200 milliliters/7fl oz milk

This strawberry cheesecake is the summer dessert dreams are made of. Made with plenty of white chocolate, strawberries and cream. 

Based on eight servings, each portion provides 523 kcal, 6g protein, 29g carbohydrate (of which 18g sugars), 42g fat (of which 25g saturates), 3g fibre and 0.7g salt.

No-bake strawberry cheesecake

unsalted butter

grams/3½oz white chocolate,

400 grams/14 ounces strawberries, trimmed,

300 grams/10½oz full-fat cream cheese

tsp vanilla extract

½ unwaxed lemon, finely grated zest only

tbsp runny honey

200 milliliters/7fl oz double cream

These delicious raspberry and white chocolate muffins couldn’t be simpler to make and use frozen raspberries for ease. For really light, well-risen muffins, it’s important not to over-mix. Don't worry about any tiny smears of flour in the batter.

300 grams/10½oz plain flour

caster sugar

1½ tsp bicarbonate of soda

salt

100 milliliters/3½fl oz milk

100 milliliters/3½fl oz soured cream

eggs,

vanilla extract or vanilla bean paste

grams/5½oz raspberries

grams/3½oz white chocolate chips

The Manchester tart is an easy custard and fruit tart adorned with toasty coconut. Fresh raspberries elevate it to a dinner party pudding.

500 grams/1lb 2 ounces ready-made shortcrust pastry

flour,

raspberry jam

coconut,

raspberries

500 milliliters/17fl oz full-fat milk

vanilla pod, split, seeds

grams/4½oz caster sugar

tbsp icing sugar,

A sweet and tropical mango cheesecake that doesn't need baking, just a long chill in the fridge. It is important to use tinned alphonso mango purée in the cheesecake filling as it has a perfectly sweet flavour and silky-smooth texture. 

You will need a 20cm/8in springform cake tin.

tsp sunflower oil, for greasing

180 grams/6¼oz digestive biscuits

unsalted butter, melted

¼ tsp ground cardamom

75 grams/2¾oz white chocolate,

leaves platinum grade leaf gelatine

full-fat cream cheese

75 grams/2¾oz caster sugar

vanilla bean paste

lime,

mango purée

150 milliliters/¼ pint double cream

leaf platinum grade leaf gelatine

unwaxed lime, juice only

Pineapple, vanilla, and coconut come together for one amazing cake!

Southern Sunshine Cake

yellow cake mix

milk, divided

vegetable oil

eggs

vanilla

pineapple

white sugar

5.1 oz box instant vanilla pudding

oz Cool Whip, thawed

pecans

coconut

Preheat oven to 350F. Grease a 9x13 baking dish.

In a large bowl, combine cake mix, 1 cup milk, vegetable oil, eggs, and vanilla. Mix until well combined and then pour into prepared dish.

Bake for 30-45 minutes or until the center is set.

While the cake is in the oven, combine crushed pineapple and sugar in a small saucepan. Cook on medium-high, stirring constantly until sugar is dissolved.

Once the cake is done, remove from oven. Carefully poke the top of the cake a few times with a knife and pour pineapple mixture over top of warm cake, spreading it around. Let cake and pineapple mixture cool completely.

In a medium-sized bowl, combine 3 cups cold milk with vanilla pudding mix. Whisk until thick. Spread pudding over pineapple mixture and top with a layer of whipped cream.

Sprinkle shredded coconut and pecans on top. Store in the fridge until ready to serve.

This simple fruit tart is made even more special with a spicy, boozy whipped cream.

300 milliliters/10fl oz double cream

The Hairy Bikers' pavlova recipe uses ripe summer strawberries, but you can try making it with stewed fruits in winter. Pavlova is a great make-ahead dessert that's gluten-free, too.
