Easy Instant Pot recipe for Carrot Halwa or Gajar Halwa, a traditional Indian dessert made with grated carrots, milk, sugar, nuts, and cardamom.

Carrot Halwa | Gajar Halwa

green cardamom powder (3-4 pods, de-seeded and crushed)

almonds, slivered (for garnish (optional))

Prep: Wash, peel, and grate carrots. You can do that by using a box grater, or a food processor with a shredder attachment (my preference). Chop the cashews and almonds and keep them aside.

Saute Carrots: Preheat the Instant Pot on Saute mode. When it displays &quot;hot&quot;, add ghee (or butter), chopped nuts, and carrots, and saute for 2 minutes. This prevents the carrots from turning mushy later.

Pressure cook: Add milk, saffron, and sugar, and stir well. Let the milk come up to a simmer to prevent curdling under pressure. Cancel saute. Close the lid, vent set to sealing position. Select Pressure Cook and cook for 2 minutes at high pressure.

Saute: When the pressure cooking is done, manually release the pressure. Select Saute and adjust to high. Stir in milk powder and simmer the halwa to cook off the liquid, stirring every few minutes. This takes around 10-15 minutes.

Garnish &amp; Serve: Stir in cardamom powder, garnish with chopped nuts and serve warm!

Carrot Halwa / Gajar Halwa- Instant Pot ( Pressure Cooker)

This delicious gajar ka halwa or Indian carrot pudding rounds off any meal beautifully. Do try my easy recipe.

carrots

condensed milk (I used 400 ml. Milkmaid cans)

cardamom seeds

cashews and raisins

ghee

sugar (optional)

g. khoya (or evaporated milk solids optional)

Take a thick bottom pan or kadhai.&nbsp;

Add grated carrot with condensed milk and cook together on medium to low flame. Keep stirring constantly. Carrots will release water. You have to cook till all water has evaporated. It took me about 40 minutes.

Now add ghee, cardamom powder and sugar (optional) along with khoya (optional). I personally don't add additional sugar as the sweetness from the condensed milk and the carrots is adequate. But if you like it sweeter, add sugar.

Cook more for about 15 minutes til everything looks well cooked. You can see the ghee making the halwa shine.

Now add some chopped cashews and raisins and take off the flame.

Serve the delicious gajar ka halwa warm, with ice cream, rabdi or as is. It is really tasty.

Homemade Gajar ka Halwa Recipe

Gajar ka halwa is a popular Indian dessert made from grated carrots cooked in milk and sugar, laced with cardamom and garnished with roasted nuts. Learn how to make authentic rich and creamy carrot halwa!

Gajar ka Halwa (Carrot Halwa)

kilogram Carrots (grated with thick grater, 10-12 medium carrots)

litre Whole Milk

Sugar

Cardamom powder (Elaichi)

Ghee (divided)

Sliced Pistachios (or mixed nuts

Wash, peel and grate carrots using the thick side of a hand grater or food processor.

Add 1 tablespoon of ghee to a pan on medium heat. Add the chopped pistachios (and other nuts) and roast until they become lightly golden in color. If adding raisins, add them now. Roast for 15 seconds more, take out and set aside.

Add the grated carrots to a large pan and turn heat to medium-high. Saute the carrots for 5 minutes so that some of the moisture is removed.

Now add the milk to the same pan and let the milk (with the carrots) come to a boil. Then lower the heat to medium flame, and let the it cook. You want to cook the carrots until all the liquid is evaporated. Stir frequently as you dont want the halwa to scorch the bottom of the pan. This will take about 35-45 minutes.

Now add the sugar to the halwa. The sugar will release water and make the halwa a little liquidy. Cook until the halwa becomes dry again.

Now add the cardamom powder, and remaining ghee and mix will the carrot halwa. Roast for a minute for the ghee to blend into the halwa.

Garnish with the roasted nuts. Serve warm as is or topped with vanilla ice-cream!

These gajar halwa cupcakes are an easy mash up of the Indian dessert gajar ka halwa (a sweet carrot pudding) with a classic carrot cake!

Gajar Halwa Cupcakes

all purpose flour

eggs

baking soda

vanilla extract

salt

carrots (grated)

cardamom

nutmeg

mixed nuts (pistachios & cashews, chopped)

dates

butter (softened)

oz cream cheese (softened)

pistachios (roasted and ground to fine dust)

In a large saute pan on medium heat, add the mixed nuts. Roast for about 5 minutes. Remove from heat and transfer to a paper plate to cool. Roughly chop nuts once cooled. Sprinkle about 1 teaspoon of flour over chopped nuts and mix to coat (this is prevent the nuts from sinking to the bottom of the cupcake)

Preheat oven to 350°F, line muffin pan with cupcake liners, set aide.

Using a stand mixer with a paddle attachment or hand mixer, mix together sugar, oil and eggs on low speed until blended. Add in cardamom, nutmeg, vanilla, salt, baking soda, blend on low speed until combined.

Add in flour and mix until combined. Add in carrots, mixed nuts and chopped dates, stir together with a spatula.

Scoop batter into cupcake liners, fill to about ⅔ full (about 2 tablespoons). Bake for 20 minutes or until a toothpick inserted comes out clean. Set aside to cool completely before frosting.

In a stand mixer with whisk attachment or hand mixer, combine cream cheese, butter, powdered sugar and mix until smooth. Add in vanilla extract, cardamom, salt and mix until combined. (add additional powdered sugar if frosting is too thin, add a teaspoon or 2 of milk if frosting is too thick). Frost each cupcake.
