Pretty and perfect frosted Sugar Cookie Protein Bars made with oat flour and protein powder, and actually sugar free! These no bake and heathy sugar cookie protein bars are gluten free and Vegan too.

Sugar Cookie Protein Bars

Oat Flour (90 grams)

Tbsp Coconut Flour (39 grams)

Vanilla Protein Powder (30 grams)

Unflavored Protein Powder (22 grams, see post for subs)

Unsweetened Almond Milk (120 milliliters)

Vanilla Protein Powder (60 grams)

Non-fat Greek Yogurt (56 grams)

tsp Coconut Flour (4 grams)

½ scoop Vanilla Protein Powder (15 grams)

Red Food Coloring

Sprinkles

Line a 8½" x 4½" loaf pan with parchment paper; Leave an overhang to lift out later.

In a bowl combine oat flour, coconut flour, unflavored protein powder and vanilla protein powder.

Add in milk (a little at a time) and mix. Mixture will be like a dough.Add more milk if too dry, coconut flour if too wet.

Transfer to pan and press down.

Base:

In a bowl, mix vanilla protein powder, yogurt and coconut flour until smooth.Mixture should be thick but smooth and spreadable.Add milk if too thick, coconut flour if too thin.

Spread on top of base and use back of spoon/spatula or fingers to smoothen.

Place in freezer 10-15 minutes to harden.

Protein Frosting 1:

Lift layers out of pan, place on cutting board and using a sharp knife, slice into 8 bars.

Mix yogurt and vanilla protein powder in a bowl until smooth like frosting.

Smear half on top of half bars.Add a drop of optional red food coloring and smear on remaining bars.Sprinkle on sprinkles.

Protein Frosting 2:

These sugar cookie bars were absolutely Devine! The double layer of frosting and sprinkles made them so yummy and extra cute! I used them for an afternoon pick me up, post workout snack, or after dinner treat when the cravings hit! The macros are unmatched and the taste - well they hit the spot!

Birthday Cake Protein Bars

Tbsp Coconut Flour (42 grams)

Vanilla Protein Powder (22 grams)

tsp Maple Syrup (Sugar-free recommended below, 20 milliliters)

tsp Coconut Flour (2 grams)

1½ Tbsp White Chocolate Chips (Sugar-free recommended, 21 grams)

¼ tsp Coconut Oil

Line 2 7x5” pans or loaf pans (or work with half mixtures at a time) with parchment paper; Leave an overhang to lift out later.

Add in maple syrup and milk and mix. Mixture will be like a dough.Add more milk if too dry, coconut flour if too wet.

Divide among prepared pans and press down, adding sprinkles partway.(Or use half mixture for one pan)

Cake Base:

Protein Frosting:

Place one base+frosting layer on top of the other (cake base of one over icing of other).Press down, and place in freezer another 10 minutes.

Place chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.

Spread chocolate on bar and use back of spoon to smoothen.Add sprinkles on top.Let harden.

Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 6 bars.

Chocolate Topping:

Oh yeah! I made them … just as written! Delicious and OH SO GOOD!! I have been buying a name brand bar everyday after work at a convenience store on my way home—- $3.49. Not any more! Thank you

I forgot to mention it’s a funny coincidence bc I have the exact same vanilla quest protein powder and the same Lilys unicorn swirl chocolate chips, I love Lilys and I 100% agree quest is the BEST protein for baking and tastes delicious

This recipe is awesome, the only problem I had was I had to add a tbsp of cashew milk and a little more yogurt to the frosting but that was just bc my yogurt was pretty thick. Other than that this was like the easiest recipe to follow and all the ingredients were easy to use as well. I didn’t have unflavored protein powder so instead I used a tbsp of ground flax seed and 2 tbsp of powdered almond butter and it worked like a charm. Thanks for sharing this!!! I was licking the frosting off the spoon as I was making it, it was so good, almost better than normal buttercream and it didn’t even need any sugar! Love this, if anyone is considering making these please do!!!
