Easy Frito Chili Pie

(9-ounce) bag original Fritos chips

onion

garlic

chili powder

(10-ounce) can Rotel tomatoes, (undrained)

(15-ounce) drained and rinsed can pinto beans

(15-ounce) kidney beans

cheddar cheese

Spray a 2-inch deep 9-inch pie pan with non-stick cooking spray and dump the 1 (9-ounce) bag original Fritos chips into the pan.

Heat a pot over medium-high heat on the stove, add the 1 pound ground beef and 1 cup diced onion to the pot. Cook for 8 minutes until the meat is browned and the onion is tender.

Add the 3 teaspoons minced garlic, 1 tablespoon chili powder, 2 teaspoons oregano, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon salt, and ½ teaspoon pepper to the meat mixture and stir to combine. Cook for one more minute.

Add in the 1 cup beef broth, 1 (8-ounce) can tomato sauce, 1 (10-ounce) can Rotel tomatoes, 1 (15-ounce) drained and rinsed can pinto beans, and 1 (15-ounce) drained and rinsed can kidney beans. Stir and cook for another 5 minutes to heat through.

Pour the chili evenly over the Fritos in the pie pan.

Top with 1 ½ cups shredded sharp cheddar cheese. Broil the pie on HIGH in the oven for 2-3 minutes until the cheese is melted and bubbling. Remove from the oven and serve fresh.

Brown ground beef and onion in a skillet on top of the stove.  Drain if needed.  Add chili beans, diced tomatoes, chili powder, garlic powder, paprika, cumin, black pepper. salt and cayenne.  Heat all ingredients together for about 10 minutes.

Pour into a baking dish.  I used a 11 x 7 inch dish.  You can use whatever you have.  Sprinkle on cheese and fritos.  Place in preheated 350 degree oven for about 20 minutes.  Can add chopped green onions on top and a dollop of sour cream when serving.  Makes 6 servings.

Preheat oven to 400 degrees. Spray a 9x13-inch casserole dish with nonstick cooking spray.

In a large skillet over medium heat, brown ground beef.  When ground beef is about halfway browned, add the onion and cook until the beef is browned and the onion is soft. Reduce the heat to low and add the garlic. Cook for 1 minute; stirring constantly.  Drain any excess grease. 

Stir in the taco seasoning, chili powder, water, Rotel Tomatoes, and kidney beans.  Simmer for about 10 minutes.

Layer about 2 cups of Fritos in the bottom of a greased casserole dish. Spoon half the ground beef mixture on top. Sprinkle with half the cheddar cheese and Monterey Jack Cheese.

Sprinkle with 2 more cups of Fritos, followed by the remaining meat and bean mixture. Top with the remaining Fritos and cheese. 

Bake for about 20 minutes or until the cheese is well melted and the casserole is hot.  Top with all of your favorite toppings and serve immediately.

Your Frito pie was such a fun and tasty dish. I loved the ingredient mix, it was a great treat for my guests.

If you can get corn tortillas, you can make your own corn chips (Frito Lioke). Cut the tortillas into strips and air fry or pan fry until done to your taste. Sprinkle with salt as they air dry on a wire cooling rack. Practice makes perfect in this endeavor. I would make the corn chips (Frito-like) well before trying the casserole.If you can get hard taco shells, break them up after cooking in the oven into bite-sized pieces.

I used to eat these at football games growing up. Adding extra jalapenos makes the whole thing better because the corn chips handle the heat perfectly. Your recipe brings back some great memories from those busy Friday nights.

I triple the recipe for the taco seasoning when I make it &amp; keep it in a container the cupboard for quick use. I keep the recipe taped to the lid so it’s easy to mix up a fresh batch when it gets low.

In a large skillet over medium heat, brown and crumble 2 pounds&#32;ground beef along with 3 cloves&#32;small garlic, minced and 1 small&#32;onion, diced. Drain excess grease. Place back into skillet.

Add in 15 ounce&#32;can tomato sauce, 6 ounce&#32;can tomato paste, 1-2 Tablespoons&#32;chili powder, 1 teaspoon&#32;ground cumin, 2 teaspoons&#32;salt and 3/4 cup&#32;water. Stir well until combined.

Turn heat down to medium-low and allow mixture to simmer for at least 20 minutes.

Put 9.25 ounce&#32;bag Fritos corn chips on a large plate or in a large bowl. Top with chili mixture. Or do this as individual servings.

Serve and add desired toppings (sour cream, grated cheddar cheese, diced red onion, minced jalapeño peppers)

Making this tonight and was gonna follow the recipe exactly but I want to add beans and my husband does not like beans. How do you suggest I go about that? Should I simmer it for the 20 minutes remove his portion and put it into a bowl and then add my beans in and some for another 5-10 minutes And add more broth if it gets too thick and do I rinse the kidney beans before adding

This was so fun to read about and then read all the responses. So I thought I’d share too. Around 1970 when I was in a small grade school in south Missouri, we had a version of this for school lunch (before the Federal Government ruined school lunches).  Our Lunch Ladies made Frito pie for a 100 of us or so a few times during fall and winter.   It was very similar to what some of you have written about; Fritos, Chile, cheese in a full sheet oven pan cooked until cheese is gooey then, served with choice of extras. It was the best thing ever! I had forgotten it until I was read your blog looking for something new to try with my Chile. The basic Chile those ladies made was also incredible. I managed to get a hold of that recipe from the head cook after she retired while I was in my early 20’s. I still make it today with no changes except for some cayenne for heat.   Anyway, thanks everyone for stories and for bringing back a super memory from my single-digit years!

During a recent ice storm &amp; major power outage, I made “cheater” Frito Pie. I have a gas stove top but didn’t want to open the fridge or freezer. A can of chili &amp; Fritos made for a quick, warming meal, albeit without any toppings.
I prefer thick chili &amp; will try your recipe during the football game next weekend. 
During camping trips, warm Dr. Pepper was always a hit with non-coffee drinkers.

You nailed it!! My grade school served "straw hat" and I have struggled to find a recipe for it which tasted like what I remember from childhood. I was sad that I probably wouldn't ever find a true copycat. With your simple recipe I found, I hoped this would be the one. It is! Finally!! Thank you so much for sharing.
