This simple, homemade fruit salad recipe is an ideal light, healthy side. With a citrus poppyseed dressing, you&#039;ll love its fresh taste!

Fruit Salad

strawberries

pineapple

blueberries (about 2 cups)

kiwi fruit

red grapes

banana*

mint (optional)

orange

juice of 1/2 the same medium orange (about 3 tablespoons)

lime

juice of the same 1 small lime (or 1/2 small lemon)

honey

vanilla extract

poppyseeds

If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi,  and grapes.

Whisk

In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppyseeds.

Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

watermelon (chopped)

raspberries

mango (pitted and diced)

oranges (sectioned)

lime (juiced)

Place all fruit salad&nbsp; ingredients in a large bowl.

If using, mix honey and lime and pour over fruit salad.&nbsp;

Gently toss to combine.

Stir salt into vinegar until salt is dissolved.

Add vegetable oil to vinegar.

red grapes (or green grapes, about 3 cups)

strawberries (about 2 cups sliced)

blueberries (about 1 cup)

blackberries (about 1 ½ cups)

kiwi (peeled and sliced)

Wash and dry the fruits well. Peel, core and chop the pineapple, slice the strawberries and peel and chop the kiwi. Combine all fruit in a large bowl.

In a small bowl, whisk together the lime zest, lime juice and honey. Pour over the fruit and toss gently to combine. Serve immediately.

I made this according to the recipe and the blueberries and blackberries changed everything to an ugly dark blue/black/grey. It was delicious but ugly. I will not make again.

April 29th 2024. I made Kristine's Fruit Salad for a family gathering this past weekend and it was a hit. Most of the 15 people that were here, came up to me at some point during the evening, and told me how much they loved the fruit salad. I ommitted the strawberries bc I don't really like them but added a bit more of the other fruits to make up for that. I also used both red &amp; green seedless grapes. Twice I walked into a conversation about the fruit salad and someone would say "is there a glaze on this?", or, "this salad is delicious, what's in it?" or "can I please have the receipt". I double double recommend trying this fruit salad. I made this receipt yesterday. A day later my husband is asking me to please make it again,SOON! 😊

This was delicious! The dressing put it over the top! I used fresh mango in mine instead of grapes because I did not have grapes on hand and the mangos worked really well! I chopped all the fruit in the morning but kept the kiwi separate. I added the kiwi and the dressing right before serving. Worked perfectly and the colors were stunning and it tasted so good! My whole family loved it!

We had this with out Easter brunch - it was delightful.  I used maple syrup instead of honey to make it vegan - delicious.

Zesty Fruit Salad Dressing (w/ Honey and Poppy Seeds)

tbsp orange zest (from 1 large orange)

orange juice (from 1 large orange)

tsp lime zest (from 1 lime)

lime juice (from 1-2 limes)

tbsp honey

tbsp poppy seed dressing (any brand)

Zest orange and lime. Squeeze juice, being careful to strain out seeds.

Whisk all ingredients in a small bowl.

Pour over 8-10 cups of fresh fruit and stir gently. Serve immediately.

Berry Fruit Salad with a honey, lime and mint dressing is a beautiful and tasty addittion to summer parties or as a healthy summer dessert. Also, leftovers are wonderful blended and made into popsicles.

dragon fruits (*peeled and cut, see Note below)

strawberries (*hulled and

mint (*about 1 small bunch)

lime zest (*from about 2 large limes)

lime juice (*from about 2 large limes)

Rinse watermelon, pat dry and place on a large cutting board. See note #4 below.

Using a sharp chefs knife carefully cut off both ends of the watermelon.

Turn the watermelon onto one of the ends. Carefully cut the rind off in large strips starting at the top of the melon and working down towards the cutting board.

Once the rind is off, cut the watermelon into approximately 1 inch thick steaks.

Working on one watermelon steak at a time, lay the steak flat on the cutting board and cut it into 1 inch strips.

Turn the cutting board and cut the watermelon in the opposite direction creating approximately 1 inch cubes.

Transfer the cut pieces to a large mixing bowl. See note #5 below.

Cutting the Watermelon

Rinse the dragon fruit and place it on its side on the cutting board.

Using a chefs knife carefully cut off both ends. The end that had the stem may  need a second this slice removed from that end. See video for more details.

Cut the dragon fruit lengthwise.

Using your fingers peel the skin from the fruit and lay each half flat side down on the cutting board.

Using the chefs knife carefully trim any excess pink and discard.

Cut the halved dragon fruit in half again. Lay the 2 halves flat on the cutting board. Using the cookie cutter make shapes in the dragon fruit. See note #6 below. Set the stars aside on a plate. Add the stars to the salad after dressing and just before serving.

Cut the scraps of dragon fruit into small pieces and transfer to the watermelon bowl.

Cutting the Dragon Fruit

Wash, core and cut strawberries. Add to watermelon bowl.

Rinse remaining berries and add to the watermelon bowl along with mint and lime zest.

In a separate bowl whisk together lime juice and honey. Pour over berries and gently mix. Top with dragon fruit stars. See note #7 below.
