Frito Corn Salad combines sweet corn, fresh bell peppers, spicy jalapenos and of course crunchy Fritos all in a creamy dressing.  This is the perfect potluck side dish or appetizer dip!

Frito Corn Salad

corn

red bell pepper (diced ¼-inch)

green bell pepper (diced ¼-inch)

½ red onion (diced ¼-inch)

jalapenos (drained and chopped,

mayonnaise

chili powder

cheddar cheese

Fritos chips

Combine all ingredients except Fritos in a large bowl and mix well.

Just before serving, stir in Fritos.

Season with salt &amp; pepper to taste.

Fritos Corn Salad

Crunchy corn chips, fresh corn, bell pepper, jalapenos, cheddar cheese, lettuce, and chicken are combined with a Cholula and lime dressing to make this a summer salad hit!

Frito Salad

romaine lettuce

corn, kernels removed, about 3 cups worth

red pepper, diced,

green pepper, diced,

red onion, diced small, about 1/2 cup

can diced jalapenos, drained

cheddar cheese,

Fritos corn chips

cumin

Cholula hot sauce

lime juice

Combine all salad ingredients except the Fritos in a large bowl OR set out bowls of each ingredient for serving "DIY salad bar style."

Whisk together the mayonnaise, cumin, chili powder, Cholula, and lime juice. Pour dressing over salad and toss well.

Just before serving, add Fritos and toss to combine.

My all time favorite salad. My husband and I crave this at least once a month, and we meal prep a ton for lunches and dinners. SO good. All of it. My favorite part is adding the fresh corn and the chili cheese fritos. YUM.
