A Proper Vegan Full English Breakfast

Tofu

Teaspoon Garlic Powder

Teaspoon Turmeric

Tablespoons Miso Paste

Tablespoon Sunflower Oil

Tempeh

Tablespoons Soy Sauce

Tablespoon Maple Syrup

Teaspoon Smoked Paprika

Teaspoon Liquid Smoke (optional)

800 g Potatoes

Tablespoons Sunflower Oil

500 g Chestnut Mushrooms

Water

Garlic

Tablespoon Tomato Paste

80 ml Tomato Ketchup

Tablespoons Brown Sugar

400 ml Vegetable Stock

(400 grams) Cans Haricot Beans (drained)

Tablespoon

300 g Cherry Tomatoes

Tablespoon Balsamic Vinegar

Vegan Sausages (made to linked recipe instructions. Can be replaced with store-bought vegan sausages to save on time!)

If making the seitan sausages using the linked recipe. Prepare and steam them in the oven until they are cooked.

Heat a tablespoon of vegetable oil in a large frying pan and cook your sausages for 4 minutes, turning halfway through so that they receive and even colouring.

Vegan Sausages

Preheat your oven to 180c (fan-oven).

Slice the 800g of potatoes into 1cm thick circles leaving skins on. Par boil for 2 minutes in heavily salted water until fork soft.

Drain the potatoes and pour in the 3 tablespoons of vegetable oil into the saucepan and stir to evenly cover the potatoes. Tip the potatoes onto a large baking tray, being sure not to crowd the tray. Season with a little salt and cracked black pepper and place into the oven. Cook for 35-40 minutes until golden and crispy.

Baked Potato Slices

Place the 2 tablespoons of tomato paste, 80ml of tomato ketchup, 2 tablespoons of brown sugar, 4 cloves of crushed garlic and 400ml of vegetable stock into a small saucepan. Bring to a simmer and cook for 5 minutes until the sauce begins to thicken.

Pour in the 3 cans of drained haricot beans and cook for a further 10 minutes until the beans are lovely and soft.

Remove the pan from the heat and tip in the 1 tablespoon of corn flour slurry. Mix the slurry into the beans until the sauce thickens. Season to taste and keep warm until needed.

Baked Beans

Preheat your oven to 180c (fan oven).

Place the 300g of cherry tomatoes into a small oven tray and cover with the 1 tablespoon of sunflower oil, 1 tablespoon of balsamic vinegar and a pinch of salt.

Place the tomatoes into the oven for 10 - 15 minutes or until they soften and the skins begin to blacken.

Remove and cover with foil until needed.

Grilled Tomatoes

Make the bacon glaze by mixing together the 2 tablespoons soy sauce, 1 tablespoon maple syrup, 1 teaspoon of liquid smoke, 1 teaspoon of smoked paprika and 1 teaspoon of garlic powder in a small bowl.

Heat the 1 tablespoon of sunflower oil in a large frying pan over a medium-high heat. Toss in the tempeh and fry each side of the slices for around 2 minutes, or until they begin to take a little colour.

Pour in the glaze, coating all of the pieces well. Reduce the glaze until the the tempeh pieces are sticky and dark brown. Remove from the heat and place the tempeh bacon onto a wire rack.

Tempeh Bacon

Take the 400g of tofu and place into a small saucepan. Use a fork to scramble the tofu until it resembles a rough crumb.

Tip in the 1/2 teaspoon of turmeric, 1 teaspoon of garlic powder, 1 tablespoon of miso paste and 1 tablespoon of sunflower oil. Mix well with the tofu until it has an even colour.

Heat the saucepan over a medium-high heat, stirring the tofu often. After frying for about 2 - 4 minutes the tofu should be nice an soft. Season with a little salt and cracked black pepper to taste.

The tofu can be kept warm in the pan until needed.

Scrambled Tofu

Heat a large saucepan over a high heat. Toss in the 500g of chopped mushrooms, 150ml of water and 2 tablespoons of soy sauce. Cover the pan and bring the water to the boil.

Once vigorously boiling, uncover and cook until the liquid has completely reduced and the mushrooms are a lovely dark colour.

Fried Mushrooms

A Vegan Full English Breakfast - Everything From Scratch

A protein-packed version of a classic fry-up from Joe Wicks. Pile on the steak, mushrooms and spinach for a hearty, filling start to the day

High protein breakfast

Heat grill to high. Drizzle a little of the oil on your tomatoes and season well. Lay the tomatoes on a baking tray lined with foil and place under the grill. Cook for 4-5 mins, then add the bacon to the tray. Turn the bacon as necessary until it is cooked through. Turn off the grill and shut the door to keep everything warm.

Meanwhile, heat the remaining oil in a large, non-stick frying pan over a high heat. Season your steak well and, when the pan is very hot, fry for 3-4 mins each side for medium-rare, then leave it to rest until you are ready to eat.

While the steak is resting, throw the mushrooms into the still-hot pan, fry for 2-3 mins until browned, then move to one side of the pan. Add the spinach to the other side of the pan and cook until wilted. Put a saucepan of water on to boil.

Crack the egg into the boiling water, then reduce the heat until the water is gently simmering. Poach the egg for 3-4 mins or until the white has set but the yolk is still runny. Carefully lift it out with a slotted spoon and drain on kitchen paper. Serve everything together and top with the poached egg.

How to Make a Full English Breakfast

sausages (breakfast sausage preferred)

Heat up the beans over low in a small pot. Keep warm on low.

Cook the sausages over medium to medium low heat, turning occasionally, until brown and cooked through. In the same pan, cook the bacon, flipping as needed. Fry the blood pudding slices over medium heat for 3-4 minutes per side.

In another pan, heat up a bit of oil and cook the mushrooms, without moving, until brown and caramelized. Remove from the pan, then sear the cut side of the tomato briefly. Remove from the pan, season everything with salt and pepper.

Wipe the pan down and heat up a bit of oil or butter over medium heat. Fry the bread until golden, flipping and adding more oil or butter as needed. Remove and set aside. Finally, fry the eggs to your liking. Plate everything up: sausages, bacon, black pudding, mushrooms, tomato, bread, and eggs. Enjoy immediately!

Full English breakfasts differ greatly from person-to-person, but this recipe will help you to cook a decent fry up at home, using simple ingredients and tips to elevate each element.

Pre-heat the oven to 220C/Fan 200C/Gas 7.

Add a drizzle of neutral oil to a large frying pan and heat until shimmering. Prick the sausages with a fork, skewer, or cocktail stick and add to the pan. Fry over medium-high heat, turning often, until all sides are golden brown. This should take up to 5 minutes.

Once browned, transfer the sausages to an oven tray or roasting dish and place in the oven to finish cooking. Cook for 15-20 minutes until they reach your preferred level of ‘doneness’. Check the sausages and turn at least once while in the oven.

In the pan used to sear the sausages, add the black pudding and cook over a low-medium heat for 2-3 minutes.

In a separate pan (ideally a cast iron skillet), add the bacon and cook over a very low heat to render the fat. Turn often.

After 2-3 minutes, turn the black pudding over and also add the tomatoes to the pan, cut-side down. Season with salt and pepper.

Once the bacon has been cooking for 2-3 minutes, increase the heat and cook to your desired level of crispiness. Once cooked, drain on a sheet of kitchen roll.

While the bacon is finishing, add the baked beans to a small saucepan, season with salt, and cook over low heat, stirring occasionally until the sauce thickens.

In another small saucepan, heat a drizzle of neutral cooking oil until shimmering and add the chopped mushrooms along with a generous pinch of salt. Cook over a high heat, stirring often.

Once the bacon is cooked, fry the hash browns in the rendered bacon fat for 3-4 minutes on each side, until golden.

While the hash browns are frying, remove the black pudding and tomato from the pan and drain with the bacon. Crack the eggs into the pan and cook slowly, basting occasionally to help the top layer of the egg cook.

When the hash browns are cooked, remove from the pan, drain and add a generous glug of extra virgin olive oil to the pan, heat for a few moments, then add two slices of bread, cut into triangular halves, and fry for 1-2 minutes until golden on both sides. While the bread is frying (in batches, if need be) toast the rest of the bread.

Remove the sausages from the oven and plate alongside the bacon, black pudding, tomato, and egg. Then use the mushrooms and hash browns as a slight border to separate the beans from the egg, if desired.
