Fritos Corn Salad is a unique dish that can be used as a side or a dip! Packed with corn, black beans, peppers, onion, a blend of spicy and savory seasonings, and of course crunchy Fritos, this corn salad is perfect to bring to any potluck or BBQ. It’s so simple and quick to make, you’ll want to whip this up for every occasion!

Fritos Corn Salad

mayonnaise

sour cream

Lime (juiced)

salt

½ teaspoon of ground black pepper

garlic powder

chili powder

½ teaspoon of ground cumin

Cups of Fritos corn chips

15-oz Can of sweet golden corn, drained

15-oz Can of black beans, rinsed and drained

pepper

Red bell pepper

onion

Add the mayonnaise, sour cream, lime juice, salt, pepper, garlic powder, chili powder and cumin to a small bowl and stir to combine.

Add the corn chips, corn, beans, green pepper, red bell pepper and onion to a large bowl and toss to combine then pour in the sauce mixture and gently toss to combine once again.

Serve with freshly minced cilantro and additional Fritos chips.

Mix all ingredients except for Fritos and chill for a few hours. Add Fritos at time of serving and mix well and serve.

Mix first 5 ingredients and chill. Stir in corn chips just before serving. You may not want to add all of the corn chips. Add a little at a time. Some people prefer to just serve the Fritos on the side or crumbled on top. You can eat this with a spoon or as a dip with Fritos Scoops for serving.

(10-ounce) can Rotel, (drained)

Fritos

extra virgin olive oil

black pepper

onion powder

cumin

In a small bowl, combine all the ingredients in the dressing list.

Whisk until smooth and fully incorporated.

In a large bowl, combine corn, beans, Rotel, bell pepper, and cheese.

Top the salad with the homemade dressing.

Gently stir to combine the salad and dressing mixture, then add the Fritos just before serving.

Fold the Fritos into the salad mixture to avoid breaking them. Do this just before serving the salad to maintain the Fritos crunchy texture.
