Green Smoothie Bowl

mango

baby spinach

banana (halved and divided)

protein milk (or milk of choice)

yogurt (I used dairy-free cocoyo)

strawberries

tbsp unsweetened coconut flakes

green smoothie

Blend half the banana with the frozen mango, spinach, protein milk and yogurt.

Pour in a bowl and top with diced mango, strawberries and coconut flakes.

Very good recipe. I was able to trick my husband into thinking it was a new gelato ice cream as it’s that good. Tricking him into thinking something is sweet like ice cream, cake or cookies is the only way I can get him to eat a high fiber containing food. This recipe will go next to the cookie 😜aka energy bar recipe. I really like how you can modify the ingredients. Thank you for such a wonderful recipe.

I've never been much of a smoothie person, but there's something about this one. I made it once and couldn't stop thinking about it for days, until I finally had to buy more bananas so I could make it again! It's not too sweet and also not too tangy (my usual complaint about smoothies). Just smooth and lovely. Now it's in my regular breakfast rotation. I use plain yogurt and oat milk. I've done it with cow's milk too but I find the oat milk gives it a bit more substance.

Very good recipe but I ended up making it in the blender as a smoothie by adding more milk. Maybe I was supposed to use a food processor? But it was still delicious

Vegan Gummy Bears

fruit juice ((see notes))

tsp agar powder ((see notes))

You can watch the video in the post for visual instructions.Prepare 2 silicone molds (I use these) and a dropper.

Combine fruit juice, agar agar powder, sweetener of choice (optional), and fruit powder (optional) in a bowl and stir with a whisk. See notes for different versions.

Transfer to a pot or pan and bring to a boil. Reduce the heat and simmer for 5 minutes, stirring frequently. This is important for the agar agar to get activated.

Using the dropper fill the mixture into the silicone molds. Leave to set at room temperature for at least 20 minutes (the time depends on which juice you use). You can also let the gummies set in the fridge. Enjoy!

I've tried several vegan thickeners, and for those that like really chewy gummy candy I recommend tapioca starch. When you cook it, it gets too thick to pour/dropper into molds, so just spread it thinly on a cookie sheet to dry out and then cut it into strips or pieces. Once dried to your liking, put it in a zipper sandwich bag to carry it in your purse, no refrigeration needed!

Hi Ela! Thank you for great recipe! Do you know what is the proportion for using guar gum instead of agar agar? In some sources it says you need much less amount but I couldn’t find precise information, thank you!

Thank you for posting. After making it a few times I would emphasize two of the points made above. First, the mixture needs to simmer while stirring for five minutes. Second, the resulting springy consistency is similar to the whites of boiled eggs. The texture is not as satisfying as a traditional gummy, but it is a good vegan organic option. By comparison, I found carrageenan produces a firm jelly.

Recipe is PERFECT!  I do recommend that you add a mold inhibitor if you do not plan to eat them right away.  Freezing also worked for me just fine with this recipe.  I am a cannabis chef and have completed several batches now using this recipe with making very little changes.  I did double the agar agar powder, although it was not 100% necessary the original recipe was very stable as it was.  I also went with freeze dried fruit powders mixed with granulated sugar (basically creating a vegan jello).  Added my agar agar powder, mixed in my fruit juice, brought to a simmer, then mixed with my "oils".  filled molds and they set within a few minutes, moved to the fridge for a few hours.  Next, i removed them from molds and left to air dry for 48 hours... they are perfect!!!!

Vegan Gummy Bears (No Gelatin Gummies Recipe)

These healthy veggie fruit snacks are a fun, kid-friendly treat made with real produce—perfect for a simple, wholesome snack on the go!

Veggie Fruit Snacks

strawberries (chopped)

carrots (chopped)

tbsp honey ((taste and add more as needed))

water

tbsp gelatin (unflavored)

Add strawberries, carrot, honey, and water to a blender. Blend for about 5 minutes until super smooth.

Add fruit mixture to a pot on the stove. Add the gelatin and mix.

Cook over medium heat. Do not let it boil. Whisk constantly until the mixture is no longer grainy. This takes about 3 minutes.

Using a dropper, drop mixture into molds. Make sure to pop any bubbles that come up. Put in the fridge for 1-2 hours.

Pop the fruit snacks out of the molds and serve. Store in a bag in the fridge for up to a week, or in the freezer for longer!

Love these!! I use apple juice instead of water and either agave or honey, adding a little more to taste. I typically do strawberries and carrots. My husband complains they aren’t as good as “real fruit snacks” 😂 and I explain they are for our toddler (who loves them). I love that she feels she is getting a treat or extra gummies and I don’t mind her eating a bunch. These have saved us from many “i want a snack” or “i want another pack of fruit snacks!” battles. They are great.

I froze them for a few days and they defrosted just fine! The texture seemed unchanged to me, however I subbed the apple juice for water and doubled the honey.
