Hummus is fine, but the real power legume of the Middle East is the fava bean. Ful medames is the Egyptian breakfast dish of favas stewed with tahini and seasoned with garlic, cumin, and lemon. This creamy, comforting version is much like what you'll find around the streets of Cairo.

Ful Medames (Egyptian Breakfast Fava Beans With Tahini) Recipe

Put garlic cloves, cumin seeds, and a pinch of salt in a mortar and pestle and crush until seeds are cracked and garlic is in small, flimsy chunks. If you don't have a mortar and pestle, mince garlic very fine.

Empty fava beans (with liquid) into a medium saucepan and combine with tahini and garlic paste. Cook over medium-high heat, stirring frequently, until liquid retains some brothiness but turns thick and sauce-like, about 5 minutes. 

Add lemon juice and salt to taste. Mash one third of the beans with a potato masher to thicken if desired, then serve with toasted pita.

Pour the fava beans and the chickpeas together into a colander to drain. Rinse the beans in cold water.

Transfer the rinsed, drained beans to a medium saucepan over medium heat, and add 1 and half cups of cold water. Season with cumin and kosher salt.

Bring mixture to a boil. Reduce heat to low and let simmer uncovered for 20 minutes until most of the water is absorbed, smashing occasionally with the back of a wooden spoon to get the desired consistency.

Meanwhile, combine all the ingredients for the sauce in a small bowl.

When the beans and chickpeas are done cooking, serve the sauce on top or next to the ful medames. You can have stir half the sauce with the bean mixture and serve the other half on the side.

Serve with fresh parsley on top along with warm pita, tomatoes and radishes.

Pita bread

Heat the olive oil in a pan over medium high heat. Saute the onion until translucent.

Add in the minced garlic and cook for a minute. Add the chopped tomatoes as well.

Drain and rinse the fava beans. Add them to the tomatoes followed by the paprika, cumin, salt and pepper. Add 1/2 cup water, cover and cook for 15 minutes.

Using the back of a wooden spoon, gently press and mash almost half of the fava beans to give the ful a creamy texture. Add in the lemon juice and stir.

Transfer the ful medames to a serving bowl and top with olive oil, tomatoes, parsley and jalapeno. Serve with pita bread.
