A delicious vegetarian recipe dating back to the Pharohs

Ful Medames (Sudanese Fava Beans)

Fava Bean (Dry)

salt (or

tsp cumin (or to taste)

tomatoes (diced)

onion

feta cheese (crumbled)

Arugula (baby)

eggs

Tbsp Sesame oil

Soak the dry fava beans in water for at least 8 hours or overnight.  Drain

In a large pot, add in the soaked fava beans and cover with water.

Bring to a boil, then reduce to simmer, and cook for about 2 hours or until the beans are soft

Put your fava beans into a bowl along with some broth.

Mash the beans using a potato masher or you could use a coke bottle like they do in Sudan.

Add in the salt and cumin to taste.

Put the beans in your serving bowl and top with some of the tomatoes, cheese, arugula, and onions, top with sesame oil  and serve with some warm flat bread.

You can serve the left over toppings so people can add more of what they like including the hard-boiled eggs if using.  We also served it with Sudanese shata, a hot sauce.

Ful mudammas (ful medames) is a very popular breakfast dish in Egypt made from dried fava beans. This freezer-friendly recipe is made using dried beans either on the stovetop or with a pressure cooker.

Egyptian Ful Mudammas

beans

chickpeas

red lentils

tomato

carrots

garlic

½ tsp baking soda

Persian cucumber (or English cucumber)

red onion

lime

tbsp tahini

olive oil

tsp cumin

salt and pepper

In a large pot, add the dried fava beans, dried chickpeas, and lentils. Fill the pot with water covering the beans with at least 3 inches of water and add the soda. Soak the beans for 6 hours.

Drain the beans. Add the beans to the pressure cooker pot.

Peel and roughly chop the carrots. Chop the tomato. Peel and chop the garlic. Add the vegetables to the pressure cooker pot.

Fill the pressure cooker pot or stovetop pot with water covering the beans by at least 2.5 inches.

If using an Instant Pot or stovetop pressure cooker, cook the beans on high for 1 hour 30 minutes. If using a regular pot, bring to a boil then turn down the heat to medium-low and cover. Cook on medium-low heat for about 4 to 5 hours. You will need to check the water levels if using a regular pot to make sure they don't get too low. The beans are finished cooking when they are easy to mush with a fork.

Release the pressure from the pressure cooker.

Drain the beans in a strainer and reserve just a little bit of the bean cooking liquid (about 1.5 cups to 2 cups).

Store the cooked beans in freezer-friendly storage bags. 

Make the Ful Beans

Add 4 cups of the ful medames to a bowl. 

Chop the tomato, cucumber, and onions. Mash the garlic with some salt using a mortar and pestle. Squeeze the lime.

Add the tahini, mashed garlic, lime juice, ground cumin, salt, and pepper to taste. Mix with the mashed beans.

Add the chopped tomatoes, cucumbers, and onions. Mix all together.

Add the olive oil on top.

Make the Ful Medames Dip

Ful medames is a fava bean stew flavored with olive oil, lemon juice and spices. Usually served for breakfast, this Egyptian classic is so easy to make and is ready in less than 30 minutes. Follow along to learn how to make ful medames at home.

Ful Medames Recipe (Egyptian fava beans)

parsley (chopped)

jalapeno (sliced)

Pita bread

Heat the olive oil in a pan over medium high heat. Saute the onion until translucent.

Add in the minced garlic and cook for a minute. Add the chopped tomatoes as well.

Drain and rinse the fava beans. Add them to the tomatoes followed by the paprika, cumin, salt and pepper. Add 1/2 cup water, cover and cook for 15 minutes.

Using the back of a wooden spoon, gently press and mash almost half of the fava beans to give the ful a creamy texture. Add in the lemon juice and stir.

Transfer the ful medames to a serving bowl and top with olive oil, tomatoes, parsley and jalapeno. Serve with pita bread.
