Spicy Baked Sea Trout with Lemon Sauce is an easy recipe that tastes rich and complicated. The lemon butter sauce gets the spice from the hot red peppers and the rich red color from the paprika. Can substitute other firm fleshed fish such as sole, whiting, flounder, sea bass.

Spicy Baked Sea Trout with Lemon Sauce

trout

Tablespoons minced onion

stick unsalted butter

lemon juice

salt

paprika

tsp red pepper flakes

black pepper

capers (rinsed (optional))

Heat oven to 350 F.

Butter a glass casserole -large enough so that the fillets aren't crowded.

Lay the fillets in a single layer in the glass casserole.

Whisk the melted butter, lemon juice, minced onion, salt, paprika, red pepper flakes, black pepper until well blended. (Also add the capers if you wish.)  Pour the sauce evenly over the fillets.

Bake in the heated oven for 20 to 25 minutes. The fillets will be firm but still moist.

Serve immediately and spoon some additional sauce over the fillets.

A wonderful tasty fish chowder made with a firm white fish - like Sheepshead or cod. The hearty soup is seasoned with leeks, celery, dill and lemon.  

Sheepshead (Fish) Chowder with Leeks, Fresh Dill and Lemon

sheepshead

chicken broth

8- oz bottles clam juice

Italian hot pepper flakes

sea salt and pepper

red potatoes diced in 1/2 inch pieces (about 1 1/2 cups (no need to peel))

leeks

celery (thinly sliced, about 3/4 cup)

unsalted butter

all purpose flour

milk

bay leaf

heavy cream

dill

Sea salt and black pepper

corn ((optional))

Cut fish into chunks and set aside.

In a large Dutch oven, melt the butter over medium heat. Add the leeks and celery, and cook stirring, until veggies are tender, about 5 to 6 minutes. Add the flour and cook, stirring for about 2 minutes. You don't want the "raw" taste of flour.

Slowly whisk in the milk, broth, clam juice, hot pepper flakes, salt, pepper, and bring to a simmer. Add the potatoes and bay leaf, simmer gently until the potatoes are tender, about 10 to 12 minutes. The last two minutes of simmering add the sheepshead and the corn.

Finally add the cream, dill, and lemon juice, and cook until heated through, about 2 minutes. Season with the sea salt and the freshly ground black pepper or additional red pepper flakes.

We have lots of frozen sheets that my husband and I caught. Just finished this chowder and it was amazingly delicious! Thank you for finding a different way to use our fish.

I love chowder but I must admit I have never had fish chowder. I'd had seafood - not really the same as fish, is it?  You are so lucky to go fishing and catch such amazing fresh fish.

oh how lucky to catch such a beautiful flaky white fish. We love this one, not easy to come across but if we ever catch one again this will be the first thing I make with it! awesome job!

There's no wrong time of year for a bowl of good soup. Hubby's a fish person and I'm sure he'd be up for trying this.

Looks like filling rich and creamy fish chowder good to start  as fall soup recipe. . I haven't tasted sheephead, I think I need to look for it.
