The best Fried Squash Recipe featuring a crispy, golden batter of cornmeal and flour. Works beautifully for fried yellow squash AND fried zucchini!

Fried Squash

milk

eggs (slightly beaten)

hot sauce

yellow squash (or zucchini),

canola oil

all-purpose flour

cornmeal

Kosher salt

black pepper

Add the milk, eggs, and hot sauce to a medium-sized mixing bowl. Stir to combine. Add the squash slices, and set aside until ready to use.

In a breading tray or shallow container, whisk together the flour, cornmeal, salt, and pepper. Set aside until ready to use.

Add the oil to a skillet over medium-high heat and allow to come to temperature, between 350°-375°.&nbsp;

Shake off any dripping milk from the squash, and dredge completely in the dry batter. Carefully add to the oil, taking care not to overcrowd the pan and frying in batches as needed. 

Have ready a plate lined with paper towels or a cooling rack atop a rimmed baking sheet lined with paper towels.

Cook the squash for 2 1/2 -3 minutes each, or just until the crust is perfectly golden brown. Remove from the oil and allow to cool slightly. For best results, serve right away.

Southern Fried Yellow Squash

Just enough vegetable oil

cornmeal (Not cornmeal mix) (I prefer yellow)

salt

all-purpose flour (optional) (Optional: Many people like to add flour)

Pour enough oil in a high-side skillet (not nonstick) or large saucepan to reach a depth of about 1/4 inch. No more! Bring temperature up to between 360 and 375F degrees over medium high heat.

I use a digital thermal thermometer you can buy online and at hardware stores for a quick and easy way to measure the heat.

Meanwhile,  Cut the squash into 1/8 to 1/4-inch-thick slices. Lightly sprinkle salt on both sides of the squash slices. Let stand 5 minutes.

Press the cut sides into the cornmeal. If you choose to add the flour, simply stir it into the cornmeal on a paper plate for easy clean up. I find that the flour prevents some of the cornmeal from sticking to the squash.

Gently drop the coated squash slices into the oil one by one in a single layer. Be sure they are not touching each other. If there are too many slices in the pan, the temperature may drop too quickly and take too long to come back up to 360 to 375 degrees.

Cook the squash about 2 minutes on each side or until lightly browned. I usually cook 2 to 3 minutes on first side, flip, then 1 minute on the other side. Drain on paper towels.

We cooked squash this way tonight and it was so delicious!  This is now my favorite way to serve (and eat) squash.  Thank you for sharing this recipe.

I made these last night, Delish! I also chunked up a green tomato and cooked it the same way. That was delish too!!

What a pleasant, easy way to serve summer squash. I couldn't believe how tasty these are. Also, I had about 10 rounds of squash left and stored them in the fridge. They were excellent cold for breakfast this morning. I'll be using this recipe for sure as they come in from the garden.

So is it better to only use yellow cornmeal and omit the 2 tablespoons of flour
 If I remember correctly my Grandma used yellow cornmeal and always added a little bit of flour, Tony Chachere's Seasoning, black pepper, garlic powder and onion powder 
 A few times she dipped in a wet batter before coating with dry ingredients, What is the difference in the 2..???

I fried strips of green pepper with fried squash, very good.

This Fried Yellow Squash recipe is the perfect way to enjoy the abundance of summer squash. It&#x27;s delightfully crispy on the outside and tender on the inside, and so very easy to make. Grab your favorite dipping sauce and enjoy!

Vegetable oil or canola oil (for frying)

Add at least 2” of oil to a large Dutch oven or heavy pot set over medium heat. Place a thermometer into the oil and bring the temperature to 350° F. This will take a while, so get this started right away.

Pat the yellow squash dry with a paper towel.

Add flour to a small bowl and set aside.

In a medium bowl, whisk together the eggs and milk until smooth. Set aside.

In a separate medium bowl, stir together the plain breadcrumbs, panko breadcrumbs, parmesan, kosher salt, Italian seasoning, and garlic powder. Set aside.

Once the oil is hot, dip a piece of squash into the flour, making sure to coat it on all sides and then shake off the excess. Transfer the flour-coated squash to the egg mixture and make sure the squash is coated with egg on all sides. Next transfer the squash to the breadcrumbs and make sure it is evenly coated on all sides. Then very carefully lower the breaded squash into the hot oil (use tongs or a spider strainer if you need to). Repeat this process, taking care to not overcrowd the pan.

Cook the squash for 30-45 seconds per side, or until golden brown. Remove the squash from the oil and place them on a paper towel or wire rack to cool. Immediately sprinkle the squash with a small pinch of kosher salt.

Repeat with the remaining squash, cooking in batches to not overcrowd the pan.

Enjoy immediately with ranch or marinara sauce.

I halved the recipe for my one squash and it was perfect. Light but still tasted the squash!Will use this recipe again.

The best squash I have ever made. Works well with zucchini as well as yellow squash. Will be my go to recipe from now on. Even my husband who doesn't care for squash enjoyed this. I did however use Italian bread crumbs as that's what I had but kept everything else exactly as written.
