This one-pan dish is rich in protein, healthy fats and zesty vegetables.&nbsp;

Crustless Skillet Pizza (Low-Carb, Primal, GAPS)

meat

oregano

basil

black pepper

sugar-free pizza sauce

semi-hard cheese of choice (mozzarella, cheddar) (divided)

bell pepper (chopped)

red onion (diced)

white mushrooms (sliced)

black olives (sliced)

Preheat oven to 425 degrees Fahrenheit.

In a medium-size bowl, combine meat, oregano, salt and pepper together.&nbsp;

Spread meat mixture evenly on 12" cast iron skillet, spreading to the walls of the skillet.&nbsp;

Bake meat patty for 25 minutes.&nbsp;

When meat is cooked, remove from oven. The meat patty should slightly shrink in size.&nbsp;

Spread pizza sauce directly on top of the meat, making sure to get the outside of the patty.&nbsp;

Cover the pizza sauce with 2 cups of cheese, followed by toppings.

Top with additional 1 cup of cheese and return to oven for another 15 minutes or until vegetables are tender and cheese is bubbling.&nbsp;

Remove from oven and let sit for 10 minutes. Cut slices and enjoy immediately.

Healing Foods: Bone Broth (Paleo, AIP, GAPS, Wahls, Whole30)

lbs. bones (ideally: some meaty, some marrow, some gelatinous)

onion

carrot

celery (cut in half)

garlic (peeled)

Tbsp. apple cider vinegar (this helps draw the minerals out of the bones)

Optional: roast your bones for 30 minutes in a 350 degree oven, for extra flavor, before adding them to the soup pot.

Place the bones, along with the rest of the ingredients, in a large soup pot. Cover with water and bring to a boil, then reduce to a very low simmer (just barely bubbling). Cook for at least 8 hours, and as long as 24 hours. The longer you cook it, the more nutritious your broth becomes. (The only exception is fish bones: they&#8217;re so small, you only need to cook them for a few hours.)

If you cook the broth for longer than 8 hours, check the water level occasionally. If you don&#8217;t have a tight-sealing lid on your pot, you may need to add water once or twice a day.

Optional: When your broth is almost ready, remove the cover, increase the heat back to a simmer, and cook it one final hour. This evaporates some of the water and concentrates the broth, which can give it more flavor and a more gelatinous appearance. It&#8217;s not a necessary step; it&#8217;s a personal choice.

When it&#8217;s time to strain the stock, use a slotted spoon to scoop out the larger vegetables and bones. Then, place a mesh strainer over a large heat-proof bowl and pour the broth through the strainer. You&#8217;ll be left with a beautiful, translucent liquid. Pour it into glass jars, allow to cool for 1 hour, and then refrigerate.

As the broth cools in the refrigerator, the fat will harden on the surface. This is good, as it keeps the broth fresh longer. As you use each jar, you can remove the fat and use it for cooking other things, or leave it in the broth. As long as there&#8217;s a thick fat seal, the broth should keep well in the fridge for weeks. However, it&#8217;s a thin fat seal or the seal is broken, use it within 5 days. You can also freeze broth for up to 6 months.

Blueberry bakewell slice

Caster sugar

Tbsp Cold water

Blueberries, fresh in season or frozen (Main)

120 g Butter, softened

120 g Caster sugar

150 g Ground almonds

Baking powder

¼ tsp Almond essence

almonds

Icing sugar, to dust

Preheat the oven to 180C and lightly grease a 20 x 30cm tin.

Place the flour, sugar and butter into a bowl, working it together until it resembles fine breadcrumbs. Add the water and mix until combined. Press into the base of the tin and bake for 15 minutes. Allow to cool.

Sprinkle over the blueberries. For the topping, cream the butter and sugar. Add the egg and beat through, then the ground almonds, baking powder and almond essence. Spread carefully over the blueberries then sprinkle with sliced almonds. Place into an oven for 30 minutes or until set in the middle. Remove and cool before cutting.
