forever and it just never gave me what I was looking for! My fish never fried up crispy and always seemed soft and soggy. One day I happened to check the ingredients and saw that it's FLOUR.  Just seasoned yellow flour. Sigh. 

Anyway, I searched for a fried catfish recipe and this one popped up immediately. I printed it out, prayed and hoped for the best. 

Well baybeeeeeee!! We have a winner!! My fish came out crispy, golden brown and tasted amazing. We paired the fish with a couple beers and cold salads.  Amazing recipe. I posted the results on my instagram page ,if anyone is interested in the REAL results. @wedand_butter

My wife really loved the recipe thank you I cooked it by the way, I am 52 and I do all the cooking for my wife but I’ve always had trouble cooking catfish your recipe is great

This seasoning is delicious.  I used a different fish and didn’t have time to let it sit in the fridge with the breading, but it still came out great.  It has just the right amount of heat from the cayenne pepper, and it’s not too salty.  I did add a bit of Old Bay seasoning since 
I love that on my seafood, but me and my husband agreed that this recipe is a keeper.
