Galbi Jjim (Korean Braised Beef Short Ribs)

Korean pear (peeled, seeded, and diced)

dark brown sugar

sweet rice wine (mirim) (optional)

(600 ml) sea kelp stock

ginger paste

tbsp sesame oil

tsp pepper

shiitake mushroom

carrot

Korean radish

pine nuts or walnuts (to garnish, optional)

sea kelp (dashima)

(960 ml) water

Bring a pot of water to boil. Add the short ribs and parboil for 10 minutes. Drain and rinse with hot water. Set aside.

For the sea kelp stock; put a large piece of sea kelp into the 4 cups of water in a sauce pan; bring it to boil. Reduce the heat to low and simmer for 5 minutes. Remove the sea kelp and reserve 2-1/2 cups of sea kelp stock; set aside.

Put onion, pear, kiwi, garlic, soy sauce, dark brown sugar, and rice wine in a blender. Pour 1/2 cup of sea kelp stock and puree until smooth.

In a large dutch oven or heavy bottom pot, put the ribs and pour the vegetable fruit puree over. Add the remaining 2 cups of sea kelp stock, ginger puree, sesame oil, and pepper; mix well. Bring it to boil over high heat. Cover, reduce the heat to low, and simmer for 1-1/2 hours.

Meanwhile, soak shiitake mushroom in water for 30-40 minutes. Gently squeeze out excess water.

Optional: using a small paring knife, round the cut edges and corners of carrot and radish pieces to smooth out.

Add the mushrooms and vegetables into the pot; stir and continue to simmer for another 30-40 minutes, covered. Open the lid slightly in the last 10 minutes of simmering. When the vegetables are fork tender, remove from the heat and skim the extra fat on top, if needed.

Let the galbi-jjim rest in a pot for 10 minutes. Transfer it to a large serving dish and sprinkle with chopped pine nuts (or walnuts) as a garnish. Serve warm with rice.

Korean Braised Beef Ribs (Galbi-jjim)

Spicy, sweet, and savoury these Korean Instant Pot Beef Short Ribs are going to knock your socks off. They&#39;re rich, beefy, and so tender thanks to the Instant Pot. It&#39;s such a cozy meal that you&#39;re going to want to make this again and again all winter.

Korean Instant Pot Beef Short Ribs

soy sauce (low sodium)

mirin

asian pear (diced up)

onion (diced up)

tbsp honey

tbsp Gochujang

tbsp Gochugaru

~2.5 lbs chuck beef short ribs

carrot (chopped)

potato (chopped)

shiitake mushrooms (sliced)

cornstarch

In a blender or food processor, blend together soy sauce, mirin, diced pear, garlic, diced onion, honey, gouchujang, and gochugaru. Set it aside for later.

In your Instant Pot, place a sliced onion at the bottom and then layer in the short ribs, carrots, potatoes, sliced shiitake mushrooms, and then the mixture that you blended earlier.

Seal the IP and click the manual button and set it to 35 minutes. It should take 25 minutes for the IP to come to pressure so don’t be alarmed if the IP doesn’t come up to pressure right away.

Once the IP is done cooking, make a cornstarch slurry (t tbsp cornstarch to 1 tbsp water) and add it to the Instant Pot and set the IP to sauté for a minute to thicken the liquid.&nbsp;

Galbi Jjim is a traditional &quot;special occasion&quot; short rib recipe from Korea. My Slow Cooker Galbi Jjim is makes this dish easy enough for everyday!

Slow Cooker Galbi Jjim (Korean Short Ribs)

soy sauce

tbsp gochujang (Korean chili paste)

tbsp gochugaru (Korean chili powder)

tsp sesame oil

Mirin (rice wine)

rice wine vinegar

large carrots, chopped in 2 inch pieces

lb beef short ribs

Place all the sauce ingredients in your food processor or blender and pulse until smooth.

Rub all the short rib pieces with olive oil, salt, and pepper.

Sear all sides in pan over high heat. Don’t be tempted to turn them too quickly! Let a good crust form on each side!  There's flavor in the brown!  Place them at the bottom of your slow cooker.

Cover the meat with rice cakes and then vegetables. Pour sauce over the top, then pour in beef broth. Cook on low heat for 6-7 hours (stirring once, halfway through) or until the meat is tender and vegetables are cooked.

Serve over rice or on its own. Spoon sauce over the top and maybe a sprinkle of chopped green onion and sesame seeds.  When you break into the meat it will look like this and you will cry when it gets in your mouth.  You will question all other meats.  This is normal.   Do not drive or operate heavy machinery after eating. May cause drowsiness.

Korean beef stew is spicy, complex and delicious. Try it with rice or kimchi mashed potatoes.

Combine miso and soy in a small bowl. Stir to combine thoroughly.&nbsp;

Mix the miso mixture with the beef and refrigerate 4 to 12 hours.

Pre-heat your oven to 325F.

Film a pot generously with vegetable oil. Brown the beef in batches over medium low heat. Leave room around the beef. You don't want it to steam. You want it brown. Take your time. Every stove is different. You may need to adjust the heat. Do what works for you.

Transfer the browned beef to a clean dutch oven. Add the garlic and the gochugaru to the pot.

Make your dashi. Bring the hon-dashi and water to a boil. Let simmer briefly.

Mix the gochujang with a couple tablespoons of hot dashi in a small bowl. Add a bit more dashi if needed. Get the gochujang to dissolve in the dashi. It's way easier to do this in a small bowl. Chasing miso or gochujang around a large pot is a pain.

Add the gochujang mixture. Now add enough of the remaining dashi to come up 2/3 of the way up the meat.

Cover the dutch oven with aluminum foil or parchment. Then put the lid on it.

Place in the oven and braise for about an hour. After an hour give it a stir and return it to the oven.

Beef is done when it is tender. This will take probably around 3 to 3 1/2 hours if you have big chunks. Start checking after 2 1/2 hours. There's no way to rush this. It's ready when it's ready.

It reheats well though so just plan ahead. Give yourself some extra time. Reheat to serve. Much better than having your guests wait an extra hour or two for dinner...

I ran into a problem while making this recipe: none of the local asian stores had hon-dashi (I guess you could say they were out of stock). After reading up on hon-dashi, I substituted by chicken stock with a few teaspoons of fish sauce added. Even so, the end product was amazing! Clean plates and happy faces around the table. Can't wait to make it with hon-dashi, though.
PS. I served it with kimchi from a recipe from another site that had 5 stars. Wasn't that good. Hoping that you will add a recipe some day soon ;-)

This recipe is so good, easy and a flavor bomb! My whole family loves it. I've made it with beef and chicken so far and will try pork as well.  I baked the chicken for less time and the sauce was thinner as there was more of it so just added some jasmine rice to it and it was perfect.
